I won this in a plastic gala pon at Horiichi's in Shusen-dong last autumn. I've been putting it off for some reason. I wrote about it in the Packing Card Sake, but I had to change my job, so I opened it as a memorial. The package is opened. Special production method: White koji is used, High acidity sake Alcohol content: 12 degrees Raw rice: 100% Akita Yonekomachi Yeast used: Kyokai No.6 Koji rice 55%, Kake rice 65 It blows me away 😆. It's good and exciting. But it overflowed for one lick😭. The aroma is white koji? When I poured it, fine bubbles drifted in the glass sparkling. Slightly cloudy white, reflective, beautiful 😄 Different beauty from Champagne. In the mouth, the citric acidity spreads freshly. The sweetness and flavor of the rice is solid, and the slight bitterness accents are pleasant. The cute and elegant flavors intertwine intricately in the mouth. There is also a strong carbonation stimulus, and the complex flavors are elegantly combined. The bottle design is sophisticated, but when you hold it in your mouth, you can feel the trials and tribulations of the young brewer and toji. When you drink Shinsei, you may even think that they are trying to create a new category of sake called "Shinsei". Drinking alone after a barbecue on the balcony. Lining up Flax Cat, Packing Card Sake, and Akatake. Buckets, cured ham, cream cheese with miso, and strawberries are the side dishes. It's delicious. Happiness.

Rice: 80% Gohyakumangoku, Polishing ratio: 50%, Alcohol: 15 It has been a long time since we had a packaged sake. This is an unfiltered, unpasteurized version of a fire-retarded standard sake. It is brewed by Yuichi Tanaka, born in 1992, young 😆. He started brewing sake in the 26th brewing year and completed the "cargo tag" series. He is on leave from Niigata University, majoring in programming. He is the same age as Ryunosuke Furudate of Akatake. Awesome! The aroma is a fruity ginjo aroma that fills the nostrils moderately. In the mouth, a rich sweet umami flavor spreads strongly. The sweetness is moderately fresh, and at the same time, the acidity typical of nama-gara-shu keeps the outline of the sake. The bitterness is left in the mouth, and it finishes. It is fruity, fresh, and slightly floral, and has a clear direction to become the king of sweet sake. The branding is also very strong on the sales side! Mr. Tanaka's goal is "smooth taste without alcohol" and his motto is "effort, analysis, research and action" 😄. On this day, Mr. Tanaka and his sons of the same age came back and had a barbecue on the veranda. I'm getting close to 60 years old, but I think I'll stay on the balcony alone and enjoy the days of trial and error while I soak up the work. I was accompanied by young sake brewers and breweries from Kafuda, Shinsei and Akatake. Delicious. Happy.

