__________ Daiginjo Rice polishing ratio 40 Alcohol 17 Sake meter degree -1 Personal Rating: ★★☆☆☆☆☆ Impression The color is clear and transparent. The aroma is light with a hint of fruitiness. The mouthfeel is smooth, but the umami of the rice and the alcohol taste spread quickly, giving it a sharp, dry taste. The whole tongue becomes warm and the aftertaste is a little alcoholic and lingers like sake. I saw a review that said it was sweet, but personally I felt the umami and dryness prevailed over the sweetness 🤔. (I drank it cold after that and it became slightly sweeter. (I then drank it cold, and it became slightly sweeter, but still covered by the alcohol feeling that comes afterwards). It went well with strong flavored dishes such as soup and fried food rather than light dishes such as sashimi!

__________ Junmai Ginjo Nigori Sake Rice polishing ratio 55 Alcohol 15 Sake degree -1.0 Personal evaluation: ★★★★ Impression A citrusy aroma with a slight riceiness. The moment it enters the mouth, a strong gassy sensation is felt and the citrus flavor and sweetness spreads. The mouthfeel is silky, but the gasiness is so strong that it is almost like drinking sparkling wine! The aftertaste is also pleasantly gaseous and gently sweet... I thought nigori sake was supposed to be a rice-like sake, but the fresh taste makes it drinkable! I'd rather drink it by itself than as a food sake 🍶.

__________ Junmai Ginjo Rice polishing ratio 55 Alcohol 15 Sake degree: Undisclosed Personal evaluation: ★★★★ Impressions This is the first sake of the new year and is labeled with the zodiac signs of the two hares! I bought it just like buying a packet! The aroma is light but fruity. In the mouth, it has a tangy gasiness and acidity that is typical of nama-shu. It has a clear, dry, refreshing taste, but you can also taste the umami derived from the rice. The aftertaste is also slightly gaseous. This is the best sake for a meal that goes well with both oily food and refreshing soup stock! As one would expect from Nito, it was a well-balanced and easy-to-drink sake.

__________ Special Junmai Sake Rice polishing ratio 60 Alcohol 15 Sake degree: Undisclosed Personal Rating: ★★★☆☆☆☆ Impression It is said to be a blend of junmai sake and sake stored in oak barrels. Therefore, the aroma is already whiskey! The mouthfeel is slightly alcoholic, but the chocolate sweetness spreads immediately. The aftertaste has a whisky-like oak aroma. I was surprised that this was also sake! It was the first time I tasted this and it gave me a strange sensation. I don't think it would be out of place to call it whiskey.

__________ Junmai Ginjo Rice polishing ratio 60 Alcohol 15 Sake degree: Undisclosed Personal evaluation: ★★★★ Impressions This sake won first place in the Junmai Ginjo category of the Sake Competition 2024! I drank it after drinking Refrain, so I had even higher expectations. Pale fruit aroma. Pear-like sweetness spreads Tangy acidity on the tip of the tongue But the sweetness and richness spread to cover it. After that, it disappears quickly while the richness remains. The mouthfeel is a little watery, but the aroma is very fragrant. The Masamune series of instruments is a real treat!

When you drink it, you will find it to be dry and light! The alcohol taste comes first in the mouth, followed by a light spread of umami. Slightly watery, with little acidity and little umami. It is very light from start to finish. Like Hakurakusei, it was interesting to see how it enhanced the umami when served with sashimi.

__________ Junmai Ginjo-shu Rice polishing ratio 50%. Alcohol 16 Sake Degree +4 Personal Rating: ★★★☆☆☆☆ Impression A light taste that is typical of Hakurakusei, the ultimate food sake. Although it has a strong alcohol taste, it has a pineapple flavor. It has a strong alcohol taste, but it has a slight pineapple flavor to it. The taste was alcohol, sweetness, bitterness, and spiciness, in that order. The aftertaste is slightly bitter, but finishes refreshingly. When drunk by itself, it seemed like a bland sake, but when paired with sashimi, it brought out the flavors of both the sake and the ingredients, making it an interesting sake to pair 🍶.

Tastes like banana juice made into sake! Slightly acidic, but it mixes nicely with the banana flavor that spreads throughout the mouth. Easy to drink with a gentle aftertaste. I would buy it again if I could find it, but when I looked it up, I found out that it was a test brew, so it was shipped in limited quantities... too bad...

