Cold for a week after opening. We were lavished with the lees. It is very sweet and sour, concentrated, and can be guzzled by itself. It is very assertive, so it goes well with meat dishes with a strong flavor, and the Yamato simmered whale meat as a side dish was gone in no time. It is reasonably priced, so it is a good idea to have a bottle of this kind of unique sake on hand.

Purchased two weeks ago at a local liquor store. It was my first time to drink a brand from Iwate Prefecture, but I drank it expecting it to be dry like Tohoku, and it was as dry as I expected. It was served cold, but it had a pleasant light acidity, umami, and a soft, slightly sweet flavor. I paired it with a nabe (hot pot), and it was a perfect sake for a meal, and went very well with it. I still have some left, so I plan to try warming it up or even heating it up.

Purchased at Utsunomiya station on the way home from a business trip. It has been a long time since I have had Nanamizu. I chose the special junmai Yume Sarara, which is based on the concept of pairing with food. The past Shichimizu had a strong image of sweetness, but this one had a slightly dry taste with strong acidity and umami, and was served cold with a nabe (hot pot). It was served cold with nabe (hot pot). It was a great match and both food and sake went well together. Since it is more on the dry side, it would also be delicious warmed or heated.

Thank you for your comment, Jay & Nobby. It was a little dry, but a week after opening the bottle, the flavor changed again, with more umami than acidity, and it tasted twice as good. Either way, it is delicious!

I found it at a liquor store near my parents' house, bought it and had it cold. It has been a long time since I have had nigori sake. It is made with Bodai yeast, which is the oldest yeast in Japan, and I thought it would have a strong sour taste, but it was more fruity, sweet, and refreshing than I expected. The grilled gizzard with leeks and salt was the perfect accompaniment to the nigori sake, and I gobbled it up. I left half of it and plan to enjoy the supernatant and lees part separately next week.

Thank you Jay & Nobby for your comments. It was very tasty, sweet and easy to drink! In the background is the Iwatani Aburi-ya 2, which allows you to grill your knob with a gas can. The seafood grill and sake go very well together. I recommend it!

Purchased at a supermarket for about 1200 yen, cold. Fruity and easy to drink impression. The mouthfeel is sweet and slightly acidic. It seems to go well both before and during meals. It is very cost-effective with an image that changes to dryness at the back of the throat. I recently purchased a portable refrigerator to keep my sake cold, and it is great to be able to stock up on 4.5 bottles so I can compare other brands.

Nanada Junmai Sake served cold. It is a standard line made with 20% Yamadanishiki and 80% Reihou. The Shichida Junmai is a slightly dry sake with less sweetness than the fruity and sweet Shichida sake we have had. We had it with gyoza (Chinese dumplings) as a side dish and found it to have a delicious taste of rice, while at the same time refreshing the oily taste, so both the sake and the side dish progressed well.

Senzuke Junmai Unfiltered Nama sake was served cold. The entrée was grilled sardines. It has a sweet and sour taste with the unique sourness and sweetness of white malted rice. It is best to drink with strong flavored dishes or as an aperitif. It was a perfect match for grilled sardine entrails and sake.

Participated in a brewery event hosted by a liquor store. Tasted at the second round of the Sekiya Shuzo booth, which is famous for Houraisen. Houraisen Junmai Daiginjo Sora We were served a Junmai Daiginjo Sora, which is hard to find in Aichi Prefecture. It had a luxurious taste with both sweetness and umami of rice. It is the kind of sake that you can drink without limit. The Ichinenfudo series is also delicious, but I prefer Houraisen Sora.

Ura-Harushika Junmai Ginjyo Nama Genjyo Nama Shu (summer brewing) Ura-Harushika Mutenkiri Junmai Ginjyo Yamadanishiki Nama-Nihonjunshu Harushika Ginjo Super Dry The overall impression was a little dry and the flavor of the rice was brought out well. The summer-brewed sake was light and fruity, with not too much sweetness. The non-pressurized sake has more umami than sweetness, and is good as a food sake.

Daishinshu hand-full Junmai Daiginjo Daishinshu Code-breaking Junmai-Ginjo Daishinshu Inamitsu Junmai Daiginjo I had a strong image of dryness in Daishinshu, but I found Teppai and Inamitsu to be very tasty with a stronger sweetness than I had expected as well as umami. The "Code-breaker" was drier than the others, and although it was served cold at the tasting, it might be better warmed up.

