It has an elegant, not intrusive, top-shelf aroma. The pleasant umami of rice spreads throughout the mouth and disappears with a lingering aftertaste. The umami can be felt all over the tongue, which may be the proof of its good balance. We had Kido as a new sake in the spring and liked its elegant flavor, but it seems that the mellowness of the sake has been enhanced by the addition of a mellowness that has been achieved over the summer. It is a sake from Shonai, Yamagata Prefecture. If possible, we would like to have this sake with dacha-mame, a specialty of Shonai... Miyamanishiki rice is polished to 50%. It has an exquisite aroma of rice and fruit. The mouthfeel is quite mellow, and the deliciousness spreads to both sides of the tongue, but it finishes quickly. The taste is quite good, and you will never get tired of drinking it. Thank you very much.

It is a new brand from Murai Brewery in Makabe-cho, Ibaraki Prefecture. The rice is 100% Nipponbare. Polishing ratio 65%. The top aroma is subtle, and my insensitive nose could not distinguish it, but the overt aroma has a very strong rice aroma. It has a nice sharpness and is easy to drink, making it quite tasty. This is my first time to drink sake from Ibaraki, but I found it to be an attractive sake that conjures up images of the landscape at the foot of Mt. Thank you for the sake.

This is a special junmai, 100% Aomori rice, hiyaoroshi, bottled a month ago. The top aroma is refreshing. It has a gentle aroma of rice rather than fruity. Enjoy the pleasant, sweet-tasting top aroma for a while. In Kochi Prefecture, where most of the wines are dry, this is a sweet wine with a sake strength of -16, but it is relatively light and cuts through easily in the mouth. It is light and cuts right through in the mouth, with a slight carbonation that makes it taste like a soft drink made from rice. I'll come back for a drink next time. Thank you very much.

According to the Homare Sake Brewery's website, it is a "Junmai Daiginjo for a little luxury home drinking. The ginjo aroma is reserved yet robust. It is sweet but refreshing. Sake from Sakurai City, Nara Prefecture. Sakurai City is famous for Miwa Somen. The sake is brewed with water from Mt. Miwa and Yamada Nishiki. There is not much of an upfront aroma. When you drink it right away, you will notice a refreshing aroma. It smells like pears. The mouthfeel is mild and smooth. As stated on the label, it can be served with both Japanese and Western food. I bought it because of the dusty label. The sake made by Ooga Sake Brewery, including this product, has the aroma of old brewery buildings in both the standing aroma and the overtone aroma. My deepest sympathies to all those affected by the heavy rain in Akita. I happened to find this sake at a local supermarket and bought it to support Akita. This junmai sake is brewed in a sake brewery on the premises of Obihiro University of Agriculture and Veterinary Medicine. The sake rice used is said to be made from Hokkaido's Comet, Ginpu, Kitashizuku, and other rice varieties. The aroma is modest, but it has a simple rice aroma. The rice is said to be polished to 70%, but the original flavor of the rice is unadorned. I have a feeling that it has a similar taste to "Takihitama Hayase" from Mie Prefecture, which I had the day before yesterday. Perhaps it is a coincidence, but it seems that Kamikawa Taisetsu Brewery has its roots in Mie Prefecture. I couldn't help but drink more sake. Thank you very much for the sake.

It is said that this sake was served at the Ise-Shima Summit. The aroma is fresh, but you can also smell the solid aroma of rice. The first sip is dry and smooth, but after two or three sips, you can enjoy the mellow aroma of rice. The koji rice is Yamadanishiki from Mie Prefecture, and the kake rice is Gohyakumangoku from Toyama Prefecture, with a rice polishing ratio of 60%. This is a junmai ginjo sake from Ozawa Shuzo in Okutama, Tokyo. I had an image of Sawanoi as a dry sake, but this one has a well-balanced flavor. It is a bit on the sweet side, but there is a lingering bitterness that makes me somewhat happy to think that this is a Tokyo sake. Thank you for the sake.