I couldn't find it at Sake Sento, but I found it at a sushi restaurant and ordered it as soon as I could, 3 days after opening the bottle. Junmai Ginjo BY2 Unfiltered Unpasteurized Sake, Ibi no Homare, 50% rice polishing ratio, 16% alcohol. This sake is made by Sugihara Shuzo in Ibi-gun, Gifu Prefecture. There are two employees, a father and son 😅they are very particular about the sake rice, water, and production process, and the production volume is very small. This is the first time I've had it since I drank it on February 3 at another restaurant. The fruity aroma that hints at sweetness is not so bad. When you taste it, it has a rich and elegant sweet flavor. The acidity that supports it is faint, the bitterness is faint, and there is no miscellaneous taste. The assertion of the sweetness is like a noble sake. I even think that it is a noble sake. However, the sweetness is not dull and disappears quickly. Where did it go? That's the feeling. With this sweetness, why does it lose its edge? I think. I'm not sure if it's a sushi bar sake, but I'll have two glasses😅. Two drinks can buy you much more than the price of a four-pack 😭 The third drink I held on to for dear life. I think they should hire more employees and build more facilities to make more sakebi. Organic naturals ZERO nigori Rice: Domaine Sakura, organically grown Kaminoo (from Sakura city, Tochigi prefecture), polished to 90%! 13% alcohol (undiluted) Nigori-shu, super ancient method, no added yeast (brewer's yeast), wooden bucket brewing, nama-moto. The first organic naturals since the noble sake. The second bottle of Senkou Snowman I bought last year makes me laugh every time I open the fridge. The cork is open, and the opening sound is light and pleasant. The aroma is a ginjo aroma like cooked rice. In the mouth, the sourness spreads with a sense of foam, accompanied by the umami and bitterness of the rice. A faint sweetness lurks in the back. It is often said that it has a blue banana taste. Rice used: Gohyakumangoku Polishing ratio 50%. Alcohol content 16 degrees A stable Nabeshima that should always be in your refrigerator. This time it's an orange labeled nama-shu. It has a cute warning sign on the bottle. When you open the bottle, you will be greeted with a pleasant sip. The fruity ginjo aroma of Nabeshima is soothing😊. On the palate, it has an elegant and calm sweetness like wasanbon, and the flavor of rice spreads. There is a slight fizziness. At the same time, there is a hint of muscat. A light but firm acidity follows the sweetness and the bitterness accentuates the bitterness and flows to the back of the throat. The lingering bitterness is also enjoyable. It can be drunk easily, and can be enjoyed as a food sake or on its own. Enjoying Obuse Winery's Ilia Thornton and white wine Sogapelle Odinaire Chardonnay Barrel 2019 side by side😄. This is my second bottle after numero sis. Its deliciousness is impressive. Unforgettable. The first release, Iliassonton, is a blend of #1 and #2 yeast. It is made with a classic traditional yeast mash. The raw rice is Miyamanishiki from Nagano prefecture. The alcohol content is 15 degrees and the rice polishing ratio is 59%. The yeast is one that was distributed before the war and is no longer distributed in principle. A story that tickles. We opened two bottles with a wine opener. The elegant and fruity ginjo aroma is pleasant. When it is included in the mouth, moist sweetness and deliciousness and acidity are beautifully intertwined and mixed. The alcohol feeling is slight. It flows beautifully to the back of the throat. The aftertaste is sweet and sour with a hint of bitterness. The back label is full of 100 year old pandemics, but it doesn't matter 😅 the sweetness and aroma is more subdued than numero sis? I'm not sure what to make of it. This is a great wine to enjoy on its own. The Chardonnay white wine has a citrus aroma. Crisp, sharp acidity, fresh and full flavored. Great cosiness! Raw rice: Self-grown Yumesansui Rice polishing ratio 30%. Alcohol content 16%. This is the best Sekiya Brewery in Aichi Prefecture. The price is more than 5,000 yen for a 4-gallon bottle 😳 Of course, I got this sake😄. The sake rice is grown by the brewery themselves, the water is from a local spring, and the label is made by a local calligrapher. The label is made by a local calligrapher, so it's all about the local area. If you drink in Nagoya, you can find Houraisen's Ichimonji series Gin, Sora, Bi, Wa, Ka and Ichinen Fudo. SAKE BAR ENYA is located in an area called Shikamichi, within walking distance from Meieki Station, and is a renovated rice warehouse. A restaurant called Koji MARUTANI, which seems to be under the company's direct management, has also opened in the park where the TV tower is located in the past few years. Both of them are quite casual and a bit uncomfortable, but Sekiya's sake is beautifully lined up. I've never heard the word "Mā" before, but it seems to be a Buddhist term meaning "big" or "superior. It has a modern and acidic Shinsei feel to it, with a woody sweetness and a slight astringency that effectively spreads in the mouth. As it falls down the throat, a pleasant alcohol sensation expands the range of the sake in a complex way. The alcohol content is one degree higher than Cosmos. The lingering impression on the throat, tongue and nasal cavity is also stronger than Cosmos. It's fun to compare the two in a way you don't understand. We had Oguchiya Anbu Sankira with it. Hououmita Kuroban Limited Edition "Mukou Honsei Rice: Yamadanishiki Polishing ratio: 45% Alcohol content: 16-17 I reserved and got this Hououmita Kuroban! It seems that the brewer Mr. Masaki Kobayashi is a graduate of Tokyo University of Agriculture. Even if he studied in the same place, the sake he brews changes. Sake is beautiful and deep. Keep up the good work everyone and brew some good sake 😆. Opening the package. A gorgeous fruit-like ginjo aroma rises up. It's Hououmida! In the mouth the sweetness envelops the tongue, the sweetness of the rice, the umami, it's good😄. Of course, the sweetness and umami are mellow and not clinging. It is supported by a firm acidity and flows to the back of the throat. On the tongue, the sweetness, sourness, and accent bitterness linger. The strength of the core that asserts the sake from the front like Hououmida is comfortable. It can accept strong dishes, but I don't think it's a sake for a meal. I want to drink it after a meal. I enjoyed it a lot, but I felt it was a comfortable balance between cold snow and cold flowers. We opened this Hououmita on a night when the castle was covered in snow. I had it just like snow chilled. I'm not sure if it's a good idea, but it's a good idea. I wanted to use it😅. Delicious. Happy.

