Today we are eating out😊. First, we chose Kamo Nishiki ☝️ This is Kamonishiki which is not a packaged sake: ☝️ The aroma is fruity, but the taste is light and delicious, typical of Niigata sake 😊. A perfect food sake😄. It's delicious 😁.

I'm on my way home from shopping 😊. I looked at the menu and wondered why...summer sake❓ I asked the owner and he said he forgot to serve it 😆. Then let's drink it and order it: ☝️ I haven't had any of Amami's summer sake 😁. It's a summer sake, so it has a crisp taste and acidity, it's very refreshing 😊. This is delicious 😆.

I'm drinking for the first time✨ The theme is astringency and... 😄 I'll drink it with dread to see what kind of astringent taste I'll get 😶. It tastes astringent like grapefruit ✨. It's a light cloudiness, but the acidity is gentle✨ It's easy to drink because of its low alcohol content, but it's a very different kind of sake 😄. It tastes strange 😑.

Finally, it's a good way to make a deal 😊. This is a luxurious sake, with Dewa Sanzu reduced to 22% 😆. The taste is just gorgeous aroma, clear, no cloying taste and a strong umami 😁. Delicious 😆. I can't believe they polished it to 22%... but I guess it's not so rare to find highly polished sakes these days 😅. But I'm sure it's delicious 😁.

Next, we have the genno-tori 😆. We'll compare the drinks 😆. The taste is different from Hinotori, it comes with bitterness and astringency ☝️ And the umami is also very strong 😊. It tastes different from sweet ✨ It was quite an interesting comparison 😁.

The owner asked me if I would like to come and have a drink with him as he was about to open a new bottle of Shinsei.... Naturally, I went 😊. So I went for the Shinsei. I'm not sure if it's the same as the one in the box that was on display ✨. With high expectations, I'll start with the Hinotori first: ☝️ As expected from a kijo sake... it has a strong sweetness, but it also has a good acidity and a good balance 😆. It's a sweet sake, but the acidity makes it easy to drink: ☝️ I'm fine with a little 😅
