Koji rice: 21% Gohyakumangoku, Kake rice: 72% Yume-no-ka, 7% Himenomochi Yeast used: Utsukushima Dream Yeast, Polishing ratio 60%. Four-stage brewing with glutinous rice. 15% alcohol by volume. This sake is made with all Aizu ingredients. This is the first sake I received. It was my first time to drink it. Open the package. The banana-melon type ginjo aroma produced by the Utsukushima Dream Yeast stands quietly. In the mouth, there is a clear sweetness and a mild umami. The moderate acidity refreshes the palate. The bitterness is only slightly present. There is no alcohol or miscellaneous taste. I wonder if it is the result of the 4-step brewing of glutinous rice. It is a well-balanced food sake with a mild aroma, a little sweetness, and lightness. You can eat and drink it calmly without sharpness. It's delicious. Happy.

Rice used: Yume-no-ka Rice polishing ratio 55 Alcohol content 16%. Drinking alone at a sushi bar while walking. The snacks are boiled Kinmede and sushi😄. I found Hirotogawa in the refrigerator! I ordered it right away. This is the first time to drink Hirotogawa, Special Junmai. It was unopened. The aroma in the glass is mild but fruity. When you put it in your mouth, elegant and soft sweetness and umami spread and flow into your throat with beautiful acidity. The sharpness is also good. It is not gorgeous, but the balance is excellent. The sweetness, umami, and acidity are all elegant and well balanced. It is an excellent sake for a meal. It also stands out with the side dishes. Ingredients 1) Peaches 2) Japanese sake "Hououmita" 3) Brewing alcohol 4) Sugar 5-6% alcohol by volume I wasn't sure if I should post this on Sake no Wa, but if Hououmita is included in the ingredients, I guess it's okay. When I was drinking Hououmita Junmai Ginjoshu Unfiltered Raw and Akaban Junmai Daiginjo, I wanted to drink this one that I had in the fridge, so I put 3 bottles together and drank them 😄. It's a sweet, nougat, sake in the distance. It's like a cocktail made by crushing a whole peach compote and mixing it with sake. The fruitiness is amazing. If you like sweet things, you can't resist! It reminds me of the shock I felt when I first drank nectar as a child. However, I can't drink any other Hououmita anymore (although I've emptied my red bottle) 😅. I can't drink any other Hououmita (even though the Akaban is now empty)😅, my tongue can't taste the sweetness of the delicate sake when I drink it😅. However, it was a lot of fun and I enjoyed it. Delicious. Happy.

Hououmita Akaban Junmai Daiginjo unfiltered Honsei Rice used: Hyogo Yamada Nishiki Polishing ratio 40%😆. Alcohol content 16-17%. Hououmita is always reliable. And it has great specs! The price is very reasonable for what it is. It is said that this is a special sake made by filling in the origarashi portion of the nakatori. We compared it with the Junmai Ginjo-shu unfiltered raw that we got on New Year's Day. I was already happy when I put the two bottles together. Luxury 😄. Opening the package. The aroma is subdued, with a hint of muscat. In the mouth, the elegant acidity and umami support the whole taste, and the fruity sweetness wraps the tongue comfortably. The bitterness, astringency, and dryness make for a refreshing finish. It has a good balance. The aroma, sweetness, and flavor stand out better at room temperature. I prefer it with a little lees to make it mellow. It is also good on its own. It's also a great sake to accompany a meal. It is a light sake that can be enjoyed and savored. It is delicious. Happy.

I've been interested in this sake since I saw your comments on Sake no Wa. It was purchased at a liquor store called Aburaya-san on my way to work. Opening the package. It has a gorgeous ginjo aroma and a sweet smell like pineapple🍍. When you put it in your mouth, the moist sweetness spreads, but the sourness also overlaps well, so it is not too sweet. Bitterness is weak. The sweet and sour aftertaste is enjoyable. Easy to understand and easy to drink sake. It can be enjoyed with the family. Delicious. Happy.

