I opened a bottle I purchased on a business trip to Yokohama. It is the season when the temperature drops a little and hiyaoroshi goes well with it. It was a hiyaoroshi from Omachi, and seemed to be just right for drinking in early autumn. This was the first time for me to taste a sake from Ibaraki Prefecture, but I assumed it would be a sweet sake. In fact, it was less sweet with a strong flavor and bitterness, and went well with both canned whale meat and salmon, making for a delicious dinner. The taste was different from the N-888 and Saku we drank today, and I felt the diversity (swamp?) of sake. I felt the diversity (swamp?) of sake.

One week after opening. The acidity was strong right after opening the package, so it didn't seem too strange. When I drank it by itself, it became mellower and tastier than after opening the package (personal impression). I think it became mellower and tastier (personal impression). Since it is similar to white wine, I drank it with salmon sashimi, chicken with mayo, and canned whale meat. It goes very well with them.

One week after opening. It has become much more sour and almost lost its sweetness, which is not good for me personally. The feeling I had when I drank it right after opening the package was gone. I had kept it in the refrigerator, but I could drink it without any food.

Purchased at a local liquor store. I was attracted by the stylish name and the label, which says it is a sake like white wine. It is said to go well with meat and cheese, but unfortunately, today's entrée was grilled hokke and grilled vegetables. The aroma is not very strong. It has a light taste with a strong acidity like white wine. I personally don't like the strong acidity, but it is a good wine to drink during a meal because you can feel the umami of rice in the latter half of the wine.

Purchased at Tokyo Station because of the design of the bottle. I had my first Saku (Junmai Harazake) cold. At first it tasted sweet like a green apple and was slightly carbonated. The sweetness is strong and finishes with a slight bitterness. The fruity and slightly carbonated taste is pleasant and very easy to drink. The taste is too strong for me, so I think it is better to drink it as an aperitif. I ended up drinking it by itself after dinner.

One week after opening. It tastes sweet and rich like a plum wine liquor. The taste does not change that much from when the package was opened. Unlike the recent trend of fruity and light, it has a rich flavor. I like to drink it in small sips.

At a liquor store near my parents' house, I bought this sake, which is unusually made from mizu-hashiroshi. The brewing year is 2023, so it is one year old. When opened, it has a sour aroma and a sense of fermentation. When you put it in your mouth, it has the sourness you would expect from the aroma, but it is not that strong, and you feel a rich sweetness and light spiciness like plum wine. It is so thick that it might be tasty even when mixed with carbonated water. It is so strong that I think it would be delicious mixed with carbonated water. I drank it with eringi mushrooms, and it was perfect for such a light flavor as mushrooms. It did not taste like sake, but it gave me a sense of the wide range of flavors that sake can offer.

Purchased on a business trip to Tochigi. I had previously had Gohyakumangoku Nanamizu and liked it, so I chose Omachi this time. I had it cold with grilled chicken. It has a fruity but rich flavor with a strong sweetness and umami. It was not too sweet, so the sake was ready to drink before the yakitori was grilled. Although it is not bad with yakitori, I personally prefer to drink it with light snacks.

Hello, Jay & Nobby. I remembered your previous recommendation, so I tried Omachi. It was sweeter and more delicious, so I ended up drinking the whole bottle in one day. It's really good shichimizu! Next, I'm going to try Aizan.

Sawaya Matsumoto Moribashira, which was opened last week, is served cold. The carbonation is gone, the sweetness and acidity are strong, and it finishes with the bitterness of alcohol. The sweetness was stronger when the bottle was opened. The impression was that it was an aperitif, but it can also be served as an in-between-dinner drink. I served it with grilled eringi mushrooms, and the balance of flavors I felt when I drank it was wonderful.

Urakasumi was opened last week and served cold. The rice flavor has not changed since the opening. The alcohol taste is not too strong for me personally, so the cosmetics are quite good. I grilled some mushrooms and waited for them to be served, but I finished them before they were cooked. It was a very tasty sake.

