It has been a long time since we had a packaged sake. This is an unfiltered, unpasteurized version of a fire-retarded standard sake.
It is brewed by Yuichi Tanaka, born in 1992, young 😆.
He started brewing sake in the 26th brewing year and completed the "cargo tag" series. He is on leave from Niigata University, majoring in programming. He is the same age as Ryunosuke Furudate of Akatake. Awesome!
The aroma is a fruity ginjo aroma that fills the nostrils moderately.
In the mouth, a rich sweet umami flavor spreads strongly.
The sweetness is moderately fresh, and at the same time, the acidity typical of nama-gara-shu keeps the outline of the sake. The bitterness is left in the mouth, and it finishes. It is fruity, fresh, and slightly floral, and has a clear direction to become the king of sweet sake.
The branding is also very strong on the sales side!
Mr. Tanaka's goal is "smooth taste without alcohol" and his motto is "effort, analysis, research and action" 😄.
On this day, Mr. Tanaka and his sons of the same age came back and had a barbecue on the veranda.
I'm getting close to 60 years old, but I think I'll stay on the balcony alone and enjoy the days of trial and error while I soak up the work. I was accompanied by young sake brewers and breweries from Kafuda, Shinsei and Akatake.