Shinsei 2019-2020 Rei Rei Colors Cosmos Aki Sakura Sake Brewing Raw rice: Improved Shinko (harvested in 2019 from Akita prefecture) Fermentation vessel wooden vat Polishing ratio 55%. Alcohol content 13% MISHOP No.6 yeast. Cosmos wrapped in pink wrapping paper with lots of text 😅. The back of the bottle has identification information, date of manufacture, date of shipment, and even the name of the distributor. It looks like Shinsei. Open the bottle. The aroma is soft and elegant. The aroma is soft and elegant. Soft Shinsei sourness. Light and clear with a modern feel. Yeast aroma, a little strong wooden bucket nuance is effective. The sake is made by hanging a cloth bag filled with mash and bottling the drops that fall naturally without any pressure. That's pretty cool 😅. Open the bottle. The aroma is elegant, with a slightly fruity ginjo flavor. The slightly visible lees are a nice touch. In the mouth there is a natural sweetness, a fruit-like acidity, and a rich umami that swells up nicely. The palate is smooth, but quite crisp, and when it drops down your throat, you can feel a strong sense of alcohol. I had heard that it was a juicy green apple, but it is not like that. It is a thick and solid sake. It is a good sake to drink during meals because it cuts off quickly. It can take a strong meal head on and make it more exciting. It is delicious. Happy.

This is my first time to visit Fusashimaya. The label is very cool. Sake from Ibigawa town in Gifu. There's another one nearby, called Imi. I had a chance to try it a while ago, but the endorsement left a big impression on me 😅 Of course it was good though. I'm thankful that there are so many great sakes out there, but my fridge is full and my liver is overflowing 😑I'm in trouble 😅. Opening. It's a nice sound to open. It has a nice fruit aroma. I'm not sure what to make of it. A little cloudy. The sharp acidity and the sense of foam wrap the sweetness and the flavor of the fresh rice firmly. The leading role is the acidity, and the image that the sweetness which extends considerably solidifies the side firmly. There is also a cute bitterness that appears occasionally. It has a clean and crisp taste. It is a well-designed mainstream shokuchu-shu. It has a nice finish. It responds well to strongly seasoned meals. It is delicious. Happy.

Sake rice Akitsuho Polishing ratio 65%. Alcohol content 14%. The Quest for a Warmed Sake VER.5. Original sake cup included. The sake mother is made from lactic acid fermentation. Some of the TYPE 5 from last time is used. Refrigerated since last October. I'm sorry to say that my first post on Sake No Wa was 657 😅, I was caught by the seal and the many beakers and gimmicks, but the feeling of being hit by the "gimmick will make you interested" strategy at the manufacturer's conference may have put me off 😅. The sound of opening the package is good. A little bit of golden color. I'm not sure what to make of it. I put a sticker on the glass that changes color at 35 degrees and had it warmed. I don't usually drink heated sake. It has a complex aroma of alcohol, rice and sour lactic acid bacteria. It has a complex aroma. When you put it in your mouth, it has a deep sweetness, as if it were made from boiled down fruit. It envelops the tongue. The sweetness is dense, but you don't feel the persistence because of the alcohol and fizzy feeling. By the way, this fizzy feeling did not disappear for several days. The sourness of the lactic acid and the faint astringency make the taste deep. Sake is deep, broad and fun! Rice polishing ratio 55%. Alcohol content 16 degrees I've been drinking this since October last year when I was recommended it by a shop. At the time, I didn't see my name registered in Sake no Wa, but recently I've been seeing it a lot in Sake no Wa😄. Now it's pink. When you open the package, the aroma is not so strong but fruity. When you put it in your mouth, you can feel a little gas. It has a juicy sweet and savory taste. The sourness is effective and moderate. When it reaches room temperature, it becomes a little more gorgeous and fun😄. You can also enjoy the lingering sweetness that is intertwined with the acidity. It matches the pink label. It makes the dining table gorgeous. Delicious. Happy.