Sawaya Matsumoto's Moriboshi was opened for the first time, cold. It seems to have been shipped after about a year of production and bottling. It is slightly carbonated and has a nice mouthfeel. Not too sweet, not too spicy, just right for my personal taste. It has a certain amount of sweetness, but it is not too sweet, and it has a good flavor. The balance of flavor is excellent. It is a bit pricey, but I would buy it again if I could find it. I'm looking forward to drinking it next week.

Purchased at a local supermarket. I was looking for sake that can be stored at room temperature because there is no room in the refrigerator. It was at room temperature. It is a junmai sake with a rice polishing ratio of 65%, so the sweetness is weak, but the umami of the rice is strong, making it a good mid-meal sake. It is a dry sake for a mealtime drink and seems to go well with anything, but personally, it is a sake that can be enjoyed without a side dish and is a good value for money. I am glad that we can now buy good food sake at supermarkets these days.

Purchased at a liquor store near my parents' house during a summer trip home. Cold. It has a sweet apple-like aroma. When you drink it, you can feel the slight carbonation and the sweet and umami taste spreads strongly throughout your mouth. At the end, it has a weak bitterness, but the sweetness is strong and the sharpness is not so strong. It is good to be able to enjoy the change in taste of sweetness, umami, acidity, and bitterness with each sip! That's all I can say. For me, it is a luxurious "juice for adults" that allows you to enjoy the sweetness of rice, and I imagine it as an aperitif. It's so good that I drank 360 meters of it with chocolate as a side dish before I knew it.

Cold 5 days after opening. The sweetness that could not be detected immediately after opening the package is now felt, followed by sourness and bitterness. I personally feel that it tastes even better after a little time after opening the package. I had it with a dinner of scallop sashimi and mapo tofu, and it was still delicious. I don't find it fruity, so I think the best way to drink it is with a meal.

Purchased at a liquor store near my parents' house. It was recommended to me by the owner of the liquor store as an evening drink during my trip home for the Bon Festival, so I bought it immediately. At first I thought it might be an aperitif because of its weak carbonation and strong sweetness, but it became more umami and acidic than sweet and turned into a mealtime sake that goes well with salted squid and sashimi. It is a strange sake that is suitable for salted squid and sashimi. According to the owner of the sake shop, this sake was made by a young master brewer. It is an interesting sake with both sweet and spicy flavors, and since it is a rare brand, I will repeat my purchase the next time I see it.

Drinking Izumo Fuji at home, which I had purchased on a business trip three weeks ago. I was looking for something dry, and the store staff recommended it to me. As the name "super dry" suggests, it is not sweet or fruity, but has a strong acidity and a nice sharpness after drinking. There is no unpleasant alcohol residue at all, and the slight feeling of it escaping through the nose is pleasant. It was a good choice with canned mackerel and scallop sashimi. This sake is perfect with strong flavored dishes.

One day after opening the bottle, I had it with onion with tuna mayo and scallop sashimi as a side dish. The bitterness and acidity that I felt yesterday were mellowed, and the sweetness and umami became stronger. After a day in the bottle, it seems to have reached a balance that I like. It is a perfect accompaniment for seafood, and both sake and appetizers went well with it. It is extremely tasty.

Purchased on a business trip about 3 weeks ago. I kept it at room temperature for about a week after purchase, then kept it in the refrigerator, but maybe the taste has changed. I kept it at room temperature for about a week after purchase and then kept it in the fridge. The aroma is weak. The mouthfeel is slightly carbonated, with sourness and bitterness coming first, then gradually sweetness, with a moderate umami impression. The acidic base gives it a nice sharpness at the end. It is not very fruity, so it is good for drinking while eating.

Purchased for home drinking. This is the first time I have tasted GANKI. As soon as you put it in your mouth, you get the impression of junmai ginjo-like sweetness, with umami coming later. As the sipping progresses, the umami of the rice becomes stronger than the sweetness, and it can be served alone or as an in-between-dinner drink. It is easy to drink and delicious. I opened the bottle at an online drinking party, and the 720 ml bottle was quickly consumed.

Kido already opened a week ago. After a bath on a very hot night, I was thirsty, so I drank it cold and without snacks. The aroma was weaker than when the bottle was opened, but the fruity, sweet, and delicious taste I felt when drinking it was higher than when the bottle was opened. The change in flavor is one of the pleasures of sake. I will repeat this next time I find it.
