2016年に発生した熊本地震の数日前に熊本の酒蔵さんのお仕事に携わり、世界に類を見ない日本酒の奥深さに感銘を受けました。 もともとビール党で、歓送迎会で一気飲みの悪しき経験がありそれまで避けていた日本酒でしたが、時を経て日本酒との再会にご縁を感じます。  出身は関東一の酒蔵数の茨城ですので、納豆のように粘り強く、そして酒蔵さんへの感謝を忘れず投稿したいと思います。よろしくお願いいたします。

Thank you for having me! Thank you "Junmai Ginjo Suidama Unfiltered Raw". Today I opened the second bottle of sake that I bought on my business trip to Akita (the first one was sold to the Ox). It has a sweet melon-like ginjo aroma, a mellow and deep flavor that spreads in the mouth, and a clean finish. I thought it was a wonderfully finished bottle. Personally, I liked the taste very much. Even though it is unfiltered, it is not habit-forming, so it is relatively easy to drink even for those who are new to sake.

Thank you for having me! Thank you "Ishizuchi Junmai Ginjo Omachi 50" I received this from a friend in Ehime. I love Omachi, so this is a very nice gift for me. It has the soft taste of rice that is typical of Omachi, but with little lingering and a nice crispness. It has a sharpness and elegance that I had not expected from Omachi. I enjoyed it very much.

Thank you for what you do! Thank you very much, "Ikarashi Junmai Ginjo: Up to the Third Ox The owner of a liquor store in Akita recommended this rare sake to me on a business trip to Akita. Today, I opened the package because I wanted to drink it until the third day of the month, just like the brand name. The mouthfeel was softer and rounder than I had expected, but it had a nice acidity and a sharp aftertaste. It was certainly a sake that I could go on drinking until three o'clock in the morning. It's even better hot, so be careful not to drink too much.

Thank you for having us! Thank you "Yaegaki Shinshu Limited Edition Nigorizake" When I was on a business trip to Hyogo last year, I was given this rare sake in limited quantities by a local resident. Yesterday, it snowed for the first time in a while, and I thought I'd be in the mood for nigori sake, so I finally opened the package again. The mouthfeel was fresh and full of sweetness. The finish was moderately crisp, and overall it was a very easy to drink and well balanced sake.

Thank you for having me! Thank you "Ryohin Ichibai Suisei Special Junmai Sake Raw On a business trip to Akita, I bought this at Sugaku Shugen, a long-established sake store in Akita City. I was surprised to see that they only sell sake from Akita. They do not sell online. I was surprised to see that they only sell sake from Akita. It has an apple aroma, a lightness and softness, and a mild taste overall, but with a hint of sharpness at the end, making it very easy to drink. I can see why it is loved by the locals on a regular basis. The fact that it can be brewed in the 1300 yen range is quite impressive. Incidentally, according to the liquor store owner, the name "Ryoshin" was created to pray for the repose of the soul of the brewer's younger brother, Ryoue, who passed away more than ten years ago, with the thought "To Ryoue's heart. This sake, which I enjoyed while feeling these thoughts, was very heartwarming. It was delicious.

I bought it on a business trip to Hyogo, at the Honda Sake Shop near Himeji Castle in Himeji City, directly managed by Honda. I took it out of the refrigerator and served it at a slightly room temperature. The attack was mild with the aroma of rice, and it was easy to drink with no miscellaneous tastes like Gohyakumangoku. I was expecting the aftertaste to end without any impact, but it had a nice bitterness that was more than sour, and I felt a wonderful sharpness. I thought it was typical for Nada sake to have this sharpness with Gohyakumangoku. I enjoyed it very much.

Thank you for having me! Thank you "Tasake NEW YEAR Bottle 2022 Junmai Ginjo Raw Sake"! This year is the year of the tiger, my zodiac sign, so I bought this bottle. I had hoped to open the bottle at the beginning of the year, but due to circumstances, I was finally able to do so today. Today is the first day of the year for me. It has a soft ginjo aroma like apples. The attack is a little firm and fresh like the new year! The aftertaste is slightly bitter with a hint of acidity, giving it a nice crispness that will make you feel the tightness of the new year.  (The aftertaste is acidic and slightly bitter, with a nice crispness. Thank you for the wonderful sake for the New Year. Thank you very much for this wonderful sake, which was very easy to drink and delicious. I look forward to working with you again this year!

Overall, I think it is easy to drink even for those who are new to sake. That's why I drank so much of it... It was delicious.

"Bujyu Junmai Ginjo Directly Pumped Unfiltered Raw Sake" This sake is made with subsoil water from the Kinugawa River system, one of the five water systems in Ibaraki Prefecture. It is a very popular sake and I personally like it. It has an apple-like ginjo aroma. Although it is unfiltered undiluted sake, it does not have a firm and thick mouthfeel, but is light and easy to drink with the freshness of the yeast. The bitterness lingers in the aftertaste along with the acidity, but it is a well-balanced sake with a crisp finish.

I bought this two weeks ago and opened it today, because it is a snowman before the snow falls, which is customary this time of year. It's a foaming type, but recently there are small holes in the lid to prevent spilling when opening, so thankfully there was no spillage. The harmony of sourness and sweetness is exquisite. It was so elegant that I thought it was champagne. After chilling it, I felt a sharpness, and as it approached room temperature, I felt a nice sweetness and flavor. It was so easy to drink and delicious that we ended up drinking it all that day. Now I can't wait for next year's Snowman.

