We had this at Echigoya in Fukushima City in November. It has a sweet aroma like flowers rather than fruits such as grapes and melon. The moment you put it in your mouth, the rich flavor spreads out. It has a thick, robust body with a delicate feel. It became even more pronounced when warmed to lukewarm. We were surprised that this was a junmai ginjo. That is my impression. It is a delicious sake.

Junmai sake brewed with Haenuki produced in Sakata Indicated 18% alcohol by volume. When the bottle was uncorked, an alcohol smell rather than a brewing aroma came up. In the mouth, the alcohol passes through the nose with a strong dry acidity rather than the sake-like flavor of the rice. The impression is a bit harsh. Three days later, it rounded out a bit, and the rice-derived umami and mild aroma emerged. We received this from an important person in Aomori City. In August, the bottle was opened cold. Mild aroma reminiscent of white peaches. Full-bodied, but with a beautiful mouthfeel. It also goes down the throat nicely and lightly. As expected of Toyobai Daiginjo! It was a delicious sake to drink at dusk on a summer evening to get rid of the heat.

I recently received this as a Father's Day commemoration from my daughter and her husband. It is a junmai ginjo brewed by Kenkunichi using "Sake Mirai" sake rice developed by Takagi Shuzo. Junmai Ginjo brewed by Kenkunichi The aroma is subdued, with a fruity image of lychee and green apples. In the mouth, the flavor of rice spreads gently and smoothly. It ends with a slight bitterness and a long lingering aftertaste. It is a delicious sake that is typical of Kenkunichi, which brews sake with the individuality of the rice used to make it.

Aikoku" sake rice from the Meiji era, grown by contract farmers in the local Murata-machi area, has been reprinted. Kenkunichi has the image of a sake brewery that values the flavor or depth of the rice. This sake also has the distinctive characteristics of carefully brewed sake rice. I tried it at room temperature to lukewarm, and I felt the depth and breadth of flavor at each temperature range. Early summer greenery and fresh breeze... We enjoyed it while remembering the thoughts of our predecessors, going back to the Showa period and even to the Meiji period.

At Echigoya in Fukushima City There were three Hanamup labels on display. I got this one, "Omachi". It has a mildly sweet aroma on the nose. When you put it in your mouth, the soft umami expands and you feel the sweetness like ripe white grapes. It has a fresh nuance that cuts through the throat.... Sake-no-wa: As you can see from everyone's evaluation, this is an excellent sake.

It was a gift from my wife for my birthday celebration. It is a daiginjo made from Iwate Prefecture's Yui no Kou polished to 40%. The aroma is sweet like ripe muscat.
