(A reminder of the day before yesterday.) This was my sixth drink outside. We had to finish our last order with some sashimi and cheese left over, so we chose a dry brand that had been on our mind recently as the last drink. Shinomine's sharpness and clean taste matched perfectly with the rich cheese (though I vaguely remember it because of the alcohol). It plays a supporting role in bringing out the best of the meal.

(Memorandum of the day before yesterday) The fifth drink outside. Kudokibe Bakuren. According to the owner, "Bakuren" is a dialect word from Yamagata meaning "a woman who is a slacker. I was told that it was quite dry, but it was mellower than I expected, with a light sweetness and fruity flavor. On this day, I enjoyed it with dashimaki tamago (rolled egg) as a mealtime sake.

(A reminder of the other day) The 4th cup for drinking outside. Junmai Chou-Oroku. The rice polishing ratio is 60%, so it is not too high. I tried it with sashimi and Japanese smelt, but it was perfect for both. I wrote that I was drinking it with a lot of alcohol, but in fact I only remember the sensation of it. I remember that it was easy to drink. Next time I drink it, I will drink it a little earlier in the season.

It has been a long time since I have been out drinking. I had an aperitif of Shinmasa R typeX, which I had never had before. It was sweet and carbonated, like champagne. My first impression was that it was a sake. It is a perfect aperitif, as it is sweet and tasty and you can drink as much as you want. As an aperitif, it is a good sake, but as a food sake, it may be too strong. It must be difficult to find sake of this class.

I bought the first Kido I found at a liquor store I stopped by on a business trip. I enjoyed it cold as an aperitif immediately after opening the bottle. It is a junmai daiginjo with a strong fruity and floral flavor, with a sweetness and deliciousness that no one would say was bad. Personally, I didn't find it to be as sharp as I would have liked, so rather than pairing it with a main dish, it was best enjoyed after dinner with a snack while watching a movie. It is a luxurious way to drink.

I got an unopened bottle of Hakkaisan that had been sitting at my parents' house. I don't usually drink honjozo, but perhaps because it is made with 55% polished rice, it doesn't have the brewer's alcohol taste that I expected. I tried it with shellfish sashimi and Yamato-nimono (whale stew), and it seemed to buff up the flavor of the entree. It is a good food sake.

I bought it together with oysters with shells at a supermarket. I wanted to have it with bonito from Kochi, but they were out of bonito, so I used oysters that were on sale at half price. Today I served it lukewarm, not cold. It has a dry taste and matches the flavor of grilled oysters with a dash of oyster soy sauce. I think it goes well with any dishes. I think it is a little too acidic for me. Tomorrow, I plan to drink it cold with meat dishes.

First try of Tottori sake. The sake is made from strong rice produced in Tottori. It is said to go well with seafood, so I paired it with grilled scallops with butter and soy sauce, which was a great match. The sake is not so strong in the mouth, in a good sense, so the flavors of the food are emphasized and the umami is enhanced. It is good to drink it with food. It is easy to drink even for those who do not like the spicy taste that lingers in the throat and nose. It has a good balance of sweet and spicy, which I like.

Purchased at a department store fair after hearing that it was a Hokkaido limited edition. It has a fruity taste on the palate with a slight acidity and a dry aftertaste that lingers in the nose after drinking. I was told by the store staff that it goes well with all kinds of food, but when paired with yakitori (salt), the sake might be a bit overpowering. I thought it might go better with yakitori (tare), which has a strong flavor. Since it is a draft sake, I will probably try it with tare next week.

Standard souvenirs from a business trip to Tochigi? I bought a bottle of Sentori Classic as a souvenir from a business trip to Tochigi. I drank a glass of it without a side dish before dinner. It has a strong acidity and a moderate sweetness, so it might be better to drink it as a food wine. I had a second glass and afterwards with gyoza (Chinese dumplings) for supper. The fat from the gyoza matched the acidity and sharpness of Sengoku Classic. Personally, I prefer Shichimizu or Houou Mita.

Purchased at a directly-owned sake store near my parents' house. I wanted to buy Sairai, but they didn't seem to sell it there, so I bought Bunraku Junmai, another standard sake. I had it cold, and it was just the right balance of not too fruity and not too spicy. The sake went down a treat with the grilled chicken and seared mushrooms. It has no peculiarities, and I would like to keep it on hand as a regular sake because I never get tired of its taste. I'm sure I'll be back when I go back to my hometown.

Purchased at a local liquor store. I drank it for the first time in about 4 years. It has a fruity aroma like juice. When you drink it, the sweetness is followed by a strong acidity, which is unique. Although I served it as an accompaniment to grilled mushrooms, it is better to drink it as an aperitif. I would like to drink it chilled in summer instead of tropical cocktails.
