They brought another Bijin, this time an exhibition sake!
It is a blend of No.6 yeast and Ogawa yeast, with Misato Nishiki for koji and Sakekomachi for kakemai.
The nose is high with a slightly pear-like aroma on the rise.
The attack is mild.
The nose has a light pear-like sweetness with low acidity, and a gentle richness spreads in the mid-palate. Overall, there is a sense of transparency. The aroma lingers in the aftertaste and is pleasant.
The aroma is similar to that of a certain brewery called No. 6 yeast, but it is not a sake brewer's yeast and the Ogawa yeast makes it less acidic. The specs seem to have changed a lot from last year's entry, but I like this sake* and hope it wins the gold medal.
