This is the last of four bottles (Chiebijin, Kaze no Mori, Hana no Kaori, and Shichida) purchased at Sumiyoshi Shuhan. I was curious about this sake because of its high evaluation here. The hurdle was naturally raised. Opening the bottle... From the first sip, the sourness and sweetness that fills the mouth. It is delicious. The slight shwash you can feel. The balance is good. The rice polishing ratio is 65%, but I don't feel any impurities at all. It is a convincing evaluation. I am sure I will repeat it. ^)

We opened this bottle at home on a Friday night when an emergency was declared in Fukuoka. The concept of this beer is "gentle sweetness and beautiful acidity," and that's exactly the impression I got. It has a slight bitterness in the aftertaste. I had it with dinner as a sake, and it was the right choice. My partner and I killed the 4-gallon bottle in the blink of an eye. Thanks to Chie-san, the first proprietress, for this decision.

Let's compare it with Hananouka and Sakurabana which we opened last day. I was scared when I opened the bottle. I was scared when I heard the sound of the bottle opening. It's not too sweet, but it's not overpowering. The taste is the opposite of the image I had of sake when I was young. I'm glad to see that more and more sake breweries are making this kind of sake, and that it is being accepted and appreciated by the public. Of course, there is also traditional dry sake. It's a rough analogy, but it's a personal preference, just like soy sauce is good for ramen and pork bones are good for pork bones (^-^)

We bought it at Sumiyoshi Shuhan. I knew it was fruity from the shop's description, but from the first sip, it was a sake with a strong aroma, sweetness, and sourness. It's also very thick. It's delicious. I would like to try the other brands from the same brewery.

Limited edition sake with an original sake brewing method and label. The label is an image of Omiya, Shrine Ippongi, and the lining is an image of Omikuji, which we have at New Year's. It is 100% Yamada Nishiki with a clean fruit aroma.
