2016年に発生した熊本地震の数日前に熊本の酒蔵さんのお仕事に携わり、世界に類を見ない日本酒の奥深さに感銘を受けました。 もともとビール党で、歓送迎会で一気飲みの悪しき経験がありそれまで避けていた日本酒でしたが、時を経て日本酒との再会にご縁を感じます。  出身は関東一の酒蔵数の茨城ですので、納豆のように粘り強く、そして酒蔵さんへの感謝を忘れず、基本備忘録の投稿になりすが、よろしくお願いいたします。

Eiko Fuji Junmai Daiginjo Unfiltered Nama Shu*. The owner of my favorite liquor store recommended this sake as one of Eikoufuji's very limited editions with a very good cost performance. The rice polishing ratio is one of the highest in the history of Eiko Fuji. Since I learned that the brewer, Fuji Shuzo, is a descendant of my personal favorite warlord, Kiyomasa Kato, I have been enjoying this brand. Polishing ratio 24 Fresh taste like lychee or banana without any cloying taste in the mouth. Moderate acidity on the palate Good sharpness and bitterness that leaves a lingering aftertaste The price of 3,300 yen is inexpensive! Overall, it was an elegant and satisfying bottle. We are grateful to be able to enjoy sake again this year. I hope we can spend another year with sake!

Morishima OMACHI Junmai Daiginjo Morishima is a Junmai Daiginjo from Morishima Shuzo, which is now one of the leading brands in Ibaraki Prefecture. Polishing ratio 50%. Smooth and full-flavored taste brewed by Omachi. The balance between the umami of the rice and the gentle aftertaste and acidity is exquisite. Overall, it is an easy-drinking, elegant bottle with Morishima's typical transparency and the freshness of unpasteurized sake. It is a refined sake that is easy to drink with fresh raw foods such as sashimi, cured ham and cheese. I would like to match it with non-oily dishes such as fresh sashimi, cured ham, cheese, etc. We enjoyed it very much!

Raifuku Junmai Moromi Sake Nigori Sake Nama Nama A representative brand of Ibaraki Prefecture, this is a seasonally appropriate bottle from the Raifuku Shuzo brewery, filled with live unrefined sake! The mouthfeel is fizzy, fresh, and clear. The fresh presence of the unrefined sake and the mild and moderate umami of the rice spread in the mouth. The aftertaste is refreshing and not as sweet as expected. It was so easy to drink that one could finish it in no time at all. It was a bottle of nigori sake with a high degree of perfection in terms of taste, visual appeal, and price!

One of a kind, super dry Junmai! ◎Polishing ratio 70%, Sake degree +11 Sold at local supermarkets in Ibaraki, it is a familiar sake to locals. This is a representative brand of Yoshikubo Shuzo, and while there are other reasonably priced, easy-to-drink sake available, including this one, this sake is one that just hits you hard! While the rich umami of the rice can be felt linearly, the aftertaste is quite sharp! It is a maniacal sake that those who like it will love! This time of the year, when served with anko-nabe or other strong dishes, you can enjoy a refreshing taste to cleanse your palate. I like this one!

This is a freshly squeezed, unpasteurized sake! Winter only (shipped in several batches from November to January) The rice polishing ratio is 60%, and brewing alcohol is added. (According to the owner of the liquor store, it seems that only a little bit of brewing alcohol is added, which is not bothersome), It has an aroma similar to that of 20% alcohol, but with the freshness of a pure sake and the clarity of a ginjo-shu, It has a sweet and smooth taste of rice, and a good sharpness without any cloying taste. Overall, this is a very well-balanced and easy-to-drink bottle! It is also cosy and versatile as a food sake, It is a sake that I would like to drink again.

The local muddy sake is a well-known local specialty! is the local phrase that comes to mind when one thinks of this familiar muddy sake! Although nigori sake, it is not as sweet as one might imagine, but rather a muddy sake with a bitter taste and sharpness! On the surface, the sake is cloudy and sweet like Mitsukuni Mito. On the surface, the sake seems mild and mild like Mitsukuni Mito, but when you drink it, the aftertaste is more robust than you might imagine, and you can feel the sharpness of the sake as if it has been judged! It's good!

My personal favorite brand of sake from Ibaraki! A great bottle of Omachi without the added water of "Short-stalked Watabune", which is a revived version of a representative sake rice from the Meiji and Taisho Eras! It has a fresh, melon-like fruitiness and a mild, yet moist and elegant flavor. I personally thought it was a wonderful junmai ginjo sake with the clarity of a white wine!

A friend of mine gave me a celebratory gift, a high-cost sake that I don't have to tell you about. It has a soft banana-like flavor, with a rounded sweetness and umami! Although it is a junmai sake, there is no cloying or peculiar taste and a clear aftertaste. Overall, an easy-drinking bottle with nothing to complain about. As expected from Tanaka Rokuugo! Delicious!

