Yuki no Bijin Exhibition Specifications Junmai Daiginjo From Yamakawa dungeon in Gifu They brought another Bijin, this time an exhibition sake! It is a blend of No.6 yeast and Ogawa yeast, with Misato Nishiki for koji and Sakekomachi for kakemai. The nose is high with a slightly pear-like aroma on the rise. The attack is mild. The nose has a light pear-like sweetness with low acidity, and a gentle richness spreads in the mid-palate. Overall, there is a sense of transparency. The aroma lingers in the aftertaste and is pleasant. The aroma is similar to that of a certain brewery called No. 6 yeast, but it is not a sake brewer's yeast and the Ogawa yeast makes it less acidic. The specs seem to have changed a lot from last year's entry, but I like this sake* and hope it wins the gold medal.

Saku no Hana Junmai Daiginjo Fukuro Shiboribori Kinmonishiki Orikagarami From Yamakawa dungeon in Gifu Slightly young melon-like aroma. The attack is slightly effervescent and creamy. Gentle with careful sweetness due to the lees, and juicy with good acidity. Full-bodied due to the lees, but also a bit sweet. Although the wine is on lees, it seems to end up being rather refreshing, but the bitterness lingers in the aftertaste like an accent. This is the first time I have tasted Sakunohana, and I have never tasted anything brewed with Kinmon-nishiki, so I have little to compare it with, so I can't say anything about it.

Futato Yamadanishiki 65 Nigori raw sake A bottle recommended by a friend of mine who happened to meet me in the Oyama Dungeon*. Be careful of spills, there's even a video attached for your reference! I wanted to open it quickly anyway, so I finally thought I could just catch all the spills in the glass. I finally decided to experiment by cooling it down to -5℃. I put it in the pan, stabbed it with an ice pick, and pulled it right out! Glass set! Huh? It only spills a little. I was expecting it to go all the way to the ceiling. I didn't measure the time, but it opened soberly in less than a minute. The taste is slightly dry and fruity. The lees sweetness is strong, but the carbonation is also strong, so it feels light for its alcohol content. But the acidity is weak, so the impression is different from Senkou Snowball, which I like. This rabbit is interesting, like a strong rice soda*.

I've never had a sake called Tenryo from Gifu Gero City, but I bought it because of the story of using sake rice from Gero City* Yamadanishiki and Hidahomare made there! Also, Riedel glasses are stylish and a good combination*.  Tenryo Junmai Ginjo Unfiltered Nama Sake Hidahomare Tenryo Junmai Ginjo Unfiltered Nama-Nishiki Next is the Yamadanishiki version! The aroma is fruity, melon-like. The attack is mild. The attack is mild, with a refreshing sweetness from the rice, and a bit dry. Good sharpness, clear and clean. The Yamadanishiki version is beautiful and delicious, but I prefer the Hidahomare version because I like it a little more flashy*. Riedel glasses are good*.

Hints are also muscat-like and full-bodied. The acidity is moderate, and there is not much bitterness. Mild sweet and sour with a modern atmosphere. I prefer the Hidahomare version to the Yamadanishiki version. The glass is thin and the mouth is narrow, so the aroma stands out and the glass is good*.

Fusashimaya Usagi Shin GOLD Junmai Daiginjyo Nakakumi Nama-nihanzake ORIGARUMI A bottle from Yamakawa Dungeon in Gifu* Fusashimaya is also a Gifu brewery. I was curious about this bottle because it is a bottle of second fermentation in the bottle*. When the bottle was opened, the pressure seemed to be a little high, but there was no spillage. After pouring it into a glass, I could see the lees shaking and recognized it as a bit of a leesiness. From the supernatant The nose is a mixture of rice and green apple. The attack is slightly effervescent and pleasant. The nose is quite sweet, with a moderate rice sweetness, not too much sourness or bitterness, and little miscellaneous taste. The aftertaste is also lightly sweet. The sweetness is further emphasized by the leesiness. Kitaro Jungin Local sightseeing* in Chofu There is a Kitaro teahouse around Jindaiji Temple, which is related to Shigeru Mizuki, where you can find miso dengaku with lacquered walls, eye ball buns, and various other goods*. This time, I had a one-cup Kitaro version. The original manufacturer is Chiyomusubi. I opened it immediately after buying it and tried to drink it, but my wife stopped me from drinking it while I was walking. I opened it at home. I didn't expect it because it was a one-cup drink, but it was surprisingly melon-like, not bitter, but it tasted a little weak. As it warms up, the alcohol taste becomes stronger, like a bewitching sensation. It might be good if you lick the candy while you drink it. Now I'm going to try the rat man version lol.

