2016年に発生した熊本地震の数日前に熊本の酒蔵さんのお仕事に携わり、世界に類を見ない日本酒の奥深さに感銘を受けました。 もともとビール党で、歓送迎会で一気飲みの悪しき経験がありそれまで避けていた日本酒でしたが、時を経て日本酒との再会にご縁を感じます。 　出身は関東一の酒蔵数の茨城ですので、納豆のように粘り強く、そして酒蔵さんへの感謝を忘れず投稿したいと思います。よろしくお願いいたします。

Ayagiku Shuzo Daiginjo Chouyou! This sake is brewed with Oceto rice and olive yeast. The color of the bottle is a refreshing olive green, a specialty of Kagawa Prefecture. The aroma is gorgeous and the attack is fresh and fruity, but before the umami spreads in the mouth, there is a fine, moderate acidity and bitterness, and the finish is sharp. Overall, it was a cohesive and elegant bottle!

It's been a long time since I've posted... a year... I like the name "Kotobuki", which means "unlimited life" in Japanese! Also, the pink label is very spring-like, which I can't wait for. It's a limited edition, freshly pressed only this time of year by Eiko Fuji. It has a gorgeous aroma that is typical of daiginjos, a moderate acidity, a refined flavor, and a bit of bitterness that doesn't end up being refreshing in a good way. It became one of my favorite bottles! As the brand name suggests, we hope to have a long-lasting relationship with this sake next year and the year after.

We received the customary zodiac bottle of Tasake, which we purchased at the end of the year but failed to drink at New Year's. It is light and easy to drink, with a gorgeous taste suitable for the New Year, good acidity and umami, and a crisp finish that leaves a strong aftertaste. I was impressed by this well-balanced bottle again this year.

A must-have sake for New Year's Day, loved by Ippin fans! Ippin Hatsushibori Activated Nigori Sake! This is my favorite brand of cosy sake from Ibaraki. It is a reasonably priced (1100 yen, 720 ml) bottle of active nigori sake with a rich, piquant feel, a creamy taste with a moderate sweetness, and a lot of moromi to give it a festive, New Year's-like atmosphere! I love you if you don't drink this!

Thank you for having it! Yamazakura Momo Junmai Daiginjo! I bought this sake from the Sudoh family, which is said to be the oldest sake brewery in Japan, and it is one of the representative brands of the Sudoh family. I expected a gorgeous taste from Yusura, but I found it to be a sake for professionals with a complex overall taste, with a firm graininess on the attack, a slightly limp sweetness from the rice, and a slightly strong acidity and bitterness in the aftertaste.

Thank you for having it! Waka Botan Junmai Ginjo! I have never had much sake from Oita, but when I stopped by a liquor store on a business trip to Oita and was told that it was the brewer of Iichiko shochu, I wanted to try it and bought it. 　It has a refreshing yet robust flavor. The lingering bitterness and acidity are subtle and moderate. As you may know if you have had Iichiko shochu, the aftertaste was overall refreshing and somewhat similar to the taste of Iichiko lol.

Thank you for having it! Seikagami Junmai Super Dry! I enjoyed the Nirmiko sake I had the other day, so I wanted to drink the super-harsh sake in that Nakamare and bought it. 　The moment I drank it, I was struck by its summery freshness, moderate umami of rice, acidity, and sharpness, and overall, it was easy to drink without any peculiarities! I was expecting it to be super dry, but I was pleasantly surprised. 　I have heard that Hiroshima sake is mainly made with soft water, but I realized that even super dry sake can be made so easy to drink depending on the hardness of the water. I might drink too much.

Thank you for having it! Rumiko's Sake Summer Special Junmai Unfiltered! I purchased this sake on a business trip to Mie from a liquor store with a wide selection of local Mie sake. I purchased this sake because it is a slightly milder version of Rumiko's sake, which is often quite dry. 　Although Rumiko's sake has a soft label, it is reasonably dry, sharp, and summery! Personally, it made me want to eat sashimi, salted and grilled fish on a hot day. It is the best summer sake! Thank you Rumiko!

Thank you for having it! Mutsu Hachisen Summer Ginjo! The label has a gorgeous blue color that I personally like! It's summery and nice. It's so hot today that I drank it only during the day. Ginjo aroma like apples. Light and refreshing, with a well-balanced attack of umami, acidity, and bitterness, it is a very summery sake with a great aftertaste! Great for lunchtime drinking too!

