2016年に発生した熊本地震の数日前に熊本の酒蔵さんのお仕事に携わり、世界に類を見ない日本酒の奥深さに感銘を受けました。 もともとビール党で、歓送迎会で一気飲みの悪しき経験がありそれまで避けていた日本酒でしたが、時を経て日本酒との再会にご縁を感じます。  出身は関東一の酒蔵数の茨城ですので、納豆のように粘り強く、そして酒蔵さんへの感謝を忘れず投稿したいと思います。よろしくお願いいたします。

Thank you for having it! Thank you for the "Aizu Nakasyo Summer Limited Edition Ginjo-shu." I look forward to this sake every year at this time of year because of its refreshing summery label. It has a subtle grain-based ginjo aroma. The mouthfeel is mildly sweet and slightly firm. The aftertaste has a moderate bitterness and sharpness, making it a refreshing summer sake.

Thank you for having it! Thank you for "Manatsu no Kajitsu Junmai Ginjo Unfiltered Nama-shu". This brand name reminds me of a famous summer song by Southern All Stars called "Manatsu no Kajitsu". I was interested in purchasing this sake because I don't often encounter sake from Okayama Prefecture. The ginjo aroma is apple-like. It has a fruity mellowness and a slightly firm acidity. The overall freshness and uncluttered sweet and sourness of the sake made it an easy-drinking sake with a truly midsummer fruitiness.

Thank you Urasato Junmai Ginjo We purchased this sake because it is brewed by Chikara Urasato, the young 29-year-old 6th generation brewer and toji of Urasato Shuzo, who is obsessed with Ogawa yeast. This sake is brewed by a toji of the same name as Chikara Ogawa, who discovered Ogawa yeast, and is trying to make all Ibaraki sake. It has a sweet aroma like lychee. It has a soft mouthfeel with a moderate sweetness. As is typical of Ogawa yeast, the acidity is low. The lingering bitterness is rather strong and sharp. Overall, it has a light finish. One of the brands we want to support! We enjoyed it very much.

Thank you for having it! Thank you very much for "Kamikigen Junmai White Koji-brewed Nama Sake Shiraakari". This brand is a sake with the desire to be a source of high quality pleasure... Since I started drinking sake, I have always thought that sake should be drunk that way, and it has become one of my favorite brands. I was attracted by the impact of the white malted rice and the happy yellow label. Fresh citrusy aroma. Lemon-like acidity, a freshness without any cloying taste, and a bitterness like fresh radish. At the end, you feel a clear crispness. This was my first white malted rice sake, and I think it is a perfect refreshing sake for the hot, humid summer!

In the summer season, the annual summer fireworks display is still cancelled these days, so I was attracted by the fireworks-like label and purchased this bottle. It has a sweet aroma like yogurt. It is soft to drink, but not too sweet. Sourness and bitterness balanced, with a bit of lingering bitterness, but overall a crisp aftertaste. Tamaya〜.

I wondered what it was, but the sake shop told me that it had been dormant for 50 years, but was revived in 2010, and that they had decided to stop using a specific name and instead use the number of grains of rice to express the percentage of polished rice so that consumers around the world would understand. He said that this sake is popular all over the world. Gentle aroma like white peach. It has a gentle aroma like white peaches, acidity like muscats, and a full sweetness and umami. Thank you very much for the "150th Anniversary Junmai Ginjo When I was in Shimane Prefecture on a business trip, I visited a sake brewery located a few dozen minutes from Izumo City station and purchased this sake in person. I was surprised to find that the brewery was located in the city center, which is much closer to Izumo Fuji than I had imagined. The sake had a full aroma like grain, a full-bodied flavor, and a slightly strong acidity and bitterness characteristic of sake brewed with sake yeast. It may be good to drink hot. The sake was a very impressive sake brewed with a yeast that is found in a sake brewery with a long history.

Thank you for having it! Thank you very much for the "Special Junmai Haraju for New Sake glasses only, once fired." This is a new sake from Hagino Shuzo, famous for its Haginotsuru brand name. I bought it because of its interesting label and because I was told by the owner of the store that it is a blend of sake made from each tank of brewed sake. Unlike Haginotsuru, which is clear and refreshing, this sake has a dry taste with a little less sweetness and umami from the rice. The moderate acidity and bitterness give it a roughness that is typical of new sake, but in a good way. It has a nice roughness that is typical of new sake, and the moderate acidity and bitterness give it a sense of sharpness. Overall, it is an easy-drinking sake with no peculiarities.

I was attracted to the Tojo-produced Yamadanishiki, which is considered a special A grade Yamadanishiki, so I bought it. Ona is one of my favorite brands. It has a mild rice flavor and a light taste. At the end, I felt a firm sharpness and a moderate aftertaste, and it was a great bottle. Delicious is the only word I can say to describe it!

Thank you for "Choyo Fukumusume Dry Junmai Sake Unfiltered Nama-shu Nao Kumi I had imagined that the taste of unfiltered, pure rice sake would be quite peculiar, but perhaps due to the Yamadanishiki sake rice, the taste is light and fresh on the palate. After a while, it has a nice sharpness. As the sake is served chilled or at room temperature, the mouthfeel becomes mellower and the flavor is even more pronounced. Personally, I thought this was the best bottle of the year!

It is a representative sake of the Aoki Sake Brewery located in Furukawa City, the westernmost tip of Ibaraki Prefecture, and the brand name itself puts us in a merry mood. It has a melon-like ginjo aroma, a full and mellow rice flavor, and a light and firm taste. We enjoyed this sake, which is brewed with subsoil water from the Tonegawa River system, one of the five water systems of Ibaraki.

Thank you for having us! Thank you "Tsuki no Ichi Shibori Barrel Sake It has been a little over a year since Mr. Ishikawa joined Tsuki no I Shuzo from Takekizuru Shuzo in Hiroshima. Personally, I like their sake as much as Morishima Sake Brewery in Ibaraki. It is a seasonal sake that is made from the first pressing of the year's newest sake. The barrel sake has a soft woody aroma, a firm, thick flavor with a pleasantly moderate acidity, and a sharp sharp finish. It is good cold, but could also be served hot. This barrel sake from Tsukii Shuzo is a perfect accompaniment to an anglerfish hot pot, which will be out of season in a little while. We enjoyed this sake brewed with subsoil water from the Naka River system.

During a recent business trip to Kurume City, Fukuoka Prefecture, I visited Yamaguchi Shuzo, a local sake brewery, and purchased this product. There were no four-pack bottles available, so I had to settle for a one-pack bottle, but there were only three bottles left, so I was happy to be able to purchase one. It has a green apple-like ginjo aroma, a moderate mild sweetness and freshness on the palate, and a sharp finish. It was an elegant sake with a hint of freshness as we head into the long-awaited spring.
