Limited edition for the Wind Forest WEEKS event. It was served cold one week after opening. The slight fizzy taste at the time of opening is gone, but the sweetness and umami taste is still the same, and it has a rich and drinkable flavor. I drank the first glass by itself and finished the second glass with bonito tataki.

Purchased at a liquor store near my parents' house. Last week I drank Omachi 50 and enjoyed it very much, so this time I chose Hiyoroshi Aizan 70% 50%. The sweetness is a little subdued, but the umami is strong and there is some acidity, giving it a moderate sense of balance. The sweetness and umami of the rice remains for a while after drinking, so it is more like enjoying the aftertaste than the sharpness. It seems to be more suitable as an aperitif, but I personally prefer the Omachi 50, which has a stronger sweetness, as an aperitif. Today, I had it without an entrée.

This is a limited edition product purchased at Kaze no Mori Weeks in Daimaru Shinsaibashi. Due to budget constraints, we gave up on Yamadanishiki. It was brewed in the spring of 2023BY and bottled in September 2024. When opened, it had a fruity aroma, was slightly carbonated and pleasant to the palate, and was deliciously sweet and umami, with a strong sweetness and umami as if it was made in the middle of the year. It has a gorgeous image with almost no sourness or bitterness. We enjoyed it with scallop sashimi, grilled mushrooms and gizzards, and sipped it while enjoying a long autumn evening. Kaze no Mori is still delicious.

Nanada 1 day after opening the bottle. The impression is not so different from the one right after opening the bottle. The sweetness and umami are very strong, and the acidity and bitterness are moderate, so you can enjoy it like a juice. It is sweet and gorgeous as it is 100% Omachi, and even after one day, it has not oxidized, so it is very tasty. I intended to drink it carefully, but I couldn't control myself and drank it all.

Purchased at a liquor store near my parents' house. The liquor store we visited had many varieties of Nanada, but we chose the Omachi 50 for some reason. It had a fruity aroma and a very strong sweetness, just like a junmai ginjo. However, it also had a strong umami and bitterness, giving it a strong overall flavor. It is more suitable as a light snack than as a mid-meal drink. We enjoyed it with a side of canned mackerel yukke (yukke).

I bought it at a nearby Keihan department store because I had been on a business trip to the Kanto region but did not have time to stop by a liquor store. The label said it was meant to be served at room temperature or hot, but I had it cold. It gave the impression of being dry with a strong acidity. I paired it with eringi mushrooms and eggplant tempura for dinner, but it matched better with a can of Yamato-ni-niki whale that I had afterward.

Stored in refrigerator for one week after opening. It was served cold. The slight fizziness has disappeared and the acidity has increased slightly, but the sweetness of sake is as strong as when opened, even with light appetizers, and it can be enjoyed as an aperitif. ALPHA1 is always available at Daimaru Shinsaibashi, so I am very thankful for that.

Opened 1 week cold. The sweetness and umami taste were stronger than when the bottle was opened, and a slight sourness was also added. It goes very well with food wine, especially with strong flavored meat dishes (I had canned whale meat stewed in Yamato, not cooked).

We purchased two bottles of Kaze no Mori at the "Kaze no Mori Weeks" event at Daimaru Shinsaibashi. One of the bottles, "ALPHA1," was served cold. When opened, it smelled like ramune. In the mouth, it is quite tasty with a slight effervescence and a strong fruity sweetness. It is not too sweet, and the aftertaste is clean and crisp for its sweetness, so it seems to go well with a variety of dishes. The price is very reasonable and the cost is great, I'm glad I bought it!

I opened a bottle I purchased on a business trip to Yokohama. It is the season when the temperature drops a little and hiyaoroshi goes well with it. It was a hiyaoroshi from Omachi, and seemed to be just right for drinking in early autumn. This was the first time for me to taste a sake from Ibaraki Prefecture, but I assumed it would be a sweet sake. In fact, it was less sweet with a strong flavor and bitterness, and went well with both canned whale meat and salmon, making for a delicious dinner. The taste was different from the N-888 and Saku we drank today, and I felt the diversity (swamp?) of sake. I felt the diversity (swamp?) of sake.

Purchased at a local liquor store. I was attracted by the stylish name and the label, which says it is a sake like white wine. It is said to go well with meat and cheese, but unfortunately, today's entrée was grilled hokke and grilled vegetables. The aroma is not very strong. It has a light taste with a strong acidity like white wine. I personally don't like the strong acidity, but it is a good wine to drink during a meal because you can feel the umami of rice in the latter half of the wine.

Purchased at Tokyo Station because of the design of the bottle. I had my first Saku (Junmai Harazake) cold. At first it tasted sweet like a green apple and was slightly carbonated. The sweetness is strong and finishes with a slight bitterness. The fruity and slightly carbonated taste is pleasant and very easy to drink. The taste is too strong for me, so I think it is better to drink it as an aperitif. I ended up drinking it by itself after dinner.

At a liquor store near my parents' house, I bought this sake, which is unusually made from mizu-hashiroshi. The brewing year is 2023, so it is one year old. When opened, it has a sour aroma and a sense of fermentation. When you put it in your mouth, it has the sourness you would expect from the aroma, but it is not that strong, and you feel a rich sweetness and light spiciness like plum wine. It is so thick that it might be tasty even when mixed with carbonated water. It is so strong that I think it would be delicious mixed with carbonated water. I drank it with eringi mushrooms, and it was perfect for such a light flavor as mushrooms. It did not taste like sake, but it gave me a sense of the wide range of flavors that sake can offer.

Purchased on a business trip to Tochigi. I had previously had Gohyakumangoku Nanamizu and liked it, so I chose Omachi this time. I had it cold with grilled chicken. It has a fruity but rich flavor with a strong sweetness and umami. It was not too sweet, so the sake was ready to drink before the yakitori was grilled. Although it is not bad with yakitori, I personally prefer to drink it with light snacks.

Sawaya Matsumoto Moribashira, which was opened last week, is served cold. The carbonation is gone, the sweetness and acidity are strong, and it finishes with the bitterness of alcohol. Sawaya Matsumoto's Moriboshi was opened for the first time, cold. It seems to have been shipped after about a year of production and bottling. It is slightly carbonated and has a nice mouthfeel. Not too sweet, not too spicy, just right for my personal taste. It has a certain amount of sweetness, but it is not too sweet, and it has a good flavor. The balance of flavor is excellent. It is a bit pricey, but I would buy it again if I could find it. I'm looking forward to drinking it next week.
