《Touji Selection BLACK Junmai Daiginjyo Once Fired Genshu》.
The aroma when just opened was slightly melon-like 😅. It was smooth on the palate 😅.
The mouthfeel is smooth, and when it's cold, it has a plum-like acidity, followed by a melon-like sweetness, and then the umami comes in gradually in the aftertaste. I wonder if the acidity becomes milder and the umami stronger as the temperature rises.
The third day, the sweetness becomes milder and there is a slight astringency and a hint of grapefruit.
Personally, I like the taste after about a week when the umami is more intense.
