This is the first one in this series in many years.
I don't remember much about it, although my own comments from last time indicate that I didn't like it very much.
I am half anxious and half hopeful because this year's taste is quite different.
The color is almost colorless. The aroma is not flashy either. It has the aroma of so-called "junmai" (pure rice).
As expected, it does not have the rich sweetness that I remember from before, but I first felt a tingling sensation on the tip of my tongue. Then, sweetness and sourness in the middle. In the second half, there is a bitter taste followed by a pungent taste.
The sweetness and pungency are strong, but they are balanced by the acidity.
I had been reluctant to buy Kame-no-o because I did not like it very much, but I think this one is good.
Well, I think the main reason is that my tastes have changed.
As for what to pair it with, I think it should be something well-seasoned and strong.
