2016年に発生した熊本地震の数日前に熊本の酒蔵さんのお仕事に携わり、世界に類を見ない日本酒の奥深さに感銘を受けました。 もともとビール党で、歓送迎会で一気飲みの悪しき経験がありそれまで避けていた日本酒でしたが、時を経て日本酒との再会にご縁を感じます。  出身は関東一の酒蔵数の茨城ですので、納豆のように粘り強く、そして酒蔵さんへの感謝を忘れず投稿したいと思います。よろしくお願いいたします。

Thank you for having us! Thank you "Ona Hiyaoroshi Special Junmai". The fourth Hiyaoroshi brand I purchased this year is this sake with an impressive autumnal label. Personally, I like this brand. The attack is mild with an acidity like an apple. and solid taste. The aftertaste is well balanced and sharp with moderate acidity and bitterness. It was the one that the blessing of the earth of a great Nasu and the depth of the earth of Nasu put in Ona were felt.

Thank you for having us! Thank you "Haruka Hiyaoroshi (Yamadanishiki) The third hiyaoroshi we purchased this year is this sake with its impressive yellow label. This is the taste on the second day after opening the package. It depends on the brand, but but it tastes better than right after opening the package. The initial aroma is like a banana. The attack is well-balanced with the sweetness and umami of the rice, and it has a soft taste without miscellaneous flavors. The finish has a moderate acidity followed by a slightly firm bitterness, but it is not something to be concerned about, and overall it is easy to drink. Personally, I think this Haruka Hiyaoroshi is a great finish that is easy for anyone to drink.

Thank you for having us! Thank you "Shichida Junmai 70.5%(All Omachi)Hiyaoroshi" This is the second hiyaoroshi sake I purchased this year. As a lover of Junmaishu and Omachi, I had no choice but to drink this brand when I came across it in the store. I had it at room temperature, and the aroma was of grain, which is typical of Junmai. The attack is the flavor of the rice, and the taste is full and smooth like an Omachi. I thought it was going to finish as it was, but it had a nice acidity and bitterness that gave the sake a solid impact. Every time, this brewery's Nanada surprises me, but at 1,300 yen, it's the strongest in terms of cost, and this year's Hiyaoroshi was obviously going to be overdone, and it tasted fantastic! I was very impressed with the 70.5% Omachi, which is considered to be a raging horse, and its habit-free finish.

Thank you for having us! Thank you very much "Banshu Ikken Junmai Ginjo Unfiltered Original Sake Hiyaoroshi". The first hiyaoroshi of this year is this sake. There is not much ginjo aroma, but the attack is smooth and you can feel a unique strong acidity. After that, it has a solid taste with bitterness and a relatively long aftertaste. If anything, as it approaches room temperature, the sourness and bitterness soften, and a very mild, wonderfully exquisite taste can be felt, and I personally prefer not to chill it too much. Tomorrow is the sake test... I want to make the most of today's tasting lol!

Thank you for having us! Thank you "Atago no matsu Hitonatsu no Koi Junmai Ginjo I bought this on a business trip because the label was distinctive and I was curious. I let it sit for about a month. The initial aroma is a gorgeous but slightly restrained ginjo aroma. The attack is refreshing and sweet like a summer sake, and it disappears quickly with a lingering taste of good acidity. Sweet and sour...just like the label, it is a refreshing sake that will give you an image of a summer love.

Thank you for having it! Thank you "Haginotsuru Junmai Ginjo Separate Bottling, Hi-ire Haginotsuru's midsummer cat version! I bought it at a local dealer while I was on a business trip for this. The initial aroma is a gorgeous but slightly restrained ginjo aroma. The attack is fresh and slightly carbonated, and then there is a perfect balance of subtle sweetness and mild flavor. The finish is sour with a lingering aftertaste that disappears quickly. It was an easy drinking gem that will make you mellow like a cat and drink too much.

Thank you very much "Choyo Fukumusume Naokumi Summer Junmai Ginjo I bought this without a second thought because of the combination of the direct pumping and the fire pouring. The aroma on the rise is like a banana. The attack is mild, and you can feel the summer-like coolness from the rare slight foaming of the direct pumping, and the aftertaste is firm and crisp. It was a gem that was very easy to drink and you could drink too much of it. It was delicious!

