One day after opening the bottle, I had it with onion with tuna mayo and scallop sashimi as a side dish.
The bitterness and acidity that I felt yesterday were mellowed, and the sweetness and umami became stronger. After a day in the bottle, it seems to have reached a balance that I like. It is a perfect accompaniment for seafood, and both sake and appetizers went well with it. It is extremely tasty.
