It is said that this sake was served at the Ise-Shima Summit. The aroma is fresh, but you can also smell the solid aroma of rice. The first sip is dry and smooth, but after two or three sips, you can enjoy the mellow aroma of rice. The koji rice is Yamadanishiki from Mie Prefecture, and the kake rice is Gohyakumangoku from Toyama Prefecture, with a rice polishing ratio of 60%. The more you drink, the more delicious this sake is. Thank you for the sake.

This is a junmai ginjo sake from Ozawa Shuzo in Okutama, Tokyo. I had an image of Sawanoi as a dry sake, but this one has a well-balanced flavor. It is a bit on the sweet side, but there is a lingering bitterness that makes me somewhat happy to think that this is a Tokyo sake. Thank you for the sake.

As a sake drinker, I thought it would be a bad idea, but I tried sparring sake. It has an alcohol content of 5%, which is about the same as beer. It has a subtle aroma of rice, but you can drink it like a soft drink. It will be refreshing to enjoy sake in the coming hot season. Thank you for the sake.

Juhachimori Sake Brewery in Kojima, Kurashiki, is locally known as "Toohachi". It is a junmai daiginjo-shu made from Asahi rice grown in Okayama Prefecture and polished to 50%. Although neither the aroma nor the mouthfeel is strong, the deliciousness of Asahi rice seems to come out elegantly and gently. It is a sake that you will never get tired of drinking, and you will find yourself drinking sake after sake after sake. Thank you for the sake.

In the car on the way back to Hakata from Osaka over the weekend. I usually don't touch brand-name sake, but today I tried Otters. It is a 45% polished rice. There was a 23% polished rice right next to it, but it was too expensive for me. The aroma was intoxicating. I feel like I'm going to fall in love with it... I just enjoy the aroma for a while. Then I gently sipped it... how delicious it was... The richness of the rice is beautifully concentrated, and all I can say is, "I'm here. Thank you very much.

Shinkansen bar on the way home from a business trip to Tokyo. The Daishichi Sake Brewery's website proclaims it to be an "eternal standard," so I guess they are very proud of their work. The sake rice is Gohyakumangoku, etc., and the rice is super flat polished to 69%. It has a mild taste with a modest assertiveness, and it is a sensation that easily penetrates the body after a long day. I am sure it has been well-loved in Fukushima for many years. It made me want to go to Fukushima. Thank you for the food.

As usual, a glass at the Shinkansen bar on the weekend. This Junmai Daiginjo-shu is made from Yamada-Nishiki rice polished to 50%. The standing aroma foreshadows the mellow rice flavor to come. When you take it into your mouth, the rich rice flavor comes rushing in. It is unusually sweet for Niigata Prefecture, which has many light, dry wines, but it is right in the middle of my strike zone as a sweet-tasting person. I am grateful to the brewers who put so much effort into making this sake. Thank you very much.

This is Masumi's summer sake. It is said to be made to go well with delicate summer foods. It is refreshing on the palate, but has a robust rice flavor. Yellow malted rice is usually used to make sake, but this sake uses white malted rice to give it a sour taste. However, the acidity is mellowed out and the corners of the acidity are removed. It is an elegant sake that makes you feel somewhat sophisticated. Thank you very much.

It is raining tonight, so we are drinking at home instead of going out. This is a limited-edition sake that we purchased last month at a brewery opening in Kurume City, Fukuoka Prefecture. Yamadanishiki rice is polished to 38%. The rich aroma is enjoyable. It has a rich, concentrated flavor with no cloying taste, and is quite drinkable. Thank you very much for your patronage.

It has a simple drinking mouthfeel that is typical of nama sake. The acidity is a bit strong, and the rice flavor is reserved. The aroma is almost nonexistent... I enjoyed it with kampachi sashimi, and it made me feel like I was in Hokuriku. Thank you very much for your kindness.

The holiday weekend is over, and I am on the Shinkansen train heading back to Osaka with a heavy heart. Today's bottle is a junmai ginjo sake from Fukuoka Prefecture's oldest sake brewery. It is brewed with a rice polishing ratio of 55% and water from Mt. The aroma is subdued, but the good smell of rice can be enjoyed. The taste is neither too sweet nor too spicy, and the flavor of rice gradually spreads to the palate. It is a well-balanced flavor that you will never get tired of drinking. It came out in a wine glass. The gorgeous aroma that did not betray our expectations made us swoon. After enjoying the aroma for a while, I gently took a sip of the wine and found that the flavor was as good as the aroma. This is delicious. It is said that this sake is made with the softest water in Japan, and I think it makes the most of the characteristics of soft water. Thank you very much for the sake.

This ginjo-shu is made by polishing up to 40% Yamadanishiki produced in Hyogo Prefecture. It has an intoxicating aroma unique to ginjo-shu. You can also enjoy the umami of the rice, but the aroma comes first and the umami follows. It is delicious, but I realized once again that my preference is for junmai. Thank you for the sake.