Tasting at a brewery event hosted by a liquor store. We had the Ichinen Fudo series from the Sekiya Sake Brewery booth, which we drank during our trip to Nagoya. Ichinenfudo unfiltered Shiboritate 55% polished rice Ichinenfudo Special Junmai Tajima-strength 55% polished rice Ichinenfudo Sparkling 60% polished rice I used to have an image of dry Houraisen, but both unfiltered Shiboritate and special junmai were easy to drink with a good balance of sweetness and umami. The sparkling wine was served as a toast to a meal, and it was light and mellow, just like a sweet white wine.

Tasting at a brewery event hosted by a liquor store. Tasted at the Kubota booth, a standard sake that I had never had before. Manju Unfiltered Nama Sake Matured Junmai Daiginjo Beniju Junmai Ginjo The Manju was said to be freshly squeezed, but it did not have a particularly effervescent taste. The Junmai Daiginjo was very sweet, but it also had a strong umami flavor and gave a very well-balanced impression. It can be served as either an aperitif or an in-between-dinner drink. Junmai Daiginjo Beniju is a bit dry, so it would be good to drink it with a Tsumami.

Attended a brewery event hosted by a liquor store. I tasted some new kinds of sake at the Shichida booth, which I have been drinking a lot recently. Junmai Daiginjo Unfiltered Nama Sake AOY70 assemblage Junmai Daiginjyo Unrefiltered Flat Polishing The Junmai Daiginjo was delicious, with a sweetness that was fully expressed with little cloying taste. The assemblage is a blend of Omachi, Yamadanishiki, and Aizan, and is sweet and crisp. The flat polished rice is junmai (pure rice), but the sweetness was well expressed and easy to drink. The Junmai Daiginjo was also tasted without any accompaniments, so I felt that the Junmai Daiginjo was delicious.

Attended a brewery event hosted by a liquor store. At first, I went to the Senzuke booth, which I was curious about. Junmai Daiginjo Unfiltered Nama Sake Junmai Daiginjo 10-year ice storage sake Special Junmai Daiginjo Unfiltered Nama-shu Genshu BLUE The Junmai Daiginjo had a sweet taste. The Junmai Daiginjo was very sweet and I wanted to drink it slowly, while the 10-year ice storage sake was more matured than the Junmai Daiginjo and had some peculiar taste.

Limited edition for the Wind Forest WEEKS event. It was served cold one week after opening. The slight fizzy taste at the time of opening is gone, but the sweetness and umami taste is still the same, and it has a rich and drinkable flavor. I drank the first glass by itself and finished the second glass with bonito tataki.

Purchased at a liquor store near my parents' house. Last week I drank Omachi 50 and enjoyed it very much, so this time I chose Hiyoroshi Aizan 70% 50%. The sweetness is a little subdued, but the umami is strong and there is some acidity, giving it a moderate sense of balance. The sweetness and umami of the rice remains for a while after drinking, so it is more like enjoying the aftertaste than the sharpness. It seems to be more suitable as an aperitif, but I personally prefer the Omachi 50, which has a stronger sweetness, as an aperitif. Today, I had it without an entrée.

This is a limited edition product purchased at Kaze no Mori Weeks in Daimaru Shinsaibashi. Due to budget constraints, we gave up on Yamadanishiki. It was brewed in the spring of 2023BY and bottled in September 2024. When opened, it had a fruity aroma, was slightly carbonated and pleasant to the palate, and was deliciously sweet and umami, with a strong sweetness and umami as if it was made in the middle of the year. It has a gorgeous image with almost no sourness or bitterness. We enjoyed it with scallop sashimi, grilled mushrooms and gizzards, and sipped it while enjoying a long autumn evening. Kaze no Mori is still delicious.

Nanada 1 day after opening the bottle. The impression is not so different from the one right after opening the bottle. The sweetness and umami are very strong, and the acidity and bitterness are moderate, so you can enjoy it like a juice. It is sweet and gorgeous as it is 100% Omachi, and even after one day, it has not oxidized, so it is very tasty. I intended to drink it carefully, but I couldn't control myself and drank it all.

Purchased at a liquor store near my parents' house. The liquor store we visited had many varieties of Nanada, but we chose the Omachi 50 for some reason. It had a fruity aroma and a very strong sweetness, just like a junmai ginjo. However, it also had a strong umami and bitterness, giving it a strong overall flavor. It is more suitable as a light snack than as a mid-meal drink. We enjoyed it with a side of canned mackerel yukke (yukke).

I bought it at a nearby Keihan department store because I had been on a business trip to the Kanto region but did not have time to stop by a liquor store. The label said it was meant to be served at room temperature or hot, but I had it cold. It gave the impression of being dry with a strong acidity. I paired it with eringi mushrooms and eggplant tempura for dinner, but it matched better with a can of Yamato-ni-niki whale that I had afterward.
