My impression in a nutshell: "(Shaoxing wine + whisky) / 2".
The nose is oaky, nutty and almondy. The taste is sweet, like Shaoxing wine.
I thought it was too early for me to taste such an aged wine!

Izakaya Ouen-Shu (izakaya supporters' sake) has been sold exclusively at restaurants in Kanda, Tokyo, since September.
In a nutshell, it has a muscat aroma and alcohol content, and a solid, special Junmai flavor.

The sweet aroma and the fine flavor of the rice. It's the first time I've ever experienced an aroma that so clearly says banana! Delicious!

The impression in a word is "gentle, mellow and thick".
The aroma and flavor on the nose are both gorgeous, and the mellowness and richness of the flavor that spreads throughout the mouth is a first for me! It is truly bliss!

Yikes! Mellow and delicious! The sweetness and flavor of the rice is pretty strong, and the acidity and slight carbonation do a great job, I love this feeling!
When paired with Camembert cheese, it's the ultimate cheese fondue! I'm so happy

It was a pretty light drink, so my body immediately began to seek out the flavor, and I wonder if it was wicked. I warmed up the wine while thinking about it.
I've tried both hot and lukewarm sake, and lukewarm sake is by far the best! A mildly soda-rich green apple with a "dusty" feel! Delicious!
I guess I should have bought the ALPHA TYPE 5 for warmth 😋

Oooh, awesome! That's the kind of power and impact I was looking for in an unfiltered malt liquor!
The rich flavor and sweet aroma of rice! It's also quite strong with a sour taste that has a schwanness to it. And it's spicy! Alcohol is strong at 17 degrees!
All of the arguments are so strong, but they all blend together in a terrific way. Yum! It's just divine!
And the bottles are so cool!
The claim of the alcohol is so strong (in a good way) that most of the food seemed to lose out, but I have a feeling that it would go well with foods with strong flavors such as beef ribs or braised yellowtail (^ ^).

The owner of a liquor store recommended this junmai sake, which is not produced in large quantities and is rarely sold in liquor stores in Yamanashi Prefecture, so I bought it.

This is a delicious sake with the gentle sweetness of the koji and rice, and the acidity quickly follows the sweetness of the rice.
It was a bottle full of juicy raw flavor and rice flavor.
It didn't have the rough-hewn impact I've come to expect from unfiltered raw sake, but it's a very well-balanced, honorable type of sake. Thank you for the treat (*^^*)

A mellow and juicy sweet and savory 🍍🌾 which is like a gentle squeeze of pineapple and rice.
The ranking is not so good, but it is a hit for me!
It's strange that right after I drank it, I felt as if my body was surrounded by a soft and gentle air.

Unfiltered Raw Sake, which I'm into lately
Tenmei's new "Nakadori Zero" series of unfiltered unpasteurized sake has been released under different concepts from "Zero" to "Gogo"! I bought it.
The concept of this "Zero-Go" seems to be "a balance of umami, sweet and acid" 😋
The exhilaration of the young acidity of the raw sake that you feel in your mouth, combined with the melon blossom-like aroma and sweetness of a melon/banana-punch that you can feel softly, is pleasant. It's refreshing, but you can feel the sweetness and flavor of the rice spreading in your mouth. Aaaaaaaaahhhhhhhhhhhh, I'm happy again today 😆 .
I drank it all the way through because it was easy to drink.

The aroma is light, dry, and the acidity is strong. A dry sake with a strong alcohol taste in the aftertaste.
It's the kind of dry brew you want to drink in the hot months!
Cold was a bit harsh, so I made it hot, which gave it just the right balance. Soy sauce flavored nimono and drunken whale, hot!

Freshness of the first pressing of the new brew, and the richness of unfiltered raw sake!
Clear, crisp, plump depth!
It was a delicious drink with conflicting flavor elements that matched up nicely! Yeah, I still like the "unfiltered raw raw material" ministry.
It feels like it blends in smoothly with your body and makes you drink more and more.
The sweet chestnut 🌰 and nuts🥜 were a great match for it.

Light and dry but with a soft rice flavour and a slight acidity that's pleasant!
Soon it wasn't enough, so I searched for the best of pairings with food in the house😋.
The sake is from Niigata, so I thought it might have something to do with Kaki Choco, which is persimmon seeds coated with chocolate. So I paired it with milk chocolate. As expected, it's delicious! I found the right answer! (๑˃̵ᴗ˂̵)

Spicy but sweet.
Spicy? Sweet? It has a sweet aftertaste. Oh, what is dry? I'm not sure what to do with it, but it's delicious, so I guess that's okay (laughs).
I learned that the sake made from soft water brewing water is called "Onna-sake" and has an elegant, mildly sweet taste to the palate.
