I'm glad I was able to GET it without an appointment. The one I squeezed in the morning, on the same day. In a way, it is a very luxurious product. Delicious. It's gassy and makes you think it's fruity, but not sweet. It has a nice Kochi feeling to it and is very crisp and clean. I could drink it all the time. LOL!

We finally decide to paint the local area. This is the one I chose. Lactobacillus-added yeast? I don't know what it is, but the maniacal feeling is intriguing. It seems to be aged for 2 years in the brewery. I'm looking forward to it. First, let it cool down. At first, I thought it was hard to drink. But it has a slight lactic acidity, and as you drink it, it goes down without any discomfort. Warm it up a little. When the temperature is high, the corners start to come out, but as the temperature gradually drops, it becomes easy to drink at once, Serve with fried chicken, jako-ten (fish ball tempura) and chilled tofu. Versatile. Good for local people, too!

When I look at sake from Ishikawa Prefecture, I get the impression that many of them have a heavy flavor. I was attracted to the fact that it is made with rice that is uniquely suited to Ishikawa Prefecture, so I bought it. I want to try it both cold and hot. First, I tried it cold, and I really liked it. The umami flavor is amazing! I like this type too much. I can't wait to try it heated.

Hi-iru sake, raw yeast yeast starter, Izumo improved Omachi 25BY A New Year's gift from a liquor store. I was curious about this sake that I found in the back of the refrigerator of a liquor store that matures its own sake. I went to the cashier to buy it with courage. Sake shop: It's quite old, is it OK? Me: That's fine. I'm just curious to try it. Sake shop: Then I'll give you 1000 yen for it. Me: Are you sure? I'm rather sorry. Sakeya: I don't know how it's aged, but we've been experimenting with it. Try it. I'm excited. Open the bottle! First, let's drink it as it is. Does it taste a bit bland? Let's warm it up. As you drink it, you will gradually get used to it. It has a lot of character. I like it.

I bought Tamagawa again. This description intrigues me again. When I opened the bottle, I heard a popping sound. It was gassy and slightly effervescent. Fresh, yet robust. This is also good.

Oops, his wife had purchased it for me. It is a famous sake from Fukuoka with a reputation for warming sake. She knows exactly what I like. I'm looking forward to it. It's a versatile all-around food sake that doesn't interfere with any snacks. It's a pleasant sensation when it's warmed up to human body temperature.

Sake made in 2020. The brewery is aging it in house, so I'm looking forward to seeing how it turns out. There are no weird corners at all, and it tastes great cold or warmed. It has a little bit of a dryness to it when cold, but that's fine with me. When heated, the dryness is gone and it's just umami. I think I prefer it cold.

My favorite Kamerei from Hiroshima. It is 92% polished rice and full of flavor. I'll tell you how it tastes later. It is still delicious. Even though it is 92% polished rice, it is clear and free of any cloying taste. There is no sweetness, and it has a sharpness. The umami taste that comes afterward is perfect with strong-flavored snacks. One of my personal favorite breweries, and I am very satisfied.

Part 2. The old wine I was looking for. There was another 7 years old one, but I chose this one. Another type of sake. The aftertaste is refreshing, similar to Gotenzakura. It has a rich umami flavor and enough depth. And yet, it is crisp and clean. Oh, I want to try a longer aged one next time I go there.

We walked around Tokushima Prefecture by bicycle to visit two sake breweries. At Seitama Sake Brewery, there was no sake available, so we could not buy any. I was able to buy it here. It is a sake made from Tokushima yeast. This was a surprise. It has a modern fruity taste. And yet, there is no dullness at all. Everything disappears the moment you finish it. It's extremely tasty. You can drink it all the time.

Research of cold grated sake. We chose a sake brewery with the image of a sake brewery where the quality of the sake comes out after a long time in the bottle. We decided to use heated sake as the base for the coming season. I have nothing to say about it, it's so stable. I want to drink it as much as I can, forever. A great introduction to heated sake.

Purchased in Numazu, Shizuoka. It has no particular major characteristics, but it comes across as a natural. It is an excellent food sake. I think this is the kind of sake that will eventually settle down. Next time, I'll try heating it up. As I expected, it is mild and nice even when heated.

To Shizuoka, Part 2. According to a local liquor store, it is treated as a liqueur, but it is a sake. I wonder what it is like. It is different from sake. It has a kind of wasabi taste, but it is sweet. It doesn't make you drunk in a strange way, but it is a sake to make memories. I didn't drink it in Shizuoka, but brought it home and drank it, so the familiarity of the sake has faded. It would have been better if I had paired it with Shizuoka snacks in Shizuoka. Shizuoka is also famous for strawberries. This strawberry cider has no alcohol in it.

To Shizuoka. I went to a local liquor store to pick out a nightcap. I don't expect much from this type of sake, but it is honestly delicious. It is easy to drink, has no peculiarities, and goes in easily. I drank it with some sweets as an extra drink and thought it was very well balanced.
