It has a gentle umami taste with a nice sharpness.
The entrée consisted of miso-pickled whale🐋 from Joetsu region, spicy pickled eggplant🍆 from Nagaoka, salmon from Murakami 🐟️, and tsukudani (food boiled in soy sauce) of oysters🦪 from Sado Island.
Surprised that the plate is in Niigata and Sado Island😳.
The sake 🍶 went down so well.
Especially the combination of the whale marinated in miso and Midorikawa was awesome👍.
