Sake no Wa v3 first post! Let's do a Hanayoshiki drinking comparison to commemorate the occasion. They are Miyamanishiki and Hachitan-nishiki. The aroma of Hachitan-nishiki is more gorgeous. It is plump and stronger than Miyamanishiki. Miyamanishiki has a weaker but delicate sweet aroma. Both have a pleasant sweetness on the palate, just like Hanayoshio. The Hachitan-Nishiki has a slight bitterness in the aftertaste. The bitterness or the alcohol taste is stronger. The two have the same alcohol content, but they are perceived differently. The Miyamanishiki has a longer lasting sweetness. If you drink them alone, they are perfect for each other. I think I prefer Miyamanishiki. It is nice to compare the two. I usually let it sit for a while, but since it is nigori sake, let's drink it. It's so pure white. Yes, the rice used for this sake is 66% Gohyakumangoku and 34% Yamadanishiki. I usually don't like Gohyakumangoku, so I don't buy it very often, but with Jikin, it's a different story lol. The aroma is neither too strong nor too weak. It is faintly milky. Even though it is so cloudy. The gas is tangy on the palate, and it is full-bodied and delicious! The aftertaste is a little pungent, like it comes from alcohol. If you were drunk, you probably wouldn't feel it. Hmmm, as expected of Jikin. I happened to have a bottle of this 2020 at a sake party I attended the other day, but I didn't like it so much because it tasted plump and full-bodied. So, I opened it to drink it soon! New Year's Day I opened this one because the first drink I opened tasted so bad, Usually I do my best to avoid using the word "tasteless" lol. I think it's because someone or something told me that I shouldn't use it for alcohol, which is a luxury item. But it really tasted bad. And this hana-yang-bathing, which I thought for sure, It tasted bad that day! And I am sorry. It wasn't that the alcohol tasted bad, it was my taste buds that were making me go crazy. I am so sorry. Two days have passed since then, and today is 1/3. Oh, oh, This is it, this is it. The sweetness spreads in the mouth with a pleasant taste, and a rich umami flavor. And I feel a slight bitterness in the aftertaste. I don't know what flavor it has, but I instinctively like it. But on New Year's Day, it tasted completely different. I learned another lesson. I learned that what you eat and drink together can change the taste so much. I could deeply feel that I am learning throughout my life. I have learned that the sake that I had dismissed as "not my favorite" is now the cause of my own problems. I thought that this might have been the reason for the sake I had dismissed as "not my favorite! It was the beginning of this year that made me want to try different kinds of alcohol in different situations.

Happy New Year! I thought it would be nice to have a happy New Year's drink, so I decided to have this one. I think I drank this the year before last. It looks like New Year's lol It is a Hachitan-Nishiki. It has a sweet aroma that I really like. It has a nice sweetness and a nice mouthfeel. And the gold dust is delicious! (Big lie). Shi-shi-shi... Second sip Tasteless! Bitter! What is this? Why? It's totally different from before! It's no good! I can't drink this on New Year's. I want something sweet. Oh yeah, there's a Hana-yang-yoku. ...... Mmm, it smells so good! This is it! ...Bitter! Mazu! No way! There's no way the hana-yori isn't sweet! It was then that I realized. Between the first and second sips of Eiko Fuji, I ate a "soft dried tomato" from the section. They were so sweet and delicious. I mean, I thought they were apricots until I saw the name of the product. This is probably the reason. So I gave up drinking sake on New Year's Day. And today! The second day! It's totally different from yesterday! There is a lot of lingering bitterness. But this is the bitterness of Hachitan-Nishiki, right? And there's not much richness either. Well, well, it's a happy looking sake... right?

Yesterday's was supposed to be the last one, but there was one more day in 2023 lol. Kouei Chrysanthemum, the series I had been sleeping on. This might be the first time I drank this. Kame-no-o 100 par. Aroma with lactic acidity. I don't really go well with Kame-no-o, but this one is not bad (cheeky). I decided on Kimi for my last drink of the year! Thank you in 2023. This is the third year I have been drinking this brand, and this is the first time I have learned about it. This is the second bottle of Hiran. The label looks like wine or champagne. The koji rice is Yamadanishiki, and the kake rice is Nikkomaru. Nikomaru? It looks like edible rice. Let's drink it anyway. The aroma is weak and milky. When you swallow it, you will feel gas! And sourness! It is refreshing. On the second day, the gasiness weakens a little, The second day, the gassiness becomes a little weaker, and the bitterness from the sourness starts to kill it. I think I like it better if I let it sit a little longer, but it went on so smoothly that I ended up drinking it. I wrote "bitterness" but it is not a bad bitterness. I am not sure if I would buy it again because of the price. It might be good for some events. Sake is cheap, though.

I had a good one last time and wanted to try another bottle. Ishizuchi. It was a little expensive, but I bought it! The bottle was pink. I thought the sake was pink too, but it was clear. This is the first time I have tasted a sake rice called Shizuku Ehime. It has a sweet aroma that is neither strong nor weak. It is sweet to the palate. But something is missing. Maybe I chilled it too much. The label said "cold sake or room temperature". It was chilled at -5 degrees Celsius! I think the taste became thicker as the temperature went up. Sake is a very deep drink! And I realized it too late lol.

All of them are Junmai (except for the pink one, which is Daiginjo), and all of them are Orikarami unfiltered Nama sake. Let's get started right away. There are four of them. ▪️ Midori: Adapt 2023 Yasu-Kogane 50 The aroma is a little gusty. It is gassy, sweet with a bit of sourness, and rather refreshing. ▪️ pink: New Sensation 2023 Koshihikari 90 Koshihikari! Strong aroma with a sense of rice. Mellow and sweet, not as ricey as the aroma. The taste is hard to believe that it is made with 90% polished rice. This is amazing. ▪️ light blue: Blue Sapphire 2023 Yamadanishiki 50/Ihyakumangoku 50 The sweet banana-like aroma is strong. The sweetness spreads in the mouth with a weak gasiness. I thought I saw a POP sign at a liquor store that read, "A brewery made by five people. When I hear that it is a brewery with a small number of brewers, I tend to buy it. The label is also stylish. The label said, "Be careful not to open the bottle," but it was fine because I chilled it to a crisp. The first glass I drank without letting it get mixed up, even though it had some oriole in it. I didn't consciously do so, I just didn't notice it. So, I decided to make a proper oriole, Aroma with lactic acidity. It is not strong. As if to warn that the bottle is about to be opened, there is a gaseous feeling. Then, acidity and milky richness spread. It is a refreshing type. It is not my favorite, but it is good. The low alcohol content makes it easy to drink. I drank it in small sips for about a month after opening the bottle, but the gassy feeling remained until the end. It's great. For me, I prefer the weakened gassy feeling after a month. I can taste the flavor. I would like to try other breweries.

I dare not buy white, only red. I used to dislike ogara-mi, but I have come to love it. It is 100% Omachi. The aroma is a little bit nose-piercing, but it is generally sweet. I think I had drunk it before at an izakaya that sold local sake from Ehime, but I don't remember. The label was so beautiful that I bought the label instead of buying the bottle by the bottle jacket. I don't often win a jacket purchase, But this one is a winner, It's a winner. In my opinion. This is good. Sweet aroma. Good mouthfeel. Good spread in the mouth. Good aftertaste. It is sweet. There was a label on the bottle that said it was a food sake, but it is a sake that can be enjoyed on its own. It's nice. I want to try other sakes as well. By the way, the first day was my favorite. It is not labeled as "Nama-shu," though. Now I'm drinking the last one after about two weeks, and it still doesn't have the same impact as the first day.
