"Bujyu Junmai Ginjo Directly Pumped Unfiltered Raw Sake"
This sake is made with subsoil water from the Kinugawa River system, one of the five water systems in Ibaraki Prefecture. It is a very popular sake and I personally like it.
It has an apple-like ginjo aroma. Although it is unfiltered undiluted sake, it does not have a firm and thick mouthfeel, but is light and easy to drink with the freshness of the yeast. The bitterness lingers in the aftertaste along with the acidity, but it is a well-balanced sake with a crisp finish.
