It is umami, but a little tangy, with a lingering aftertaste and a deep flavor all the way through. With a pork cutlet sandwich that I brought home from the take-out menu at an izakaya! (^^)

. Hinoya Hida Hidahomare 45% Shizuku Shibori Hinoya after a long time. I went to Hida Takayama. I stocked up at a liquor store in the old town there. It has the punchiness of the nama-shu as it is, but also the mellowness of the once-hot sake. The mellow aroma coming through the nose is also enjoyable, making it an enjoyable sake many times over. It soaks into my tired body after a series of meetings from morning to night.

. Miyoshi Sake Brewery's Sanjo at ‼️ A gem that I ordered. The three girls are all over the place in my mouth. Is it the girl who flutters in your mouth, the fruity girl, or the girl who attacks you with a lingering taste? The label seems to have been drawn by Keiko Gogetsujo, a popular illustrator from Yamaguchi, and the three girls, personifying umami, dry, and sweet, look like they are having fun, which makes me feel excited when I drink it! The label is preserved! I have been a fan since I drank it at Fuguya last year and finally found it after a lot of searching. Ippo Noito Somen is my favorite.

. Hakurei Shuzo: Freshly squeezed new sake! Very refreshing and crisp, with a soft and gorgeous aftertaste that lingers on afterwards. I drank it with gusto. I want to buy it again. I bought some nozawana in Nagano for the occasion.

. Yokobue Yubing Tsubiri Junmai Ginjyo Nama-genshu! I couldn't read the kanji, but it is said to be the chirping of a Japanese bush warbler. My wife could read this kanji and I thought she was a genius. 💦. More than that, I was surprised at how good the sake tasted. ‼️ It tastes so good. The moment you put it in your mouth, it is fruity like a grape! It's a very refreshing sake. The umami flavor lingers in the mouth afterwards, leaving a lingering, shwashy feeling in the back of the mouth. I almost exclaimed, "What a well-balanced umakuchi sake!" I almost exclaimed. Please try it if you have a chance.

. Imanishiki Special Junmai Sake Nakagawa Village Tamako Nama Sake! It had a punchy yet fruity and refreshing aftertaste, and I drank two gou of it in no time. Today I bought and served it with boiled hamo (hamo in season). From the label on the back. ↓↓↓↓↓ Limited edition "Otamasha" using Miyamanishiki produced in Nakagawa Village, Kamiina County. The Nakagawa Village Tamako was created as a younger sibling of the Nakagawa Village Otamajako, using Miyamanishiki produced in Nakagawa Village, Kamiina County. Enjoy the difference in the characteristics of the rice fields and the core strength and mellow, drinkable sake quality that is as strong as Otamajako, even though it is the younger sibling.

. Hoka (Houka) Suwano-no-Nama Ikotsuboto. It is made with rice from Nagano Prefecture, and since it is a draft sake, its flavor and miscellaneous tastes are quite robust. And yet it has a refreshing throat feel! It is 17 degrees Celsius, so half a cup is enough for me to get a little drunk. I will enjoy it slowly. With fresh buckwheat noodles we bought in Azumino!

. Mikotsuru Junmai Ginjyo Kinmon Nishiki Unfiltered raw sake! It's hot again today. Well, here it is, which arrived as soon as we started our Bon vacation. It's really delicious. ‼️ It's close to Kaze no Mori in taste. It has the fruity mellowness and tanginess of the raw sake, a touch of acidity, and a lingering aftertaste and punch to the end. It is my favorite deliciousness. A perfect 5 points 💯! Would buy again. I bought two more bottles of this brand and will report back. For entrée, I paired it with onion and cheese bread from a nearby bakery and Camembert cheese from Azumino Winery! They go perfectly with each other!

. . Hydrangea freshly packed in Daishinshu! I went to the brewery! It is very tasty with a gentle but fruity taste. You can drink it easily in the hot summer! It is only available at the storefront of this brewery. I paired it with chopped kelp wasabi that I bought at the nearby Daio Wasabi Farm! It is a perfect match! The titanium dice are used to keep the wasabi cool!

. Maihime's Suiro [wateryellow]! A mini can of Junmai Ginjo-Ginjo-Hara Sake. I bought many others, but this is the one I had today. It was very elegant, refreshing and easy to drink. , , , and ,, I had (secretly) a bottle of Jyushiyo Sake Mirai Namaishu. I knew it was too well-balanced. It has a very nice taste, refreshing on the palate, with a refreshing feeling in the mouth, and a strong lingering aftertaste. Just a sip, but it's a happy night~!

. This is an unfiltered, unpasteurized sake from Shotoku Shuzo. Already, it really is a delicious sake with a strong flavor and a lingering aftertaste that lingers forever. The Gion Festival is over, but summer in Kyoto is still too hot. This is a sake to enjoy the lingering aftertaste on such nights. As one would expect from Shotoku, I had it with salted sea bream fish! (2nd glass)

. Junmai Daiginjo from Popularity Ichi! Delicious in a glass of wine! This sake has won the highest gold medal at the Sake Awards 2023. It has a firm mouthfeel and is very easy to drink, with a strong taste of miscellaneous flavors in the mouth, but it goes down the throat very smoothly. I drank it chilled today, but I think it will taste different if I drink it a little lukewarm in a wine glass. I drank 2 gos of wine, so I will drink the rest with a glass of wine. It is the season, isn't it?
