The first two bottles were at Harada 🍶. Polishing ratio 60 16% alcohol by volume 100% Yamadanishiki produced in Yamaguchi prefecture This sake is from Shunan City. When I was wondering which one to buy, Nakajimaya or Shunan City sake, I gave up and will have this one this time 😊. Fresh acidity and a hint of sweetness, with a slightly dry and dry aftertaste.

Yesterday, I had a drink with my juniors in Hiroshima City after a long absence 🍻. I was pretty busy at the beginning of the fiscal year and finally settled down. It was supposed to start at 7:00 p.m., but one of my juniors called me and asked if I wanted to have a drink first. So we went to a different restaurant than the one we had reserved 🍶. They have a lot of Yamaguchi sake, and I chose one I hadn't had yet. Polishing ratio 60 Alcohol content 15 The mouthfeel is clear and watery, with a refreshing acidity and a spiciness that comes later, making it easy to pair with meals. It is not like many sweet Yamaguchi-shu 😄.

I bought it when I stopped by Oita City on my way back from Miyazaki and Minami-Kyushu in Kagoshima because the label was so nice 🚗. Following the Sentoku I bought in Miyazaki, this one was also a collaboration sake with a liquor store, so I felt like I got something out of it😇. Polishing ratio 60 Alcohol content 16 The image on the label makes it look like a gorgeous modern type of sake, but on the contrary, the aroma is gentle, and the spiciness comes in gently like water, and then it quickly dies down 😊. It's dry but easy to drink, and before you know it, it's gone from the cup and you'll be drinking more 💦. For the entrée, I grilled the striped horse mackerel (🐟️) I bought in Oita, served it with Kagoshima satsuma-age (fried fish cake) and Miyazaki peanut tofu. The striped horse mackerel brings out the flavor and the satsuma-age brings out the sweetness. It is a sake that is easy to pair with food 🍶 as a food sake 😋.

I got this sake when I visited Miyazaki City on a trip the other day🍶. This GUUONE is a joint development of Sentoku Shuzo and Toshiro Kono Sake Brewery. I'm a sucker for limited editions and the box was nice, so I bought it✨. Polishing ratio 60 Alcohol 15 My first Miyazaki sake. The aroma is gorgeous, like a pear. The taste is rich sweet like honey but flows smoothly. A sweet type of sake😊. The entrée is bonito belly skin which is eaten in Kagoshima that was introduced on Kenmin Show a while ago 🐟️ and Satsumame. It was my first time to try bonito belly skin grilled with salt, but it was more fatty than mackerel, and it goes well with sake and rice 🍶🍚.

The last stop in Miyazaki was at the moon after the rain. It is a local Hiroshima sake 🍶, but don't hesitate 😊. Polishing ratio koji rice 60%, kake rice 65 Fresh aroma and sweetness of rice on the palate. It has a fresh aroma and sweetness of rice on the palate with umami of rice. The sharpness is excellent. ⚔️ The entrée was gari tomatomalacchio and scallops with butter (with rice). The sweetness of the garri and the acidity of the tomatoes go well together after the rain👌. Unfortunately, the restaurant didn't carry Miyazaki sake, but I made sure to get some for drinking at home ✨.

The second bottle in Miyazaki was Banshu Ikkan. This is the first time I have encountered it since the Junmai Daiginjo. It has a fresh lychee-like aroma, a moderate sweetness and mellowness, and then it finishes with a spiciness. Junmai was also delicious 😄. Polishing ratio 70%. Alcohol content 15 Once again, I feel that this aroma is the characteristic of Banshu Issen 🍶. For my entrée, I had kangaroo meat sashimi for the first time in my life and fried mehikari (a local delicacy) 🐟️. The mehikari is soft and fluffy and delicious, The mehikari was soft on the bone, edible as it was, and plump and delicious. Still, the meat sashimi was a great pairing with the Banshu Issen 😁. My wife stopped me from ordering, but I will keep coming back to Kangaroo in the future 😋.

