I don't usually drink heated sake. It has a complex aroma of alcohol, rice and sour lactic acid bacteria. It has a complex aroma. When you put it in your mouth, it has a deep sweetness, as if it were made from boiled down fruit. It envelops the tongue. The sweetness is dense, but you don't feel the persistence because of the alcohol and fizzy feeling. By the way, this fizzy feeling did not disappear for several days. The sourness of the lactic acid and the faint astringency make the taste deep. Sake is deep, broad and fun! I've never been a fan of noblewoman's sake, but this one has not only the sweetness of ripe fruit, but also a strong supporting role of foamy acidity and astringency.
