Memorandum. Sake I drank before starting the Sake no Wa application. Ibi no Homare (Gifu Prefecture) Rice polishing ratio 40 The aftertaste was unique. I checked in to commemorate the occasion since I rarely have a chance to encounter it.

First time drinking. Junmai Daiginjo made only with locally produced Yamadanishiki. The aroma is gorgeous. The mouthfeel is exquisitely balanced with sweetness, acidity, and gasiness. It has a full-bodied taste and a lingering finish that is firm and tight. It is very tasty.

Memorandum. It was before I started using the Sake-no-Wawa app, but I took the time to take pictures and record my visit. I had made a reservation in advance and was told by a colleague that I must try Jyushiyo, so I decided in advance what kind of sake to order. Actually, I was going to order Kuronawa, but they were out of it, so I went with EXTRA, which was recommended next. It had a sweet taste, but the aftertaste was very strong. It was a delicious sake with a gaseous taste. I wish the time would come when we could drink this easily.

Polishing ratio 55 Fizzy with carbon dioxide gas. Fruity aroma. The mouthfeel is sweet and umami, and the aftertaste switches nicely, but the bitterness and alkalinity are not strong, and there is a perfect balance including the carbonation. It may not be the way to go for sake, but it is delicious in its own way. I tried various accompaniments such as steamed clams with sake, octopus and cucumber with kimchi, dried horse mackerel, pork cabbage, and cold tofu, but the combination with pork cabbage was the most delicious.

It is dry and sharp like a dry junmai, but has a lingering aftertaste that is typical of Amego no Tsuki. I can't help but drink it when I see Ame-go-Tsuki.

My companion ordered it and we had it together. The local fame is outstanding. But I didn't have a chance to drink much myself. The sweetness and fruity taste was amazing. I could understand why some people are addicted to it. The ease of encounter is important.

This is Jungin Omachi. Omachi from Okayama Prefecture Polishing ratio 50%. Compared with Natsu Jungin. The aroma is fresher and softer than that of Natsu Jungin, and I personally prefer this one.

Yamadanishiki produced in Hyogo Prefecture. The mouthfeel was not too sweet, typical of Yamadanishiki. It started off dry, but it was dry, so it came later. But it was easy to drink. The sweetness of the fillet is a good balance.

Memorandum At a sushi restaurant in Yokohama. As it was recorded in an exchange with a colleague. It had a gassy, fruit-like taste on the palate, but not too sweet, with a woody aftertaste. There was a woody aftertaste. This sake also went very well with sushi. No wonder it is so popular.

It was easy to drink, without the strange spiciness and tingling sensation that is characteristic of alcohol. It was classic and went well with sushi 🍣. I drank Katsuma after the Hanahayo and it was the exact opposite type of sake, so sake is really very deep. I was curious about it and ordered it because I couldn't find it at the Toyama-kan where I had dropped by the day before because it was not yet in stock.

Memorandum. At a sushi restaurant in Yokohama, where I was traveling. I was shocked when I drank it, so I have a memory of it, but this is a review as it was exchanged on line with a sake-loving colleague at that time. The aroma was pineapple. It tasted like pineapple and I liked it a lot. It was quite a culture shock for me and I was hooked 💦. I really want to drink it again.

Junmai sake. Polishing ratio 60 Aroma as a Japanese sake. The palate had a subtle rice sweetness and taste with just a hint of spiciness and lingering aftertaste as a sake. Classic sake. Serve with grilled sea bream to accompany the sake.

A while ago, the wife of a certain Fukuyama sake store asked me what I liked and recommended I buy it. It has a slightly sweet aroma and a pear-like mouthfeel. It is not too steep and is easy to drink and tastes great. The wife asked me to let her know what I thought of it, so I will visit Fukuyama again.

100% Yamadanishiki produced in Itoshima Shiraito Shuzo since drinking Shiraito. It is not too sweet, but the end product is not peculiar, so you can drink as much as you like. The accompaniment is a thin roll of horse mackerel nameko. It goes well with the sake.

My daughter's birthday. It had a nice aroma and a strong sweetness on the palate, but you could feel the sake in the aftertaste. I often don't like alcoholic beverages, but it was delicious and not too spicy.