Thank you for having it! Kaika Junmai Namaishu! Kaika, a bottle from a long-established sake brewery in Tochigi! Gorgeous blue label, my personal favorite! It has a rounded flavor with no corners, just the right amount of umami and acidity, and although it is a junmai sake, it is easy to drink without any peculiarities! It is a cosy sake at 1,300 yen and one that I would not hesitate to purchase.

Thank you for being available! Takeyuki BuyuCycle! The label is very unusual for Takeyuki, who is famous in Ibaraki Prefecture, in that it does not even use the Takeyuki name, but rather a softer label. I was surprised that it was Buyu and bought it. It has a refreshing, light lychee-like flavor, just the right amount of soft sweetness, umami, and acidity, and a lingering aftertaste that quickly fades away. The magic of soft water, which is one of Takeyoshi's specialties! As a whole, even beginners can enjoy this wine. Since a few years ago, more and more people have been cycling around Kasumigaura in the southern part of Ibaraki Prefecture, so this was the kind of sake that would be refreshing after a day of cycling.

Thank you for having it! Sanzen Sakura Sakura Sakura Nigori Nama Sake! I was attracted to the beautiful Sakura brand and purchased it. It has a light nigori that reminds me of the pure white snow in Hokkaido, a fizzy, bubbly taste, a hint of sweetness from the exquisite Aizan, a clear, fresh, elegant flavor, and an encore degree of 5 degrees, which made it quite easy to drink and I finished it in one night. It was delicious!

Thank you for having it! Kangiku OCEAN99 Junmai Ginjyo Kukai -Inflight-! I was attracted to the OCEAN99 series because of the freshness of the label and the fact that it was made with the hope that people would feel the Kujukuri Coast of Chiba Prefecture. It has a refined sweetness like kompeito sugar and a dry acidity, It has a fresh and crisp taste that reminds me of summer, It is unfiltered but once heated, so it is very easy to drink without any habits! It is unfiltered, but once fired, so it is not habitual and very easy to drink!

Thank you for having it! Miyoshikiku Aizan Unfiltered Nama Sake ! I opened a bottle of sake that had been sitting at home for a while after I bought it at a sake festival. It has a citrusy acidity and a whiskey-like smokiness, The balance of smooth and mellow umami, bitterness, and the taste like Omachi, even though it is made from out of grade rice, was a bottle that showed the challenge and effort of the brewery.

Thank you for having it! Kamikimoto Namaishige Junmai Ginjyo Unfiltered Nama-shu ! I bought this sake when I was in Yamagata on a business trip. It is one of my personal favorite sake brands, not only for its taste, but also for its name. It has a strawberry-like sweetness, a gentle acidity, a fresh crispness, and a pleasant sharpness with a hint of spiciness. It is easy to drink without any peculiarities even though it is an unfiltered, unpasteurized sake. A sake that is truly a source of great pleasure! Kamikigen! It is a good sake.

Thank you for having it! Omachi Junmai Ginjo Unfiltered Nama Sake! When I visited Tokushima, I happened to come across a sake festival in Miyoshi City. I had a free tasting at Miyoshikiku's brewery and bought a bottle of my favorite Omachi. Walk on the Wild Side! The brewery is a unique sake brewery with many core fans and distinctive illustrations. It had a soft aroma of green apples, a wonderful balance of richness and depth typical of Omachi, a light acidity, a moderate lingering bitterness, flavors that pass through the nose, and a wonderful concentration of the best parts of Tokushima yeast and Omachi.

Thank you for having it! Gikyo Junmai Namaishu! This is my personal favorite sake, a sake that gives me a sense of giri (duty) and humanity from the brand name. Fresh, light, and fruity, with a clean aftertaste that makes it easy to drink! It tasted exactly like the brand name, "Chivalrous", with a clear and transparent taste!

Thank you for having it! Kinryo, olive yeast, junmai-shu, unfiltered, unpasteurized! Unusual olive yeast. So they made olive yeast in a sake unique to Kagawa Prefecture, which produces a lot of olives! I was interested and purchased it. It had a fresh taste like green apple, fresh olive flavor on the nose, and a long lingering sweet-sour and bitter taste.
