I think it was after drinking Kochi's sake that I completely fell in love with sake, or rather local sake.
I loved Tosa sake so much that I used to visit Kochi every year for GW before the Corona disaster.
I ordered a total of six bottles of Tosa sake through the Tosa Sake Campaign.
The first one is a brand new to me, Aki Tora.
The aroma that comes up is a bit fruity.
Even though the rice is polished to 82%, it has a ginjo-like aroma.
When you put it in your mouth, it has a sweet taste just like the aroma.
The acidity is not so strong, but it gives a refreshing impression like citrus fruits.
The umami is not so thick. It is refreshing.
The middle part is spicy.
There is no harshness, just a crispness that does not linger.
It is a junmai-shu made from Omachi rice polished to 82%, but it is still a Tosa-shu.
It has a beautiful aroma that is not too flashy and refreshing on the palate.
It is dry and crisp.
It is a delicious sake that is exactly what you would expect from a Kochi sake.
It does not leave you feeling tired of drinking it. It is a very dangerous sake that goes down easily.
If it's like this with Omachi rice, I wonder if it would be more delicate with other sake rice.
