The first Shizenigo you will ever have.
A light, modern sake. The creamy acidity and the sharpness, sweetness, and umami in the aftertaste are irresistible.
I want to drink this sake again!
We had it at the after-party. It's been a long time since I've had a wind forest.
Transparent and a little yellowish. Slightly gassy. A faint fruity aroma. When you put it in your mouth, you can feel the volume of flavor with a refreshing aroma that passes through your nose. Then there is acidity.
Delicious.

As soon as I put it in my mouth, I felt the sweetness spreading, but then the sourness overtook it.
After that, I felt a little bitterness and sake-like umami.
The aftertaste is rather peculiar and the bitterness remains a lot.
It is very smooth on the palate.
I thought it would be delicious paired with tempura or something fatty but not too rich in flavor 🍶.
I would like to be able to describe in detail what kind of fruit I felt when I write this kind of comment, but I don't know how to practice...
So far I can only taste melon and muscat flavors on my tongue... lol
I want to be able to feel apples...

Slightly cloudy appearance.
As it looks, the mouthfeel is thick and soft.
The taste at the moment of putting it in the mouth is dry and refreshing (or is it the alcohol?).
However, after that, the sweetness is also fully felt, which is somewhat strange.
The aftertaste is refreshing and disappears.

Refreshing aroma typical of daiginjo-shu.
It has a nice carbonation and a pleasant texture on the tongue.
However, the acidity was rather strong...
After the sweetness, the tangy sourness seems to wipe it out.
The aftertaste is slightly sweet.
I guess I personally don't like sake with strong acidity...
I wonder if the acidity would be reduced if the rice flavor was stronger...

Ko no Tsukasa" from Shibata Sake Brewery located in Koda Town, Aichi Prefecture.
I found out that this Yumesansui is made from sake rice grown in a production area located 20 minutes by car from the brewery (sake is a great way to experience the local flavor).
I was curious about this sake because I found it at a liquor store near my house...
I was surprised when I drank it!
It's so good!
The color is slightly yellow.
I detected a discreet fruit aroma.
The moment it enters the mouth, a refreshing, unctuous fruitiness spreads!
While the fruitiness remained, there was no peculiarity, probably due to the low alcohol content, and the sake's rice-like umami was also clearly felt.
I tried it with a variety of other sake, but it was not at all inferior to the Jyushiyo.
I personally felt it was even better than Jyushiyo...
I know it's presumptuous of me to compare them, but...

Miyazumi Meizumi brewery, also famous for 寫樂
The rice used is Yamadaho, a rare variety of sake rice known as the mother of Yamada-Nishiki.
The aroma is gentle. The aroma is gentle, with a hint of fruit... (but I don't know what kind of fruit it is...)
When you put it in your mouth, a gentle sweetness and fruity freshness spreads.
Soon after, a mellow and rich flavor comes in, followed by a sharp acidity that disappears at the end.
The aftertaste is also refreshing.
This is the kind of sake that is full of flavor...
It was a delicious sake that was worth drinking 🍶.
At an underground bar area in Fushimi.
Drank for the first time.
Polishing ratio 50%.
Hmmm!
The first thing you feel is a tingling, fizzy sensation!
Then comes the sweetness and slight sharpness.
It's a good one!
I was drunk, so I'll hold off on my favorite for now! It was delicious!

Hmmm.
I've had other kinds of Takashi no Tsukasa, but I think the strain is similar.
The strain means that it seems sharp, but it is actually sweet and slightly carbonated. (personal opinion lol)
It was delicious, but I was drunk, so I put my favorite on hold.
I will try it again next time when I am sober. But it was delicious. That's for sure.
I drank Kuheiji for the first time.
I wanted to drink the sake with the golden letter label, but there was none!
It tasted...!
It was delicious enough.
It has a strong sweetness!
But it had a slight fizziness.
The sharpness is not so strong.
I think it is very easy to drink.
I was drunk, so I would like to buy a bottle personally and drink it before re-evaluating!
No, it was more than good enough, though!
My favorite raw sake.
Mmmm. Naturally, it's good.
It has a slight carbonation and a slight sharpness at the end of drinking.
This is a sake that does not choose the person who drinks it.
Thank you very much for the drink.
The fourteenth generation needs no explanation.
When you drink it for the first time, the sweetness is followed by a sharp taste! It is of course very tasty, but on its own, it is not so special...?
Of course, it is very tasty, but on its own, it is not so special...? But then....
But when you compare it with other sake (high quality sake), you can see that it has just the right amount of sweetness and aftertaste.
This is...
The more you drink, the more you will understand the type of deliciousness.
I want to drink it again.

Mmmm.
It is delicious.
I drank Sharaku for the first time.
The taste is so good that you will never get tired of drinking it.
It was delicious enough.

Finally, I was able to drink the sake I had longed for...!
The first sip is very sharp and fresh!
There is a slight sourness, but it quickly disappears.
There is not much alcohol in the mouth.
However, I feel a warmth in my chest, and that's where I feel the alcohol.
Overall, the taste was well balanced.
I compared it with another Junmai Daiginjo-shu, but I felt a strong sweetness.
Anyway, it was great...
No wonder it has a good reputation!
But I thought the Miyakanbai Nakadori was also a pretty good match.
I'll have to drink some other Jyushidai to compare the tastes...
This is a noble sake from Masamune Instrument.
This one has a fresh acidity and juicy sweetness.
It has the sweetness of kijoshu, but the acidity keeps it from being too sweet.
I felt the taste was similar to that of the Shinmasa series.
The sourness of white malted rice and the sweetness of citrus fruits stand out.
The sweet and sour taste is a characteristic of this brew.
It has a complex flavor, perhaps due to the wooden vat brewing process,
The aftertaste is bitter and herbal.
This is a cup with a juicy and elegant acidity.
It is said that it is made in a wooden vat,
The alcohol content is kept low,
It is easy to drink and goes down easily among Shinmasa.
