2016年に発生した熊本地震の数日前に熊本の酒蔵さんのお仕事に携わり、世界に類を見ない日本酒の奥深さに感銘を受けました。 もともとビール党で、歓送迎会で一気飲みの悪しき経験がありそれまで避けていた日本酒でしたが、時を経て日本酒との再会にご縁を感じます。  出身は関東一の酒蔵数の茨城ですので、納豆のように粘り強く、そして酒蔵さんへの感謝を忘れず投稿したいと思います。よろしくお願いいたします。

This year's annual Risshun morning pressing for the lunar New Year was Tenranzan by Igarashi Shuzo of Saitama Prefecture. It has a freshly pressed, gorgeous, fresh, vibrant, and youthful flavor. It has a wonderful roughness and sharpness, as one would expect from a cold Risshun! Thanks to all the sake brewers who visited the brewery early this morning to deliver the freshly pressed sake! Thank you for a sake that smells good, tastes good, and brings good luck!

Thanks for having it! Hato Masamune Junmai Ginjo, zodiac sign bottle, Lavi+! I know I'm late to the party, but when I bought Tasake's zodiac sign label at the end of last year, I bought it together with the cute pigeon and rabbit labels. It has been a little while since the beginning of the year, but I opened it today. The taste is fresh, clear, and soft, just as it should be for the New Year. The strawberry-like sweetness and umami spread out, and along with moderate acidity, the aftertaste is naturally sharp. It was as satisfying as the rabbit on the label!

Thank you for having it! Matsumori Junmai Ginjo Araibashiri! I bought it because of its distinctive label, which gives the impression of lively, popping yeast. It is a sake brewed by a sake brewery that brews with subsoil water from the Kujigawa River system, one of the five water systems in Ibaraki Prefecture. It has a fresh, fizzy, bubbly, and light mouthfeel. It has a gorgeous taste with green apple-like acidity and melon-like sweetness. It has no unpleasant taste or peculiarity at all, and even beginners will find it very easy to drink.

Thanks for having it! Tazake NEW YEAR Bottle 2023 (zodiac label)! The annual battle of the zodiac. I bought this bottle at the end of the year and opened it today. It has a gorgeous, fresh muscat flavor, befitting a New Year's sake. Smooth but pleasant lunch acidity. Easy to drink with just the right amount of natural sharpness. It was described on the four-pack bottle as a "U" (宇)! Yum! We look forward to serving it again this year.

Thank you for having it! Kure Hatsushibori Junmai Nama Sake! On a business trip to Kochi, I patrolled the liquor store and bought a Junmai Kurei Hatsushibori since I had never had it before. It is a man's sake with a fresh mouthfeel, as is typical of Hatsushibori, with the sweetness and acidity of the rice kept in check, and a dry, crisp taste that is typical of Tosa without any cloying flavors. It definitely goes well with fresh fish such as bonito.

Thank you for having it! Raifuku Hatsushibori Junmai Namaishu! While fruity and refreshing, it has an impressive balance of moderate acidity, umami, and soft sweetness. As it approaches room temperature, the sweetness increases, making it easy to drink like a white wine. A distinctive brand with a fairly low acidity level, and the preferred rice is Ihyakuman! It was quite easy to drink, and it was bad enough to drink too much. We had it with a prayer for good fortune next year.

Thank you for having it! Banshu Issen Shippo Junmai Starch Tangle! The clerk told me to buy it because it was a new Banshu Issen sake, a fairly limited product made to order, and very freshly pressed and bottled, so he recommended it to me. It has a fresh and piquant effervescence, a good acidity from the lactic acid bacteria, and a dry sharp aftertaste. I was imagining sweetness from the visual, but was betrayed by a good now. Nevertheless, as it approached room temperature, I could taste green apple-like sweetness and acidity, and with the orikarami, it was a bottle suitable for new sake. There was also a word of thanks for the brand, and we were truly grateful to be able to have it! We were very thankful to have it.