Sawanoi Normal Sake Jindaiji Temple from Jindai Botanical Garden*. I often went to Jindaiji Temple, a golden tourist spot in Chofu, to eat soba noodles, but I had never been to the botanical garden, so I took the kids there*. Soba noodles and sake at Matsuba Tea House around Jindaiji for lunch*. I knew Sawanoi was a brewery in Tokyo, but I had never had much of it. When heated up, it has a noticeable alcohol taste, but it's not harsh and is rather delicious with a sweet, rice-like flavor*. And I was very satisfied because it goes well with the aroma of jyuwari soba noodles and black edamame (green soybeans)*. There are many good soba restaurants in Jindaiji, and it is fun to compare them*.

Shinsei No.6 S type Direct path The spoils of the lottery for the Yamakawa dungeon in Gifu*. I found out about it the other day in relation to Ukraine support. I am happy because this is my first purchase of S direct path*. It's a flowery cold one. The start is still sweet acidity of lactic acidity and light white peach feeling from the sake yeast. The attack is fresh and slightly effervescent*. The nose has white peach flavor, light acidity of lactic acid and beautiful sweetness*. The aftertaste is also a lingering light sweetness, and it's delicious*. The S is clearer, sweeter and more aromatic than the R type from the other day. S is less clear than the Gaku Mizuno type from the other day, and has a complex fruity impression. It is interesting that Gaku Mizuno had depth with transparency*. S is delicious*. A closer look at the tag shows that it was a mixture of Sake Komachi, Miyamanishiki, and Misanishiki*.

Jikin Junmai Ginjo Sake Mirai Unfiltered Nama Yes, it's finally GW! But due to the nature of my work, there are no national holidays, so it is a normal holiday. Everyone at Sakenowa is going somewhere and opening good sake, so I'm going to open one too, out of frustration*. Encounter at Akimoto Dungeon in Komae*. Pale pineapple and pear aroma on the nose. The attack is fresh and very slightly effervescent. The nose is mild, with a light pineapple-like fruity and sweetness. Delicious*. The aftertaste is very pleasant*, with sourness and bitterness coming to an end and the fruity aroma lingering. I tasted the unfiltered raw Hachitan-Nishiki the other day, but I got the impression that the Hachitan-Nishiki had a stronger pineapple and bitter taste. Sake Mirai is milder and has a stronger sweetness. I think it would go well with dishes that are a little stronger in flavor*.

god of death I went to Sugiura Dungeon at Yotsugi Station on the Keisei Line with an ally and encountered a god. Yes, a god of death*. Apparently, this is the liquor store that planned this Shinigami. The name seems to come from the rakugo story "Shinigami". Since I also like Rakugo, I was afraid to buy it*. First, let's start with the Hanayakie. The color was surprisingly amber. The aroma is ripe like Shaoxing sake and savory like rice. The attack is heavy and hits the tongue. The nose is still ripe Shaoxing wine, with the smell of rice and caramel. The sweetness and richness of the Shaoxing wine spreads more than the acidity*, but it is lighter than the color suggests. It is heavy, but not too heavy. It's like mirin*. The next day, I thought it would be better to warm it up, so I warmed it up to about 45 degrees Celsius, and naturally the sweetness and richness was so strong that I felt like I was going to be scratched on the neck with a sickle*. This is a strong impact! I am very excited because it has been a while since I tasted Mature Sake. I was prepared to think that I might like eel with Mature sake, but I knew it would go well with the richness of the sake*. I was reminded of the "yanagakage" from the rakugo story "Seina". It is a cool drink made from mirin chilled with well water and mixed with shochu in summer, so I would like to chill shinshin and mix it with shochu.

I've had this one several times at home and at the restaurant, so maybe that's part of the reason I like it better.