Hi Jay & Nobby 😃. The Mexicali was delicious 😋. It was fresh because Hiroshima has more opportunities to eat small sardines, puffer fish and octopus in fried seafood. Kangaroo is also delicious here without any smell or hardness 🦘.

Moving on from Kagoshima City, we had a store drink in downtown Miyazaki City this evening 🍶. Shochu is the kingdom of Japan, but we chose sake here too. We had Chiebijin! Polishing ratio 70%. Alcohol content 15 The taste is sweet and mellow, not unlike junmai. It was paired with a char-grilled Tsumajidori chicken (a brand name bird from Saito City) and raw green peppers🐔. I ate the raw green pepper with salted kelp and mayonnaise, and it went really well with the sweetness of the chiebijin👍. Tomorrow I'm going back via Oita, so I'm planning to get some Chiebijin if I can 🤔.

The second bottle on the Kagoshima trip was a Junmai Ginjo from Tenpyo. Polishing ratio 50%. Alcohol content 15 Junmai is more fruity and refined with added richness 🍶. Junmai was delicious, but this is delicious too😊. I prefer Junmai Ginjo to Junmai for Tenpyo 😄. The entrée was yakitori🐔 and pork shabu shabu🐷. It was a good pairing as it neutralized the fat ✨. The food was so good that I honestly go to Kagoshima to eat at this restaurant💦💦🚗.

After GW and Kami finished work last night, we went to Kagoshima City 🚗. We went to a restaurant we went to 6 years ago and loved it so much that we go there every time we go to Kagoshima City. They have a pretty good selection of shochu, but we didn't cheat and of course went for sake 🍶. Polishing ratio 60 15% alcohol by volume It has a banana-like sweetness and softness. It finishes with a slight bitterness, but it is easy to drink and delicious 😊. We served it with local delicacies: kibinago sashimi, tori sashimi, and pork tonkotsu. The combination with kibinago is so delicious👍.

I procured this sake when I visited Shimane Prefecture at the beginning of April 🍶. When I saw it in Izumo City, I couldn't resist buying it because of its distinctive design 🚗. The sake rice is called En no Mai, which is Shimane Prefecture's original sake rice. The sake rice is called En-no-mai, which is an original sake rice of Shimane Prefecture. Polishing ratio 55 Alcohol content 15 Shimane K-1 yeast is used. It is a classic, dry sake with a rich flavor. We served it with beef pepper rice, which brought out the sweetness of the beef 😙.

This is a gift from a person who usually takes care of me. I get excited when I receive sake. Zuikan is a sake from Konu-cho, Miyoshi City, located in the northern part of the prefecture. I haven't had a sake from Miyoshi since Miwazakura. The sake rice is Chusei Shin Senbon, which is suitable for eating and is also the preferred rice for sake brewing in Hiroshima. This sake rice has not been used here since the local Asahi Hou. The rice is produced in Arifuku and Arifuku Castle is located in Joge-cho, famous for being the birthplace of Angie's Tanaka. Polishing ratio 60 Alcohol content is 16 The aroma is mild, and the rice flavor comes through in the mouth with a lemon-like acidity. From there, the spiciness and conventional sake-like alcohol taste 🍶. It was also good with sashimi and stir-fried hormone😊.