Thank you for having it! Thank you very much for "Tenmei Junmai Namaishu Nakadori Zero-go This is Tenmei's Orikarami Junmai Namaishu. Aroma of pear Fresh, lush pear-like flavor and sweetness. The smooth finish is accented by a moderate acidity. Overall, it is well-balanced and very easy to drink, and if you are not careful, you will find yourself guzzling it down. Delicious~!

Thank you for having us! Thank you for the "Watanobune Tenoir Ota-no-Tani." A month ago, we purchased a bottle of this year's limited edition offering from Fuchu Homare Sake Brewery, which enjoys the subsoil water of the Mt. Tsukuba system, for the past four years, and we had it today. Incidentally, Ota-no-Tani is the name of a place where Watabune, a rice suitable for sake brewing and a parent variety of Yamada-Nishiki, grows at the foot of Mt. The aroma is soft and melon-like. The taste is full and elegant, yet clean and clear. The balance of moderate acidity and bitterness is exquisite, and this year's bottle was also one of the most flavorful.

Thank you "Ryujin Junmai Daiginjo Bizen Asahi I was attracted by the label, which has an image of Ryujin, famous for the Oze snowdrift, and Asahi, rice rice of the rice plant, and the sunrise. It has a gentle aroma of banana and melon. Overall, a soft sweetness and umami that spreads in the mouth. It was very easy to drink with a hint of lychee-like acidity and just the right amount of sharpness. I can only be thankful that such a great flavor can be produced with rice rather than sake brewing rice. The taste is great, but the price of 1,870 yen for a four-pack of Junmai Daiginjo is also very reasonable. I've come to love Ryujin!

Thank you for having it! Thank you for "Tamagawa Junmai-shu Hiyoroshi I casually picked up this sake. The toji (master brewer) is Philip Harper... I was so surprised that I bought it without thinking. When I asked the clerk at the checkout, he told me that he was the first foreign toji in Japan and had been involved in sake production for about 15 years. On the first day, I had it cold, and it had a smoky flavor that was slightly hard but also soft. It was light and dry with a nice sharpness and bitterness. On the second day, I had it slightly room temperature, and it had a nice mild grain aroma and taste, with a rich, whisky-like smoky flavor that came through to the nose. It was a good sake to drink at a BAR. I liked this sake very much~!

Thank you "Sou Yuu Hiyahoroshi" I have never had this brand of sake before in Yamagata, where there are many famous brands, but I bought it because I like Tochigi's Sou Honor, so I bought it through the Sou connection. The mouthfeel is soft and deep with a delicious flavor. The aftertaste is clean and has a good sharpness, and the sake is generally easy to drink and has no peculiarities at all! I was impressed by this bottle produced by a young couple from a small sake brewery. I was impressed by the high level of sake produced in Yamagata.

Thank you for having it! Thank you "Shinkame Junmai Sake (Hiyoroshi)" I received a bottle of this representative sake of Saitama Prefecture, which I personally enjoyed. Aroma of concentrated grain. Characteristic taste with depth and thickness. On the other hand, compared to the original Shinkame, the aging period is reduced from about two years to half a year, so it has a youthful and moderate acidity with a slight lingering bitter taste. It is also sharp and crisp. It is a bottle that is favored by a fairly core group of fans and is best served hot and with strong dishes.

It has a moist, mouth-watering flavor. After that, the umami and sweetness disappear and a pleasant sharpness is felt after a moderate acidity. It is a good quality bottle with a good balance of softness and rigidity.

Thank you for having it! Thank you for the "Juroemon 16th Generation Junmai Sururi to Pink Grapefruit". This is one of my favorite brands of sake from the Takayaki Sake Brewery at the altitude closest to the starry sky. It is rare for them to offer such a product, and I bought it because of the limited quantity and the cute label. As the label says, it has a subtle sweetness and acidity of grapefruit. The taste is light, refreshing, and fresh. On the other hand, it also has a mild, yet youthful fruit-like bitterness. It is a very easy-drinking sake, which is the result of the brewery's desire to make it easy to drink, even for those who are new to sake!

It tastes like a pear with a lot of honey. It has a moderate, gentle flavor that spreads in the mouth and gives it a moist and gentle taste. It was a bottle that quickly healed the exhaustion of the hot summer. You can see why it is so popular.
