Newly pressed Junmai Ginjo Gohyakumangoku Unfiltered Harajuku.
It's been a while since I've had a BON-chan 😃.
The first saké has a melon-like sweetness and a whisky-like smokiness on the nose. The aftertaste is surprisingly clean.
After the next day, the yogurt feeling becomes stronger and the sourness and flavor increases 😋.
After a week or so, the sourness has decreased considerably and there is a slight bitterness. It's crispy and delicious too 😄.