I took a sip with high expectations from the Sekiya Brewing Company, which makes Sora. Quite fresh...! It has a strong sweetness but no peculiarity at all! The fresh taste that is typical of nama-shu spreads! Too good! I will buy it next time I see it 🍶.

__________ Junmai Daiginjo Rice polishing ratio 39 Alcohol 15 Sake degree: Undisclosed Personal evaluation: ★★★★ Impression Aroma: Subdued ginjo aroma. Compared to Kangiku 39, which has the same rice polishing ratio, it is not as dry and light, but it is quite refreshing. I thought the taste was quite different depending on whether it was hi-ire or not... When you put it in your mouth, it has a clean sweetness that is typical of Junmai Daiginjyo, and then it goes dry and goes away. There is no bitterness because of the 39 polished rice. Compared to other Junmai Daiginjos, the umami and sweetness are stronger... You can feel the acidity, but the sweetness prevails. After that, it's a bit dry. After swallowing, the lingering taste on the back of the tongue and in the throat is rather long.

Refreshing citrus aroma. The sweetness spreads in the mouth with a slightly effervescent taste. The 39% polished rice ratio means that there is no cloying taste. While the sweetness is strong, there is also a strong alcohol taste, which is a direct taste unique to nama-shu. The sweetness is also slightly citrusy. The aftertaste is a mixture of sweetness and bitterness rather than a clean aftertaste. It was a good sake with a little sourness and a juicy sweetness from it 🍶.

__________ Kijoshu Rice polishing ratio 60 Alcohol 13%. Sake degree: Undisclosed Personal evaluation: ★★★★★ Impressions This is my second kijo sake after Shinmasa Yonotori. Refreshing aroma with a hint of rummy. I could feel the sweetness from the aroma. It's so good... The moment I put it in my mouth, I knew it had surpassed the Yonotori lol! The taste is juicy sweet with a hint of apple. The mouthfeel is slightly mellow, probably because it is a kijo sake. Slightly acidic on the back of the tongue, but with a refreshing aftertaste. It was the kind of sake that made me want to guzzle it down! If I see it again, I will definitely buy it.

When you put it in your mouth, you can feel the black vinegar flavor just like the aroma. After that, sweetness and umami spread. The mouthfeel is as light and refreshing as water. The aftertaste is slightly sour, but the alcohol refreshes the palate. When it reaches room temperature, the umami and richness become more pronounced.

__________ Kijoshu Rice polishing ratio: Koji: 60%, Kake: 60 Alcohol: 13%. Sake degree: Undisclosed Personal evaluation: ★★★★ Impressions First Shinmasa, first Kijo sake! I can't believe I got to drink this sake...! I drank it with a lot of excitement. Yum 😭 Refreshing sweetness like ramune spreads Pale slightly carbonated taste... followed by a weak acidity and a slight bitterness... The aftertaste on the palate is good too! Slightly thick on the tongue. I wonder if this is kijo sake... This is a different genre of sake from the ones I've had in the past. I guess you could say it's a sake to be enjoyed by itself rather than to be paired with food... It was so easy to drink that I would drink it again and again if I had the money! However, I don't think I would have given it 5 stars if I had expected too much... I'd like to try it when it's in better condition and I'd like to try another series of Shinsei 😭. I'd like to try another series of Shinsei 😭 I'm sure my impression will change once I drink the freshly opened one...

Sake degree: Undisclosed Personal Rating: ★★★☆☆☆☆ Impression As soon as I put it in my mouth, I felt the sweetness spreading, but then the sourness overtook it. After that, I felt a little bitterness and sake-like umami. The aftertaste is rather peculiar and the bitterness remains a lot. It is very smooth on the palate. I thought it would be delicious paired with tempura or something fatty but not too rich in flavor 🍶. I would like to be able to describe in detail what kind of fruit I felt when I write this kind of comment, but I don't know how to practice... So far I can only taste melon and muscat flavors on my tongue... lol I want to be able to feel apples...

It has a nice carbonation and a pleasant texture on the tongue. However, the acidity was rather strong... After the sweetness, the tangy sourness seems to wipe it out. The aftertaste is slightly sweet. I guess I personally don't like sake with strong acidity... I wonder if the acidity would be reduced if the rice flavor was stronger...
