profile iconLast day of GW. A bottle of Honjozo Honjozo from my wife's relatives. It was a little sweeter and softer, I tried it cold, room temperature, lukewarm, and hot, and it was a good sake. I am grateful to be able to have such a local brand of regular or honjozo class sake. The first half of GW was a day trip to Mashiko, Tochigi Prefecture, and the spoils of my return trip to Niigata. The trophies of the first half of GW were mixed in. Fried egg with asparagus and bacon. Shiitake mushroom grilled with cheese. bamboo shoots with pickled bamboo shoots. Asparagus and bamboo shoots are from Niigata Prefecture. Eggs, shiitake mushrooms, and tomatoes are from Tochigi Prefecture.

profile iconThe 300ml bottle is a 50% polished daiginjo that has a smooth, soft entry with a Fukuro Shibori taste and retains the old-fashioned, light and dry taste typical of Niigata Prefecture sake. Today is my first Saturday off in a while, so I went shopping with my family. I also visited Yamakoshi Honpo, which just opened yesterday at Cocoon 2 in Saitama Shin-Toshin. The store is an antenna for the Yamakoshi area of Nagaoka City, Niigata Prefecture, and Niigata Prefecture's foodstuffs, and is like a select store. The shop has a good selection of sake in one-cup and small bottles, which will come in handy. The brewery "Ofuku Masamune" is located near the former Yamakoshi Village in present-day Nagaoka City. The brewery also produces a brand called "Yamakoshi," which is brewed from rice grown in the terraced rice paddies of Yamakoshi. The sushi is made by Kadokami Gyozu. Headquartered in Teradomari, Niigata Prefecture, it specializes in fresh fish. This is also a place I sometimes like to go shopping.

Hanashoku Junmai Daiginjo Betsuatsurae The aroma is like grapes with a hint of sourness, the mouthfeel is clean and sweet with a pleasant aftertaste, and there is a lingering bitterness in the back of the throat. I bought some salted sea urchin, which is a perfect match for sake, but is usually hard to find. The taste was so agonizing that it made me want to drink more sake. I think if I recommend [salted sea urchin] to people outside of the prefecture, they will be puzzled how to eat it 🤔.

profile iconSake in Sabae, Fukui Prefecture. Sabae, the city of glasses. I lived there for about three years. The name "Kashon" was taken from the flickering flame of a candle at a wedding celebration. It was named in honor of the Emperor Taisho's marriage. First of all, it has a strong sweetness that is honestly rice-like, and when you poke at this sweetness with your tongue, a pungent taste emerges. There is also a slight hineyoshi aroma and a slightly astringent and hard taste like sake lees. It tastes like a country sake (I like that kind of sake) that has been drunk for hundreds of years. How about if you heat it up? The taste loosens up a lot, and the sweetness and spiciness swell up at the same time. The hineyoshi and the hardness of the sake lees are softened, and the strong sweetness does not hit you, but becomes a whole with the spiciness. It becomes softer and much easier to drink. It is not too tiring to drink, and can be easily matched with anything. It can be used for any occasion, from an everyday evening drink to a sake to be shared with others at a candlelit banquet. The same brewery also has a brand of sake called "Echizen Kokufu," which is located in Echizen City (formerly Takefu City), a town next to Sabae, where Murasaki Shikibu lived for about a year away from Kyoto. Coincidentally, Murasaki Shikibu is the main character in next year's Taiga "To the Luminous Kimi. I wonder if the events in Echizen-kokubu will also be depicted in the film.

This sake was recommended to me by a woman at a liquor store on a recent business trip to Fukuoka. It has no habits or characteristics, but deeply and gently sinks into each and every cell. It is an amazing sake. It broke my concept of what a food sake should be. I want to buy a bottle of this sake. Nabe is the best on a cold day.

Lunch at Omiya (=lunchtime sake) I thought about going to Izumiya, a long-established restaurant with a Showa-era atmosphere, but I decided to try something new today. We had chilled tofu and five omakase skewers to go with our snacks. There is no special sake on tap, but..., Sashi-Ogi Koyama Honke's Kinmon Sekai Taka Ginjo 50, which is widely distributed in supermarkets and convenience stores in Saitama City. It is also a limited edition sake for Saitama Prefecture, and I personally posted it for the upcoming Saitama Prefecture Sake 200 check-in.

To compete with them with seafood, We consulted with them in advance about "Uchiwa Shrimp" caught in Hirado, Nagasaki. We consulted with them in advance and asked them to secure it for us at the market. We had them as sashimi. It was like a smaller horseshoe crab. They were very pleased 😁. Now for the 🍶... Shiratake that Yoohee-san was going to buy for us when he came back to his hometown. I heard they are going to send it from Tsushima in a blink of an eye, so if you are interested, please do not hesitate! The name of the sake brewery is Kawachi Shuzo, but the company name seems to have been changed to Shiratake Shuzo! It says "active" on the bottle, but I wonder if it's a draft sake. It has a fizzy feeling, but it's not too fizzy. It is easy to drink with a gentle zingy sweetness. There is none of the alu feeling in the second half that is common in nigori with alu. It's like a rich sweetness that lasts until the end. With cheeses from a mysterious cheese shop and bonito crackers given by pyonpyon😋.