I bought this bottle because the owner of the liquor store told me that if I wanted to drink it, it must be heated! It has a rich, matured flavor that is amazing. It has a strong, robust flavor with a thick acidity, and I can see why it must be heated up! Also, the amber color gives it a nice matured feel. In a good way, it has a flavor that is addictive to those who like hot sake! I wanted to try it with stewed motsu (pork cutlet) or scallops stir-fried in butter. Delicious!

Speaking of Tokushima Prefecture, the Miyoshikiku Sake Brewery Co. A friend of mine gave it to me in January and I opened it today. The brand Miyoshikiku is known for its impressive labels, as typified by Wild Side, but this one has an unusually calm label. It seems that they used their daughter's name as the label. The taste has a gorgeous ginjo aroma with Miyoshikiku's characteristic strong apple sweet aroma and acidity! It also has a moderate bitterness and sharpness. Although New Year's has already passed, I felt this bottle is suitable for winter and early spring, including New Year's.

This bottle is brewed by a sake brewery in the neighborhood of Kompirazan. It has a gorgeous ginjo aroma, a rather restrained sweetness, and a clean and crisp finish. The crisp Seto Inland Sea climate can be felt in the flavor, making it a perfect match for Kagawa's famous chicken on the bone and fresh fish!

Ayagiku Shuzo Daiginjo Chouyou! This sake is brewed with Oceto rice and olive yeast. The color of the bottle is a refreshing olive green, a specialty of Kagawa Prefecture. The aroma is gorgeous and the attack is fresh and fruity, but before the umami spreads in the mouth, there is a fine, moderate acidity and bitterness, and the finish is sharp. Overall, it was a cohesive and elegant bottle!

It's been a long time since I've posted... a year... I like the name "Kotobuki", which means "unlimited life" in Japanese! Also, the pink label is very spring-like, which I can't wait for. It's a limited edition, freshly pressed only this time of year by Eiko Fuji. It has a gorgeous aroma that is typical of daiginjos, a moderate acidity, a refined flavor, and a bit of bitterness that doesn't end up being refreshing in a good way. It became one of my favorite bottles! As the brand name suggests, we hope to have a long-lasting relationship with this sake next year and the year after.

We received the customary zodiac bottle of Tasake, which we purchased at the end of the year but failed to drink at New Year's. It is light and easy to drink, with a gorgeous taste suitable for the New Year, good acidity and umami, and a crisp finish that leaves a strong aftertaste. I was impressed by this well-balanced bottle again this year.

A must-have sake for New Year's Day, loved by Ippin fans! Ippin Hatsushibori Activated Nigori Sake! This is my favorite brand of cosy sake from Ibaraki. It is a reasonably priced (1100 yen, 720 ml) bottle of active nigori sake with a rich, piquant feel, a creamy taste with a moderate sweetness, and a lot of moromi to give it a festive, New Year's-like atmosphere! I love you if you don't drink this!

Thank you for having it! Yamazakura Momo Junmai Daiginjo! I bought this sake from the Sudoh family, which is said to be the oldest sake brewery in Japan, and it is one of the representative brands of the Sudoh family. I expected a gorgeous taste from Yusura, but I found it to be a sake for professionals with a complex overall taste, with a firm graininess on the attack, a slightly limp sweetness from the rice, and a slightly strong acidity and bitterness in the aftertaste.

Thank you for having it! Waka Botan Junmai Ginjo! I have never had much sake from Oita, but when I stopped by a liquor store on a business trip to Oita and was told that it was the brewer of Iichiko shochu, I wanted to try it and bought it.  It has a refreshing yet robust flavor. The lingering bitterness and acidity are subtle and moderate. As you may know if you have had Iichiko shochu, the aftertaste was overall refreshing and somewhat similar to the taste of Iichiko lol.

Thank you for having it! Seikagami Junmai Super Dry! I enjoyed the Nirmiko sake I had the other day, so I wanted to drink the super-harsh sake in that Nakamare and bought it.  The moment I drank it, I was struck by its summery freshness, moderate umami of rice, acidity, and sharpness, and overall, it was easy to drink without any peculiarities! I was expecting it to be super dry, but I was pleasantly surprised.  I have heard that Hiroshima sake is mainly made with soft water, but I realized that even super dry sake can be made so easy to drink depending on the hardness of the water. I might drink too much.

Thank you for having it! Rumiko's Sake Summer Special Junmai Unfiltered! I purchased this sake on a business trip to Mie from a liquor store with a wide selection of local Mie sake. I purchased this sake because it is a slightly milder version of Rumiko's sake, which is often quite dry.  Although Rumiko's sake has a soft label, it is reasonably dry, sharp, and summery! Personally, it made me want to eat sashimi, salted and grilled fish on a hot day. It is the best summer sake! Thank you Rumiko!

Thank you for having it! Mutsu Hachisen Summer Ginjo! The label has a gorgeous blue color that I personally like! It's summery and nice. It's so hot today that I drank it only during the day. Ginjo aroma like apples. Light and refreshing, with a well-balanced attack of umami, acidity, and bitterness, it is a very summery sake with a great aftertaste! Great for lunchtime drinking too!
