Ibaraki Sake
Gokeijo Junmai Ginjo Summer Nama Sake
Gokeijo has been on my mind for a long time. This sake is made by the Aoki Sake Brewery in Furukawa City, Ibaraki Prefecture. I was interested in this sake because it has won many gold medals and is made by Mr. Yanai, the former toji (master brewer) of 寫楽. Aoki Shuzo is not a very big brewery, so it is hard to buy even in Ibaraki, but you can buy it at a local sake bar at Mito Station.
The aroma is gorgeous for a summer sake. The clear sweetness and Hitanishiki flavor stand out. Sourness is a bit. There is almost no bitterness. It is similar to Nozomu (bo:), a sake from Tochigi. This is a very tasty sake that can be used all over Japan. It is gorgeous, delicate, clear and juicy. If you can find it, please do.