I first had a bottle of Yokoyama Silver at a sushi restaurant, and I thought it was delicious and to my liking, but I couldn't find it at the sake shops I usually go to in Nagoya, such as Shusendo and Yoshida-ya. I found it at Chita Shigeru's when I was working 😅. How it was purchased. A sake brewery in Iki City, Nagasaki Prefecture, Shigeya Shuzo. They are famous for shochu. In recent years, they have revived as a sake brewery. We drink it with such a story. The alcohol content is 16 degrees. Open the package. It is not a gorgeous aroma that spreads quickly, but you can enjoy the fruity Muscat type Ginjo aroma. It also has a bit of a peculiar aroma. It's good😄. When you put it in your mouth, the juicy sweetness and flavor that matches the aroma spreads. It has a light bitterness and a tingling sensation. There is a little more than sweet, sour and bitter. I don't have the vocabulary to describe what it tastes like😅. But it's fun too😄. I'll have to try some of the other Yokoyama Goju. I'll have to stop by Chita Shigeru. It's delicious. Happy.

The 2nd Arai that I opened on New Year's Day Classic Senkou Mujitsu Rice used: Tochigi Prefecture Domaine Sakura Yamadanishiki Rice polishing ratio: Koji 50%, Kake 60%. Alcohol content 15 degrees The aroma is fruity with a mild muscat flavor. In the mouth, the sweetness and umami of the rice spreads pleasantly with a clean acidity. It does not have a strong feeling, but it has a fine balance. It is not flashy or gorgeous, but the dignified acidity that supports the whole is beautiful. It goes very well with Japanese food for the New Year. Delicious. Happy.

Happy New Year! The sake which looks like a happy new year is prepared for the morning! Red and white checkered pattern. It seems to be made from "Comet", the best rice for sake brewing in Hokkaido. Ingredients: 100% Comet from Hokkaido Rice polishing ratio 48 Alcohol content 16%. On the morning of New Year's Day, we ate ozoni (stewed rice with various ingredients), osechi (Japanese omelet), and red and white checkered pine trees. The label looks auspicious with its golden color and red and white checkered pine😄. When I opened the bottle, it clinked pleasantly. It looks like a good omen😄. It has a fruity and happy ginjo aroma. The sweetness and umami spread to the mouth. It has a light gassy taste that is pleasant to the tongue. It has an acidic taste and does not leave a bad taste in the mouth. It is easy to understand and easy to drink. On the third day after opening the package, the gas is released and the sweetness of the lees is mellow and good. Delicious. Happy.

Raw rice: Dewa-Zanzu from Yamagata Prefecture Rice polishing ratio: 50 Alcohol content: 16 degrees My first Yamagata Masamune, lightly nigori. I had it with crab at a guest house in Echizen. The lees are faint, but the milky white color of the bottle and the white label shines through. Open the bottle. It has a fruity and fresh ginjo aroma. In the mouth, the sweet and savory taste spreads. The fresh and firm acidity expands along with it. At the end, the soft bitterness and astringency finish off the taste. It is a sake that is well worth drinking. You start drinking it thinking that it is an aperitif, but it is so sharp that you cannot stop. It becomes a gutsy sake for a meal. This is the type of sake that you want to savor and face slowly. Nevertheless I need to dismantle the crab, I need to drink Nabeshima😄, I need to take care of the old people, I need to drink beer or soju-hai, but my sons drink too much... I'm getting drunk😅. I wanted to taste the difference between the top clear and the bottom lees, but my memory of the taste is fuzzy😢. but still Sake and sakana are good! Next time I find a bottle of Yamagata Masamune, I'll have the pleasure of buying it and savoring it! Delicious. So happy.

