The sake is made by hanging a cloth bag filled with mash and bottling the drops that fall naturally without any pressure. That's pretty cool 😅.

The aroma is elegant, with a slightly fruity ginjo flavor.
The slightly visible lees are a nice touch.
In the mouth there is a natural sweetness, a fruit-like acidity, and a rich umami that swells up nicely.
The palate is smooth, but quite crisp, and when it drops down your throat, you can feel a strong sense of alcohol.
I had heard that it was a juicy green apple, but it is not like that.
It is a thick and solid sake.
It is a good sake to drink during meals because it cuts off quickly.
It can take a strong meal head on and make it more exciting.
It is delicious.
