It is a very rich, mellow, dry, umami-guchi authentic sake, strong. It is strong. It goes the way of the solitary, without worrying about trends. I am going to be addicted to it. x777303It is said to be a Namaoto Junmai Daiginjo-shu made by polishing Koshitanrei to 30% polished rice and stored in winery barrels at low temperature for 945 days🍶×🍷. According to the label, 297 bottles bottled, an amazingly small production. Unexpectedly, the aroma of rice, after coming in mildly, becomes umami with spiciness and bitterness. But as you get used to drinking it and it calms down, it tastes like a crisp wine 🥂.

x777303I know someone whose grandfather used to ship Omachi rice to Tamanomitsu. This brewery, along with Toshimori Shuzo, was instrumental in the resurgence of Omachi rice. This organic Omachi rice is made by Tamanomitsu, so it has a lot of power. It is dry, with a strong aroma and flavor of rice, and the green label fits well. It is clean and dry, but it also has a sticky feel.

x777303I was surprised when the cork popped when I opened the bottle, but when the cork popped even louder in the sake fridge, I wondered for a moment what had happened 😲. This was, I believe, the first time for me to experience this, and it cheered me up💗. It was low alcohol, fruity, easy to drink, and the sweetness was beyond anything I could have imagined 😍. When upside down, peachy ooze, very beautiful.

x777303I have never had Hinomaru Brewing, but they have a brand called "Shinjin" that is made from nama-moto, and the Mansaku no Hana brand has a few (only?) nama-moto brands. I guess so. Akita-style brewing is said to add one more step to the standard nama-moto process, and it is a very careful brewing process that I appreciate. It is shipped after a year of aging, and all the flavors were harmonious and full of flavor 😉. 55%, 16 degrees, fire-aged.
