We had it at Robata Toudai in Mizonokuchi. The sake is made from "Koshitanrei," Niigata's best rice for sake brewing, Makiki-zan subsoil water is used for this sake. It has a soft, umami flavor with a slightly crisp aftertaste. It is not too assertive, so it is easy to match with food.

I had done some preliminary research a few days earlier about a buckwheat noodle restaurant owned by the Northwest Sake Brewery and ordered this sake because it was served at a local buckwheat noodle restaurant! I did not recognize the aroma, but the sweetness spread in the mouth and the acidity was just right, and the gas quickly dissipated in the mouth, making the sake easy to drink.

Reissue 2025 version of the first collaboration with United Arrows in 2020. The gas that comes in a swoosh, the refreshing sweetness, and the lightness, I guess "silky" is the right word to describe it.
