A bottle given to me by my predecessor, who recently reached retirement age. He said it was a thank-you for the 3 kg of new rice he delivered every year during his tenure, which he called a "taste test. Rice has become sake! The nose has a fruity ginjo aroma, but the fragrance is subdued. The mouthfeel has a gentle, round sweetness and a satisfying umami. The fruity feeling that passes through the nose and the mild acid bitterness that comes at the end disappear slowly and gently. I had an image that Houyo was not my favorite, but this is good! I can say that when it comes to high-class wines, this one is genuinely tasty. Thank you very much for the sake!

Cold chrysanthemum procured during the recent spring equinox In the rain, I traveled about 200 kilometers within Miyagi Prefecture while visiting graves. It had been a while since I bought a bottle of Kangiku, so I was a bit nervous and couldn't resist opening the bottle! Moist and fruity topping aroma! The mouthfeel is also moist and luscious, with plenty of follow-up flavor! The aftertaste is full of fruitiness, and is finished off with a moderate acidity and bitterness. Ahhh, it's Aizan, isn't it? The sweetness is reminiscent of cotton candy. The acidity is also restrained, so it is not as sweet and acidic as the typical Kangiku. Masugiuru~! I bought it at Kazuya in Osaki City. Osaki City is where my paternal grandparents are buried and where I went to high school. I had lunch at Kamahira Ramen, my favorite restaurant since high school. I ordered my usual "Jar Jar Men" and they added cold rice as a service. It may not look like much, but the ramen never gets cold until I finish it, so it makes me feel happy and full. It was a great meal for both of us!

The last step of the banquet is one step oneself It is a hazy memory, but it has a petit gas feeling, a hint of sweet acidity, and a light nigori flavor and richness. Our department head's favorite Manjyukagami A former colleague of mine (from Niigata) told me that it was a perfect match for our department head, who loves dry sake, so he ordered some and brought it to us. Although it is a honjozo, it is skillfully brewed without giving too much of an alcoholic taste. It has a moderate sweetness, umami, and a good sharpness, and you can faintly feel the presence of good quality alcohol. Although it is not a major brand, it was very tasty! The top-tasting aroma is a fruity ginjo aroma, just like the previous reputation. The mouthfeel is also fruity with a moderately sweet and light flavor! The acid bitterness in the aftertaste is not so pronounced, so there is a gentle sharpness. Fruity! I understand it well. It is indeed delicious, but I would prefer a little more depth of flavor. I want to drink it all the time, but I'm at odds with my desire and the amount left in the glass. Ahhhh, I'm so happy😄! It's time for the train, so we're done for the night. When I looked at the bill, it was 2,000 yen! I said, "Isn't it funny?" and my grandma said, "Because you only ordered two drinks, right? I said, "That's crazy! That's horrible! Grandma Mom is also having a great time while sipping sake! Next, we ordered Izumikawa! It's a light, refreshing, umakuchi sake with a sharp, clean taste. I'd like to drink this sake all the time, but it's not sold in Miyagi Prefecture. While talking with my mom, she told me that there is a liqueur made by the Takagi Sake Brewery, which is also very hard to find. For some reason, they have it at the store. Last weekend was the farewell party for the March personnel. The sake on the all-you-can-drink menu was only labeled "sake (room temperature)," which sounded a little yucky. The staff told us that they have several kinds of sake, including Collage, Fukkomachi and Kiku no Tsukasa. The first one is Kuraku. Let's see... The first one is Collage. The first one is a very good one! Bottled for 3 years in 2021 and left in a regular refrigerator for 2 years. It's a very good wine! But still, Collage is still Collage. It's still delicious! We will drink Kiku no Tsukasa next time. We will be back soon!

End of last year A friend of ours who lives a double life in Hiroshima and Sendai gave us these coho as a year-end gift. It's hard to buy them in Sendai, so it's a nice present for me. Now, let's have a taste! The top aroma is a faint scent of ginjo. The mouthfeel is dry, but has a gentle sweetness that is typical of Aizan, and a satisfying umami taste. After the slightly sake-like aftertaste passes through, it is finished off with a gentle acidity and bitterness. I was looking for an inexpensive Junmai Yongbottle. I found this one. Fukunotomo Nojisama Series ¥1380 The bottle is wrapped in paper and various thoughts are written on it. At a quick glance, it looks like it is filled with a stench, but don't underestimate it just because it is inexpensive! The citrusy aroma is a little bit sweet, with a hint of chili-chili-gas! It is a sweet and acidic sake with a chiri-chiri-chiri-gassiness and a strong umami taste. It is a mildly acidic, bitter and astringent sake with a clear and crisp umami taste. I was expecting a classical taste when I heard that the master brewer is 77 years old, but it is a very modern and wonderful taste! I am sure I will repeat the experience. I was invited by people in Yamagata while I was there on business. When I told them I liked Japanese sake, they offered me Asahitaka! Perks or virtues? Yes~! Fruity and very horse-like! This is it! A bottle with a label that just clicked with me. As a follower of the blue giant star, I can't help but reach for it when I see blue on the label. First, let's start with the supernatant. The citrus-like scent of the upper part of the bottle is fresh and crisp! It is light, sweet and acidic, and I wondered whether I should continue drinking it, but decided against it because I didn't want only the lees to be left at the end. The next one is "orikarami" (orizumi). Although the aroma is weaker, the light and lively sweet and acidic aroma is quickly followed by umami and richness, and the flavor becomes thicker. The acid bitterness at the end is also clear and lingers for a long time. It is very satisfying. Try heating it to normal temperature. The aroma of slightly cooked rice and the balance of sweetness, umami, acidity, and bitterness are good! Delicious! There is also a little piquancy left. It's a good balance of sweetness, umami, acidity, and bitterness! I had a hard time deciding between this and Kaiun's Omachi, but both were probably the right choice. Last weekend, I hung around the town of Shichigahama. We enjoyed the new seaweed festival, and although we did a bit of fishing, the bite was not so good at this time of year with the low tide, so we had a very productive Sunday. We stopped by a liquor store owned by a former junior colleague of mine. The aroma of the top shelf is a rich ginjo aroma. The mouthfeel is dry, as is typical of Kochi sake, but the umami is also present. It has a slight sake-like aftertaste and finishes with a mild acidity and bitterness. When heated, the rice aroma becomes more pronounced, giving it a more sake-like flavor. The bitter taste at the end is also a nice mature taste. Thank you very much for your kindness!
