Rice polishing ratio 60% Alcohol content 15 degrees Chosyu Sangyo bought a local sake brewery that was about to go out of business and took over the business in 2018, built a new brewery, hired a female toji, Miki Fujioka, and released the first batch in November last year. And it is already one of the most popular sakes. It's amazing! It comes with a tag that says, "This is my first Tenbi. The label design also has a nice appearance that shows a woman's point of view. I'm looking forward to working with you. I opened the package with great anticipation. A pleasant popping sound. The aroma is subdued but fruity with a hint of ginjo. In the mouth, a slight fizzy feeling is pleasant. The light sweetness and umami take the lead, with the sourness firmly supporting. You can feel the assertion of each. The balance is good and the sharpness is good. The alcohol feeling is slight and refreshing. After a few days, it becomes gorgeous and cohesive. It is fun to see how it changes over time. There is nothing sharp about it, and even people who are not used to drinking sake will find it delicious. Such a wonderful sake can be made in such a short time. Of course, the funding is a big factor, but I think it's an amazing effort. This is a great example of how a brewer with a degree in brewing from Tokyo University of Agriculture can use logic to create the sake he is aiming for. Looking forward to the next one😄. Delicious. Good morning, Alalala! 😄 I've been curious about Tembi for a long time, but I don't have a special store near me so I'm still looking at it with my fingers crossed. 😂 I'm sure I'll like the flavor strain, so I hope to get one someday 😆.

Thank you for your comment. Yesterday on Choshu Shuzo's FB, they mentioned that they are brewing a Junmai Daiginjo that will be entered in a competition using Yamadanishiki polished to 40% 😄 I'm looking forward to shipping it in a month or so 😆.
