The first Isobojimai. The gentle sweetness comes first, followed by a beautiful acidity and some bitterness, and then it finishes cleanly and neatly. It is a light and dry sake, but the gentle sweetness covers the whole body from start to finish, and it is hard to believe that the sake is +5 to +7 on the sake scale 🤔🤔. Prior to drinking this, I read "My Own Sake: The Work of Nobuo Tada, Touji of Nanbu" by Tomohiro Oikawa. It was a very favorable book, centered on an interview with Mr. Tada, the toji of Isobojiman, and not too much or not enough written about his beliefs and the history of sake after the war. I will probably read it again at some point.

This is a repeat of the Yamada Nishiki that started the Tenpyo for the first time in over two years. It has a banana aroma. It is mellow and rich, with a good balance of sweet and sour at the same time as the umami of the rice can be felt well. I think the cohesiveness is very excellent 😋.

For me, the two most fantastic sake are XX and this Ryujinmaru 😀. First, I got the Ryujinmaru. When you drink it while reading the label, you can feel the romance of this sake I can feel the romance of this sake when I drink it while reading the label. It is a very rich, mellow, dry, umami-guchi authentic sake, strong. It is strong. It goes the way of the solitary, without worrying about trends. I am going to be addicted to it. It is said to be a Namaoto Junmai Daiginjo-shu made by polishing Koshitanrei to 30% polished rice and stored in winery barrels at low temperature for 945 days🍶×🍷. According to the label, 297 bottles bottled, an amazingly small production. Unexpectedly, the aroma of rice, after coming in mildly, becomes umami with spiciness and bitterness.
