It has a slightly fragrant ginjo aroma.
It has a gentle taste in the mouth, starting with sourness and gradually spreading to umami.
The sourness that tingles on the nose is very good.
It was rich and slightly sweet.

I wanted to drink some more sake after I got home, so I opened a bottle of Kaze no Mori to see if I could drink it lightly! 👍
This is the first time I've seen TYPE5.
It's a little amber in color. When I took a sip, it had a Japanese sweetness and quite a bit of alcohol, which I thought was unusual for a Kaze no Mori. 😱
I've been drinking it cold as usual, so for the first time I tried heating it up at home!
I put a sticker on the glass and checked the temperature perfectly.
I had a strange feeling about the warm windy forest, but when I took a sip.... It's so good!
The alcohol feeling was softened and it was easy to drink👍.
But I like the usual Kaze no Mori better 😆.

This is the first time to drink Hououmida! Because I'm sick (epidemic disease), both my sense of taste and smell don't react well (^o^;)) The following is my wife's comment. It's fruity at first, but the aftertaste is quite dry. I think it has a sharp taste.

This is the last of four bottles (Chiebijin, Kaze no Mori, Hana no Kaori, and Shichida) purchased at Sumiyoshi Shuhan. I was curious about this sake because of its high evaluation here. The hurdle was naturally raised. Opening the bottle... From the first sip, the sourness and sweetness that fills the mouth. It is delicious. The slight shwash you can feel. The balance is good. The rice polishing ratio is 65%, but I don't feel any impurities at all. It is a convincing evaluation. I am sure I will repeat it. ^)
We opened this bottle at home on a Friday night when an emergency was declared in Fukuoka. The concept of this beer is "gentle sweetness and beautiful acidity," and that's exactly the impression I got. It has a slight bitterness in the aftertaste. I had it with dinner as a sake, and it was the right choice. My partner and I killed the 4-gallon bottle in the blink of an eye. Thanks to Chie-san, the first proprietress, for this decision.
Let's compare it with Hananouka and Sakurabana which we opened last day. I was scared when I opened the bottle. I was scared when I heard the sound of the bottle opening. It's not too sweet, but it's not overpowering. The taste is the opposite of the image I had of sake when I was young. I'm glad to see that more and more sake breweries are making this kind of sake, and that it is being accepted and appreciated by the public. Of course, there is also traditional dry sake. It's a rough analogy, but it's a personal preference, just like soy sauce is good for ramen and pork bones are good for pork bones (^-^)
