I kept it at room temperature for about a week after purchase and then kept it in the fridge. The aroma is weak. The mouthfeel is slightly carbonated, with sourness and bitterness coming first, then gradually sweetness, with a moderate umami impression. The acidic base gives it a nice sharpness at the end. It is not very fruity, so it is good for drinking while eating.