Earlier this month, I went to Shimane for a long time to procure sake 🚗. This time I got Gassan✨. Gassan reminds me of Gassan Tomita Castle, the residence of the San'in Warrior Lords, the Amago clan. The sake brewery and other breweries are located in a place that finally opens up after passing through the mountains from Okuidumo Town to Hirose Town. Polishing ratio 60 Alcohol content 15 The aroma is fresh, the taste is sour, then sweet, and finishes with a touch of bitterness. We enjoyed it with turban shell rice bowl and turban shell jar 😊. I got it when I went to Iwakuni City at the end of last month and returned 🚗. I haven't had it since I drank it as a New Year's sake ✨. This time it was Junmai Ginjo. One of the sake I got when I visited Iwakuni City at the end of last month 🍶. I've been drinking Daiginjo-Saito no Shizuku since the last time I was in Iwakuni. This one is a Junmai Ginjo Nama Genjyo. Polishing ratio 55%. Alcohol content 17%, a bit high. The ginjo aroma can be felt and there is a gaseous sensation in the mouth. The umami of the rice is well expressed, and it has a nice dryness that makes it crisp ✨. A delicious sake that is savored not for its acidity or sweetness, but for its umami. Not too assertive like the previous Daiginjo, simpler and more stable taste 😊. I had it with peperoncino clams and salad 🍝.

I went with my wife to Asakita-ku, Hiroshima City, to a store that makes additive-free soy sauce and sells other seasonings such as mirin and vinegar, etc. The owner is acquainted with the toji (master brewer) of Mori Sake Brewery, so we bought sake at a store that only sells sake from Tobiran. Koji rice is 20% Yamadanishiki, Kake rice is 80% Nikomaru. Polishing ratio is 60% for Koji rice and 25% for Kake rice Alcohol content 14 They cut down the edible rice to 25% Nikkomaru 😊. When the bottle is opened, there is a great bong sound, the aroma is gorgeous, and while it starts with sourness, there is a chili gas feeling, a moderate sweetness comes out, and from there it finishes with bitterness 🍶. The taste is elegant and beautiful. It's delicious with a good use of acidity 😄. My wife loves the atmosphere of the store, so I'm sure we'll be going back to buy some more Hiran 😙.

The other day, I drank Kata no Sakura outside, and this time I drank Osaka sake Akizuka at home. Polishing ratio 70%. 100% Yumachi Alcohol content 15 Association 28 yeast, a multi-acid yeast, is used. The brewery is located in Nose-machi, Osaka, a town in the mountains not unlike Osaka, where we used to stop by on our way home from Kyoto when our son was just born 🤔. The aroma is a refreshing combination of grain and citrus. When you drink it, you can taste the citrus acidity, then the rice flavor, then the acidity, and finally the acidity with a bitter taste to finish it off. Sake given to me by my boss from Yamaguchi as a souvenir from back home 🍶. Rice polishing ratio 40 Alcohol content 17%. 75% Nishitoshizuku, 25% Yamadanishiki Saito no Shizuku is Yamaguchi's sake brewing rice. It is crossed with Yamadanishiki on the paternal side. This is a non-junmai, al-soaked daiginjo. The aroma is a sweet ginjo aroma. In the mouth it has a sweet and rice flavor that is not too assertive, maybe a little light 🤔. From there, bitterness and alu-ness join in, and it finishes with a refreshing acidity. The entrée was grilled Renkotai sea bream with small sardine tempura and pork wrapped in soybean sprouts 😙. It was an easy sake to pair with food as it was not too assertive and did not interfere with the meal😃. Iwakuni city has five bridges, ganjiki, and golden-crowned black pine trees. Each of them use water from the Nishiki River system, which again amazed me with how good the water is 😲.

Katano cherry blossoms are the last of the saki-no-shu with junior staff. 店主に酸を活かした酒をリクエストして出てきたのがこちらの天穏。 精米歩合60% アルコール度数17% 島根県産佐香錦100% 香りはカルピスのような甘い香り。 口に含むと滑らかで発泡感もあり、甘旨酸のバランスが良くてスルスル呑める😊 無窮天穏でも思いましたが、なんというか乳酸を感じる味わいで旨い✨ 以前、天穏の佐香錦を使用した青ラベルを飲んだんですが全然違う味わいでビックリ😳 これはかなり自分好みの美味しいお酒でした😙

Good evening, Jay & Nobby! Sentori is also good at utilizing acidity ✨. I would definitely recommend Tenshu because it makes the best use of acidity and umami. I think the Haru no Tsuki was the best sake I had that day👍.
