This is the first Whale Wave and there are not many submissions, so it is an unknown quantity. The liquor store only described it as fruity. The top-tasting aroma is a fruity ginjo aroma, just like the previous reputation. The mouthfeel is also fruity with a moderately sweet and light flavor! The acid bitterness in the aftertaste is not so pronounced, so there is a gentle sharpness. Fruity! I understand it well. It is indeed delicious, but I would prefer a little more depth of flavor. I'd like to drink this sake all the time, but it's not sold in Miyagi Prefecture. Last weekend was the farewell party for the March personnel. The sake on the all-you-can-drink menu was only labeled "sake (room temperature)," which sounded a little yucky. The staff told us that they have several kinds of sake, including Collage, Fukkomachi and Kiku no Tsukasa. The first one is Kuraku. Let's see... The first one is Collage. The first one is a very good one! Bottled for 3 years in 2021 and left in a regular refrigerator for 2 years. It's a very good wine! But still, Collage is still Collage. It's still delicious! We will drink Kiku no Tsukasa next time. We will be back soon!

End of last year A friend of ours who lives a double life in Hiroshima and Sendai gave us these coho as a year-end gift. It's hard to buy them in Sendai, so it's a nice present for me. Now, let's have a taste! The top aroma is a faint scent of ginjo. The mouthfeel is dry, but has a gentle sweetness that is typical of Aizan, and a satisfying umami taste. After the slightly sake-like aftertaste passes through, it is finished off with a gentle acidity and bitterness. I was looking for an inexpensive Junmai Yongbottle. I found this one. Fukunotomo Nojisama Series ¥1380 The bottle is wrapped in paper and various thoughts are written on it. At a quick glance, it looks like it is filled with a stench, but don't underestimate it just because it is inexpensive! The citrusy aroma is a little bit sweet, with a hint of chili-chili-gas! It is a sweet and acidic sake with a chiri-chiri-chiri-gassiness and a strong umami taste. It is a mildly acidic, bitter and astringent sake with a clear and crisp umami taste. I was expecting a classical taste when I heard that the master brewer is 77 years old, but it is a very modern and wonderful taste! I am sure I will repeat the experience. A bottle with a label that just clicked with me. As a follower of the blue giant star, I can't help but reach for it when I see blue on the label. First, let's start with the supernatant. The citrus-like scent of the upper part of the bottle is fresh and crisp! It is light, sweet and acidic, and I wondered whether I should continue drinking it, but decided against it because I didn't want only the lees to be left at the end. The next one is "orikarami" (orizumi). Although the aroma is weaker, the light and lively sweet and acidic aroma is quickly followed by umami and richness, and the flavor becomes thicker. The acid bitterness at the end is also clear and lingers for a long time. It is very satisfying. Try heating it to normal temperature. The aroma of slightly cooked rice and the balance of sweetness, umami, acidity, and bitterness are good! Delicious! There is also a little piquancy left. It's a good balance of sweetness, umami, acidity, and bitterness! I had a hard time deciding between this and Kaiun's Omachi, but both were probably the right choice. We enjoyed the new seaweed festival, and although we did a bit of fishing, the bite was not so good at this time of year with the low tide, so we had a very productive Sunday. We stopped by a liquor store owned by a former junior colleague of mine. The aroma of the top shelf is a rich ginjo aroma. The mouthfeel is dry, as is typical of Kochi sake, but the umami is also present. It has a slight sake-like aftertaste and finishes with a mild acidity and bitterness. A gift from Mr. Sashiu I have drunk Hana Yuu many times, but I had not experienced Ryoseki and Suiyu. The top-tasting aroma is a mild ginjo aroma. It is a delicious sake with a classical yet modern atmosphere. Speaking of Ryoseki, I remember a TV commercial I saw when I was a kid. A black man who looks like a musician comes out and sings in a strange tone and in broken Japanese, "Umamakuyatahi - umamai sake - riyo zeki -". I liked that strange song surprisingly. Grandma Mama, last taste of Ichinozo. I didn't expect to be able to drink it here since I failed to buy it again this year. It is fresh and fruity, as you can tell from the aroma! The sweetness and umami are refreshing, and the acidity and bitterness from the sweetness and umami are sharp. So it was good this year, too. The old lady seems to be quite a Sake lover, and there are Jikkyo, Kuraku and Kuroryu in the fridge, which is hard to believe that it is a snack bar at the end of the street! The bill was 3000 yen including karaoke! I wore my blazing denim jeans to the party. I'll take a picture of the denim sometime. Hi, Mom! I'll definitely go again! Thanks for the food!

Last weekend was a farewell party for the previous boss who is retiring. The first round of the party was full of dishes. The sashimi set menus for lunch are very popular, and we were treated to some great sashimi. Then, the second party was a snack bar. It was a snack bar owned by a mother, or rather an old lady, and the all-you-can-drink sake was a man's dream. It was a limited brand of sake made by the famous Hirakou Sake Brewery in Hidakami. Grandma's mom uses it because she likes the name. Although it is a honjozo, it has a refreshing sweetness and umami flavor without feeling too much of an alcoholic taste. As one would expect from Mr. Hirakou. It was easy to drink without the unpleasant bitterness of alcohol. It is a good sake! Thank you for the sake!

I think it is not usually sold in Sendai area, but I found it at a supermarket in my neighborhood. Somehow I was able to get it there. It was the end of the sale period, but there were still a few bottles left thanks to the slightly high price of 2,000 yen for a four-pack of honjozo, which most people who don't know about it probably wouldn't pick up. This is a bottle of unfiltered, unfiltered, unfiltered, unfiltered, unfiltered, unfiltered sake. Let's enjoy it with all due respect! The aroma of the top is of maturity (koji?). It has a very strong and strong aroma. The mouthfeel has a clear, light sweetness, a slightly heavy rice flavor, and a sharp sake-like sensation.