Thank you for having me! Thank you "Souhomare Ikatashikomi Tokubetsu Junmai". We were told at a local shop that this sake is from a brewery that has been working hard lately. The attack is a bit like a rice malt flavor, but after that, you can feel the strong acidity that is characteristic of Ikaramoto brewing, and the aftertaste is crisp. While there are many unique flavors in the case of Ikarashibukomi, perhaps it is because the rice used for brewing is Yamadanishiki from the special A district, but overall it is easy to drink and elegant Ikarashibukomi Junmai.

I bought a bottle because this brand is only available in 1-square-bottle bottles (by the way, they once made a 4-square-bottle bottle temporarily with the Corona disaster) The attack is a moderate sweetness from the rice, and the aftertaste is a hint of sourness that disappears quickly. We had it chilled, but it would be better at room temperature to feel the flavor. Overall, it was an easy drinking sake.

Thank you for having it! Thank you "Tsujikaze Junmai Ginjo (Raw Sake) Yumesasara Tsuji Zenbei is my personal favorite sake. I bought it at a special agent when I was on a business trip to Tochigi. It has a faint ginjo aroma and the attack is more of the rice flavor than I expected, followed by a fresh acidity. Overall, it has a light mouthfeel like a Kaoru sake, but I was impressed that I could feel the deliciousness of the rice even though the rice is highly polished, which may be a characteristic of Yume-Sasara's suitable rice.

Thank you for having me! Thank you "Shizenshu Junmai Ikatani Nakakumi (fire-pumped) I was curious to purchase this because it uses natural brewer's yeast. The upfront aroma is like yogurt with a hint of acidity. The attack was what I imagined to be the complex and distinctive taste of a nascent yeast-based sake, but it was well-balanced and had a clean aftertaste, with a moderate yogurt acidity and a mellow taste, probably due to the heat treatment. I felt that it was made to be a more drinkable sake than I had imagined. At first I drank it chilled in the refrigerator, but as it got closer to room temperature, it became even more mellow and delicious.

Thank you for having me! Thank you "Hozu Sanjin Monju Special Junmai Unfiltered Raw Sake This is the only limited edition of this brand of Hozu that is wrapped in newspaper. It's like the Chochin of Japanese sake. After you feel the strong flavor of the rice, the bitterness lingers with the strong acidity. Overall, it is a powerful sake with a characteristic taste like unfiltered sake. The second day after opening the package, the gorgeous aroma increases, it becomes mellow, and the bitterness becomes moderate, making it easier to drink.

A distinctive sake with a tropical label that evokes images of summer from a brewery that revived sake on Iki Island in Nagasaki Prefecture for the first time in about 30 years. The attack has a full flavor with the sweetness of the rice, and the aftertaste has a nice crispness. It is a sake that can be enjoyed with both Japanese and Western food. As it was trained at Toyo Bijin's brewery, it was a gem with good overall balance and easy to drink.

We were told that this sake, which takes the first letter of Yuki in Ibaraki Prefecture, can only be purchased at liquor stores in Yuki City. Until now, Ibaraki Prefecture has relied on other prefectures for its sake, such as Nanbu Toji and Echigo Toji. It has a fruity ginjo aroma on the nose, a soft sweetness from the rice on the attack, and a delicate aftertaste with a lingering acidity. It is a sake that is easy to drink even for beginners, and it is also a versatile sake for sipping.

The more it becomes room temperature, the softer it becomes and the more wonderful it tastes.

Thank you very much, Manzaku no Hana, direct pumping Special Junmai Nama Genshu! The attack is fresh with the slight carbonation of direct pumping and raw sake, and after that, you don't feel the richness of the original sake so much, but you feel the subtle flavor of the rice and it disappears quickly. On the other hand, as it goes from cold to room temperature, you can feel the slight carbonation and the richness becomes stronger, and the taste becomes mellow. The price is about 1300 yen and it is a wonderful sake.