100% Yamada Nishiki produced in Yoshikawa-cho, Miki City, Hyogo Prefecture, special A district Rice polishing ratio 50%. Alcohol content 15 degrees I don't go out to drink anymore because of the Corona disaster, but when I passed by a bar I used to stop by, I was told, "Tomorrow, we'll be adding a new bottle of Jyuoshiyo. This is a freshly opened bottle of Jyushiyosama. The aroma was faint. I thought it would be more fragrant than that. I would love to put my nose to the bottle and be enveloped by the scent, but of course I can't because it's a store😢. It is a very elegant and dignified sweetness in the mouth. It has a fresh and pure sweetness of the rice. This is the first time I've had the chance to taste it. The sweetness, umami and sourness go down the throat without any boundary. There is no noise or miscellaneous taste. One of the final forms of sake spreads in the mouth. The brewery must have been the first to reach this level of quality by steadily building up their techniques. I haven't had Jyushiyo since October last year, and I wonder when I'll be able to drink it again. I've never had a bottle of Jyushiyo before. The description on the back of the bottle is interesting😄. Ahhh! It's delicious. I'm so happy.

Hanayojo Junmai Ginjo Unfiltered Raw Sake Miyamanishiki Polishing ratio 55% Rice used: Miyamanishiki Alcohol content 16 At the end of last year, I won the right to buy this Hanayo-yoku in a lottery at Shusen-Dou. I kept this bottle for the peace of mind of having Hanayo-yoku at home. I couldn't help but open the bottle because the sake I drink these days is mainly designed around acidity. The gorgeous ginjo aroma does not betray my expectations. Sweet, sour and fruity🍍 When you put it in your mouth, the natural sweetness and umami spreads beautifully with the sourness. Of course, it is not sticky and it flows to the back of the throat beautifully. It is still good. Firm structure. It is not delicate or complex, but gorgeous royal road. It is as expected of Hanayoi✖️Bisanshiki. The cheek loosens, and it is fun! It is delicious. Happy.

I've never had a bottle of this before. I've never had a bottle of this before. The name is long and hard to remember. You can tell how strong the feeling is. I'm not sure if it's the kind of thing you can just relax and drink? The bottle is corked and opened with a wine opener. It has an elegant and quiet ginjo aroma, and a refreshing and fresh citrus and muscat-like scent. When you put it in your mouth, you can feel the fruity sweetness and flavor, but soon the refreshing and elegant acidity wraps your tongue and flows comfortably to the back of your throat. The sweetness that comes out on the way to the end is also a delight. It may be because the bottle is a wine, but you can feel the Muscat feeling gently in the aroma and sweetness. Junmai Daiginjo Yamadanishiki EAU DU DESIR 2019 Ingredients 100% Yamadanishiki, Polishing ratio 50%. Alcohol content 16 degrees I live in Aichi Prefecture, so I've had this sake a few times in the past. This is the first time I've tasted it since I started tasting sake (i.e. since I started Sake No Wa). For some reason I thought it was "Reishi no Kuheiji" 😅. I opened the package with high expectations. I'm not sure what to make of it. The aroma is a gentle ginjo scent. It has a mild, honey-like sweetness and rice flavor in the mouth. After the sourness spreads firmly, an elegant bitterness drifts to the back of the throat. I'm not sure if this is a good thing or a bad thing, but it's a good thing. I'm not sure what to make of it. It's delicious. I'm happy.