However, since I'm in Nagoya, I brought home some chicken wings from Furaibo. I paired it with a bottle of Akatake SNOW Xmas. A beautiful glass bottle. The cork dancing in the sake looks like a snow globe😄. I was so excited to open the bottle. I was a little nervous when I opened it. When you take a sip, it's not as sour as you might think. The fruity sourness spreads. The sweetness in the back supports the flavor. There is also a slight astringency. And the sharpness is good, and you can hardly feel the bitterness and alu feeling. Is this a dry white wine? It's not a wine by any means 😅. It's not a wine by any means😅. It's not a wine by any means, but it's a wine. The wine is very well balanced. I have too many alcoholic beverages in my fridge😅. I bought a SunRuck 48L Peltier refrigerator for my family 😄. I'm very happy with it. I'm not sure what to make of it, but I'm sure it will be good. The aroma is fresh as the endorsement says, and the Muscat-like ginjo aroma stands out elegantly. It is not as sweet as the impression of the aroma. The umami is elegantly trong. The sourness wraps up the sweetness and washes it away. The faint bitterness at the end is also pleasant. It is not a sake that is easy to drink. It has the impression of a well-balanced, elegant sake that has been carefully crafted. It's delicious. Happy.

Takachiyo Junmai Daiginjo Unadjusted Raw Sake 100% "Ipponjime" from Niigata Uonuma Rice polishing rate 48%. Less than 16-17% alcohol by volume For some reason, the hiragana "Takachiyo" on the pretty bottle didn't appeal to me, but the limited edition characters and the red kanji for "Takachiyo", which has an overwhelming sense of royalty, attracted me to buy it. When I opened the package, the ginjo aroma rose to the surface. The aroma is gorgeous, rich and intense. Expectations are high. On the palate, the sweetness is reserved but firm. The rich umami, sourness and bitterness are well balanced in the mouth. This is the classic daiginjo sake. It is a little spicy, but you can enjoy the elegant flavor and sweetness. We don't know the difference between the "Ipponzume" 😅. I tasted the Takachiyo while wondering what to snack on. Next time, I wanted to try Takachiyo in hiragana. It was delicious. Happy.

Junmai-Ginjo Oriharami 1 Rice polishing rate: 50%, 16% alcohol by volume This is the second Collage to be released after the Yamadanishiki from the Tojo area. The blue letters on the Cardiff is a cool touch. It looks like there is another "Erigarami Ichi". When you open the package, it makes a nice sound. The aroma is mild and banana-like. When you put it in your mouth, the carbonation is pretty solid and bounces around in your mouth. It's comfortable. I realized once again that I like fizzy drinks. The sweetness is a little subdued, but the sweetness of the rice is strong. It doesn't have a heavy texture of the origin. Is it because of the foaming feeling? The flavor is strong. Then acidity and bitterness envelop the tongue, and the wine has a long finish. It is neither fresh and refreshing, nor complex or heavy. You can enjoy both the sake and the food in a well-balanced way without being too sharp. The sense of foam is enjoyable. I was confused about whether it was from the Yoshikawa area or not, but I didn't know because I've never had it before, so I didn't know what to expect and bought it in a hurry. The aroma is gorgeous and elegant, with a slight banana taste. In the mouth, it has a graceful sweetness and sourness. The flavor spreads well. Tron on the tongue. A faint bitterness can be detected in the distance. There is no peculiarity, it is well balanced with a core, and the flavor is strong. It is delicious on its own, but it is not sharp and has good balance, so it goes well with meals. It is also good for a meal. It is good to drink at home. Shiboritate Aka Niigori sake is made from rice, Domaine Sakura Yamadanishiki, milled rice, 50% koji, 60% kake, and 13% alcohol content. I visited the Horiichi branch in Shusendo while I was working, but it was sold out😢 I heard it was going to be sold out at the branch in the evening, so I went there again while I was working to get it. When I went to pick up the bottle just before closing time, it was already sold out. I'm glad I could buy it 😄. I opened the stopper with a throbbing heart. Surprisingly, it's only a pong. The aroma is faint but firm and fruity. Take the top cuvette first. In the mouth, it has a pleasant crisp sensation. Moderate sweetness and acidity spread around the umami. Delicious! I felt like I was going to drink only the supernatant, so next time I shook it carefully to make it cloudy and then put it in my mouth. It's very silky, contrary to my expectations of a powdery taste. It's delicate and smooth. The smooth texture of the lees is also pleasant with a feeling of softness. The flavor is enhanced. The fresh sweetness, sourness and bitterness blend with each other, and it goes down smoothly. Ahhhhhh, it's delicious! Cute and impressive label. The aroma is cute and elegant.
