Purchased at a local supermarket. I was looking for sake that can be stored at room temperature because there is no room in the refrigerator. It was at room temperature. It is a junmai sake with a rice polishing ratio of 65%, so the sweetness is weak, but the umami of the rice is strong, making it a good mid-meal sake. It is a dry sake for a mealtime drink and seems to go well with anything, but personally, it is a sake that can be enjoyed without a side dish and is a good value for money. I am glad that we can now buy good food sake at supermarkets these days.

Purchased at a liquor store near my parents' house during a summer trip home. Cold. It has a sweet apple-like aroma. When you drink it, you can feel the slight carbonation and the sweet and umami taste spreads strongly throughout your mouth. At the end, it has a weak bitterness, but the sweetness is strong and the sharpness is not so strong. It is good to be able to enjoy the change in taste of sweetness, umami, acidity, and bitterness with each sip! That's all I can say. For me, it is a luxurious "juice for adults" that allows you to enjoy the sweetness of rice, and I imagine it as an aperitif. It's so good that I drank 360 meters of it with chocolate as a side dish before I knew it.

Cold 5 days after opening. The sweetness that could not be detected immediately after opening the package is now felt, followed by sourness and bitterness. I personally feel that it tastes even better after a little time after opening the package. I had it with a dinner of scallop sashimi and mapo tofu, and it was still delicious. I don't find it fruity, so I think the best way to drink it is with a meal.

Purchased at a liquor store near my parents' house. It was recommended to me by the owner of the liquor store as an evening drink during my trip home for the Bon Festival, so I bought it immediately. At first I thought it might be an aperitif because of its weak carbonation and strong sweetness, but it became more umami and acidic than sweet and turned into a mealtime sake that goes well with salted squid and sashimi. It is a strange sake that is suitable for salted squid and sashimi. According to the owner of the sake shop, this sake was made by a young master brewer. It is an interesting sake with both sweet and spicy flavors, and since it is a rare brand, I will repeat my purchase the next time I see it.

Drinking Izumo Fuji at home, which I had purchased on a business trip three weeks ago. I was looking for something dry, and the store staff recommended it to me. As the name "super dry" suggests, it is not sweet or fruity, but has a strong acidity and a nice sharpness after drinking. There is no unpleasant alcohol residue at all, and the slight feeling of it escaping through the nose is pleasant. It was a good choice with canned mackerel and scallop sashimi. This sake is perfect with strong flavored dishes.

Purchased for home drinking. This is the first time I have tasted GANKI. As soon as you put it in your mouth, you get the impression of junmai ginjo-like sweetness, with umami coming later. As the sipping progresses, the umami of the rice becomes stronger than the sweetness, and it can be served alone or as an in-between-dinner drink. It is easy to drink and delicious. I opened the bottle at an online drinking party, and the 720 ml bottle was quickly consumed.

I was told that it was quite dry, but it was mellower than I expected, with a light sweetness and fruity flavor. On this day, I enjoyed it with dashimaki tamago (rolled egg) as a mealtime sake.

I bought the first Kido I found at a liquor store I stopped by on a business trip. I enjoyed it cold as an aperitif immediately after opening the bottle. It is a junmai daiginjo with a strong fruity and floral flavor, with a sweetness and deliciousness that no one would say was bad. I got an unopened bottle of Hakkaisan that had been sitting at my parents' house. I don't usually drink honjozo, but perhaps because it is made with 55% polished rice, it doesn't have the brewer's alcohol taste that I expected. I tried it with shellfish sashimi and Yamato-nimono (whale stew), and it seemed to buff up the flavor of the entree. It is a good food sake.