Thank you for having us! Thank you, "Fukkomachi Kijoshu." I found this at a liquor store and bought my first bottle of Kijoushu. After being chilled, the attack is sweet like a noble sake, but it quickly becomes sharp and crisp, probably because some of the water used in the brewing process is Junmai Ginjo Daiginjo. When it approaches room temperature, the sweetness increases and the taste becomes mellow. Personally, I had the image that Kijoshu is the latter, so it matches my feeling. However, it has a refreshing aftertaste with acidity overall, and I thought it would be good before and after meals, but unexpectedly I thought it would be good during meals as well. This time, I enjoyed it with chocolate while relaxing.

Thank you "Kikumori Junmai-shu Autumn Agari" It's the time of year when we want to drink new sake, but this year's seventh Hiyaoroshi brand was purchased directly from Kiuchi Brewery, famous for its Hitachino Next Beer, when I returned home. The attack is a mild rice flavor with a subtle aroma of wooden vats. The aftertaste is sharp with moderate acidity and bitterness, and it was an easy drink with no miscellaneous flavors or habits, typical of Hitachinishiki. This is really the end of the line for this year's Hiyaoroshi. Here's to this year's Hiyaoroshi that has been so good to us!

The sixth hiyaoroshi of this year is this brand, which I bought at a liquor store when I was in Minamiuonuma City on a business trip, and is loved by the locals. It is also my favorite Omachi, so I bought it without hesitation. The attack is the characteristic mellow taste of Omachi, but the flavor of the rice can be felt very much, and it has a full flavor without any miscellaneous tastes. It has a good acidity and a lingering bitterness, and I thought it had a very well-balanced finish. It's been a while since I've had a good Omachi. It was really delicious! We are happy to finish this year's Hiyaoroshi with this brand.

It's a must-have brand for fans at this time of year, but I'm embarrassed to admit that I'm having it for the first time. The attack is fruity with a strong sweet and sour taste. The aftertaste is firm with a hint of sourness and bitterness. I felt that this sweet and sour taste created a sentimental autumn atmosphere.

Thank you for having us! Thank you "Ona Hiyaoroshi Special Junmai". The fourth Hiyaoroshi brand I purchased this year is this sake with an impressive autumnal label. Personally, I like this brand. The attack is mild with an acidity like an apple. and solid taste. The aftertaste is well balanced and sharp with moderate acidity and bitterness. It was the one that the blessing of the earth of a great Nasu and the depth of the earth of Nasu put in Ona were felt.

This is the taste on the second day after opening the package. It depends on the brand, but but it tastes better than right after opening the package. The initial aroma is like a banana. The attack is well-balanced with the sweetness and umami of the rice, and it has a soft taste without miscellaneous flavors. The finish has a moderate acidity followed by a slightly firm bitterness, but it is not something to be concerned about, and overall it is easy to drink. Personally, I think this Haruka Hiyaoroshi is a great finish that is easy for anyone to drink.

Thank you for having us! Thank you "Shichida Junmai 70.5%(All Omachi)Hiyaoroshi" This is the second hiyaoroshi sake I purchased this year. As a lover of Junmaishu and Omachi, I had no choice but to drink this brand when I came across it in the store. I had it at room temperature, and the aroma was of grain, which is typical of Junmai. The attack is the flavor of the rice, and the taste is full and smooth like an Omachi. I thought it was going to finish as it was, but it had a nice acidity and bitterness that gave the sake a solid impact. Every time, this brewery's Nanada surprises me, but at 1,300 yen, it's the strongest in terms of cost, and this year's Hiyaoroshi was obviously going to be overdone, and it tasted fantastic! I was very impressed with the 70.5% Omachi, which is considered to be a raging horse, and its habit-free finish.

Thank you for having us! Thank you very much "Banshu Ikken Junmai Ginjo Unfiltered Original Sake Hiyaoroshi". The first hiyaoroshi of this year is this sake. There is not much ginjo aroma, but the attack is smooth and you can feel a unique strong acidity. After that, it has a solid taste with bitterness and a relatively long aftertaste. If anything, as it approaches room temperature, the sourness and bitterness soften, and a very mild, wonderfully exquisite taste can be felt, and I personally prefer not to chill it too much. Tomorrow is the sake test... I want to make the most of today's tasting lol!

Thank you for having us! Thank you "Atago no matsu Hitonatsu no Koi Junmai Ginjo I bought this on a business trip because the label was distinctive and I was curious. I let it sit for about a month. The initial aroma is a gorgeous but slightly restrained ginjo aroma. The attack is refreshing and sweet like a summer sake, and it disappears quickly with a lingering taste of good acidity. Sweet and sour...just like the label, it is a refreshing sake that will give you an image of a summer love.

Thank you for having it! Thank you "Haginotsuru Junmai Ginjo Separate Bottling, Hi-ire Haginotsuru's midsummer cat version! I bought it at a local dealer while I was on a business trip for this. The initial aroma is a gorgeous but slightly restrained ginjo aroma. The attack is fresh and slightly carbonated, and then there is a perfect balance of subtle sweetness and mild flavor. The finish is sour with a lingering aftertaste that disappears quickly. It was an easy drinking gem that will make you mellow like a cat and drink too much.
