I couldn't find it at Sake Sento, but I found it at a sushi restaurant and ordered it as soon as I could, 3 days after opening the bottle.
Junmai Ginjo BY2 Unfiltered Unpasteurized Sake, Ibi no Homare, 50% rice polishing ratio, 16% alcohol. This sake is made by Sugihara Shuzo in Ibi-gun, Gifu Prefecture. There are two employees, a father and son 😅they are very particular about the sake rice, water, and production process, and the production volume is very small.
This is the first time I've had it since I drank it on February 3 at another restaurant.
The fruity aroma that hints at sweetness is not so bad.
When you taste it, it has a rich and elegant sweet flavor.
The acidity that supports it is faint, the bitterness is faint, and there is no miscellaneous taste.
The assertion of the sweetness is like a noble sake. I even think that it is a noble sake. However, the sweetness is not dull and disappears quickly. Where did it go? That's the feeling.
With this sweetness, why does it lose its edge? I think.
I'm not sure if it's a sushi bar sake, but I'll have two glasses😅.
Two drinks can buy you much more than the price of a four-pack 😭

I think they should hire more employees and build more facilities to make more sakebi. Maa, I guess you only want to make as much as you can see.
