Drinking Chiba sake in the lounge at Narita. I forgot to check in here. It has a sour taste and a hint of gas. It has a refreshing taste. The rice polishing ratio is 80%, but it tastes beautiful and clean without any cloying taste. Polishing ratio: 80 Rice used: Fusakogane, Gohyakumangoku Alcohol content: 15 Acidity: 2.2 Sake meter: +6.7

Tonight, I'm looking forward to the fun before my business trip to India. Sake! First, I drank the top clear liquid without mixing it, and found it to be moderately mellow! The taste of rice is very rich. The alcohol is also quite strong. You can also feel the gasiness. After drinking half of it, I stirred it lightly. Wow, it is nigori sake! The acidity and sweetness increase, and the umami taste can be felt. Double the enjoyment! This is the first time I drank hiragana, Takachiyo. It is delicious!

I bought this sake from Abe Sake Brewery at Nishikiya Sake Shop near Niigata Station during my trip to Niigata on November 3! They didn't sell the Hiragana "Abe" sake, but after listening to the owner's story and seeing my friend buying it, I bought it! First, I took a sip! Wow! How gorgeous! The label looks like an ordinary sake, but it is a modern sake. As one would expect from Abe Sake Brewery! The pineapple-like aroma spread gently and there was a slight gassy feeling. The aroma was like a little dance with a little bounce, and I thought it was the right choice to put it in a wine glass. When you put your nose in the glass, you can smell it well and enjoy it. After a little time, the aroma of rice is stronger and has a sake-like feel. Delicious! This is one of the "field specific projects" that Abe Sake Brewery is working on! The basic concept common to the series is as follows Rice: Kashiwazaki rice Sake mother: Kimoto brewing without additive yeast With these common conditions, the characteristics of each field are expressed in the taste. Other types include "Akada," "Kaminawa-shinden," and "Noda. I have seen Noda and Akada in "Sake-no-wa" posts, but I have not seen this one.

This is Junmai Daiginjo made in wooden vats! To be honest, I couldn't feel such a clear difference. I guess my tongue got stupid after drinking it first. It just had a nice sharpness and lightness with a slightly stronger sweetness.

Next, we will compare drinks from Imadaiji Shuzo, which also visited the brewery. First, the regular Junmai Daiginjo. It is rather old-fashioned, dry and light. After being crisp, it quickly cools down. It is delicious!

Next, it is aged in a snow chamber for three years. We were also able to visit the site where the entire tank is stored. It was amazing that a lot of snow remains in the snow chamber without melting even after a year! The taste is more mellow! I wondered if I could tell the difference. I was skeptical, but no, the aroma was better and the rice was a bit mellower. There was also a sweetness from the rice, further improving the balance! I then checked blind and could taste the difference.

Tonight I am drinking sake that I bought in Niigata with my father, mother, and second son! We bought these 300ml bottles to compare after our visit to the Hakkai Sake Brewery. We compared a Junmai Daiginjo and a Junmai Daiginjo that has also been stored in a snow cellar for three years. First, the regular Junmai Daiginjo. Steady deliciousness, light and dry. It is light and dry, with a crisp taste and a nice sharpness. The taste is also exceptional, perhaps because we toured the brewery.

Drinks with company members at a soba (buckwheat noodle) izakaya in Shinbashi! I've ordered the all-you-can-drink course, so this is all I can do. This one is also very refreshing overall. It is a dry sake with a nice sharp taste.

Sixth type. The aroma is broad and crisp. It is more like a junmai ginjo than a junmai. Goes well with yakitori. While the aroma is broad, it is somewhat reserved and well-balanced, making it easy to pair with meals. Ingredients: Koji: Yamadanishiki, Kake: Gohyakumangoku Rice polishing ratio : 55 Sake meter : +6 Alcohol content : 16

Good morning, Bose Kota! Hououmida's Tsurugi is delicious 😋. I also had it with yakitori (grilled chicken), and I think it goes perfectly with it 🤤.

Drinking at a yakitori restaurant in Shinbashi! First of all, the first kind. I have had Nabeshima before, a pure Daiginjo, but this is completely different from that. This one is fresh and invigorating. The acidity is a bit strong, but after that it has a nice sharpness. This Nabeshima is also delicious.

Back at home, I opened a bottle of fresh sake, still delicious. It's alive, alive, alive. It tastes like it is changing every second. It was a quick overnight tour of Niigata's sake breweries. The distance traveled was about 730 km. Sake breweries visited Imadaiji Sake Brewery Hakkai Sake Brewery Aoki Sake Brewery Sake Breweries Visited: Niigata Hasegawa-ya Niigata Hasegawa-ya Nishikiya Sake Brewery Ponshukan Dinner place:. Minosuke Furumachi restaurant. We purchased 16 bottles of sake including small bottles. We will check in after drinking.

After finishing the 8th kind of drink and leaving the restaurant, I ended up stopping by a ramen store. There, I drank this! As with all nama-shu, this one has a pleasant freshness and the unique aroma of nama-shu. I drank a lot that day. Actually, I was given a tour of the Imadaiji Sake Brewery that day, but I did not drink any sake from the Imadaiji Sake Brewery. I'm buying it, so I'll report on it later.

Eighth type. Melon-like aroma. A little fruity. Not like Niigata sake. The overall impression is gentle, but is that because I drank a lot of dry sake before and my tongue became stupid?

The seventh kind. Asahiyama is a brand of Asahi Shuzo and has a longer history than Kubota, but Kubota is more famous throughout Japan now. It has a rich rice flavor and is very dry. It is a very different sake from Kubota.

This is the sixth type of Kirinzan. I drank Kirinzan at Kongoan in Jimbocho, Tokyo, before, but that one was traditional dry, known as "Denkara," while this one is super dry. This one is much spicier. The sharpness is also excellent. This is sake! It's like "This is sake!
