2021BY Sogapale a year ago. Wine-like acidity and a little bit of a schwash, with a bitter and umami aftertaste. It's no different from this year's Sogapale! That's my impression. It's sad that I can't compare it with the current taste of last year. But it is delicious. I want to eat some saury. Only at Kigawaya Aizan 100% pure sake + Polishing 45 is very limited and only available at Kigawaya. The head aroma is a gorgeous, mature aroma of pineapple and lychee. There are few hints of fragrance, sweetness, and a bitterness that calms the taste. The sweetness is not the typical Aizan sweetness, but it is restrained, but still has the atmosphere of Aizan! Even though it is restrained, it is still juicy! The sweet and bitter are in harmony with each other, and it is a little thrilling. It's like spring in the second week, or the first time for adults! It was certainly worth the trip to Yamagata!

While watching Atena Yoru No. 1 is a spicy, refreshing Japanese gin and tonic Sukkiri and fruity refreshingly bitter and sweet. A personal mature dining sake that would go well with both fried food and white meat sashimi. It is a gorgeous yet sober sake that would go well with parley and other occasions. That's what I like about it!

With salted fish given to me by my father. It's a juicy, slightly dry wine that's refreshingly sweet and mildly sweet! I can't tell what I'm talking about. When the temperature rose and I drank it with the salted fish, it tasted like white peaches. The sweetness must be round! It is gentle but crisp, and it envelopes any occasion. Great!

Finally, the Tenmei Nakadori series opens. Zero Fresh, sweet and sour, delicious and awesome! Fruity and sweet like grapefruit. The bitter aftertaste is also grapefruit-like. Not too picky, not too fresh, not too noisy. It's kind of a waste, but it's good with soda too! It has a certain percentage of sweetness, but it is easy to drink and tastes great! I recommend drinking it with soda!

Houou Mita purchased in Morioka at the end of the year. Still haven't digested the ones for the end of the year! But it's delicious! Personally sweet, but delicious sweetness is sweet, but not too sweet. Fruity, delicious. It has a bitter taste when cold, and it doesn't bother me when the temperature rises a little. It depends on the person which one is better, but I personally prefer the bitter one. It's a juicy and gorgeous sake.

Personally, I can't miss Hakuin Masamune and Tenmei for heated sake in winter. This year, we finally have Hakuin Masamune de heated sake*! First, it was served a little chilled. The rice flavor was still present in a refreshing taste, with a hint of acidity in the aftertaste. It's not clean and crisp, but rather refreshing, with a little warmth and looseness. Personally, I like it in a sleeping state before heating up. When heated up, the umami and sweetness spread out, and it opened up with a full and clear flavor! The launch was a success!

Return from Tokyo It's a long way to Aomori However, as I am of the opinion that I should not buy anything on the Internet, I can't resist the temptation to buy that sake and this sake, which I can't get out of my throat. Too bad I can only go to Hasegawa Sake Shop in Tokyo Station for lack of time. So, I bought 19 sakes on my long way home. This is my first sake, but Nagano sake is my favorite. Dry with a crisp and warm sweetness, umami moderately but firmly. The acidity leaves a refreshing aftertaste. The color of the bottle is also refreshing. It has an atmosphere like the spring sky in Tokyo today. The train is heading back to the winter world with a sense of excitement and sadness like a spring breeze.

I really wanted to open it on New Year's Day, but it was too busy. At the end of the year, I was wandering around a liquor store in Morioka when I found a bottle of Kokugen for the first time in a long time and bought it immediately. (And it was a tefu!). I thought, "I'm going to have a drunken dream on New Year's Day! I thought, "I'm going to have a drunken dream at New Year's." But it turned out to be today. I wanted to drink it while looking at the scenery of Minamiaizu and Goshikinuma in winter as I had received a comment from nabe-san before, but I'm going to stay at home. The sake is very light and smooth on the palate with a gentle, graceful and refined taste. Overall, the sake is watery and clear and dry, but the sweetness, umami, and acidity create a light gradation that fades away, leaving a lingering acidity. It reminded me of the pale pink, light blue sky of winter mornings and evenings at Lake Inawashiro. The image of the sake matched perfectly with my recently purchased vessel!

Turtle Tail I opened it a long time ago and had the last little bit left, so I opened it for the last time.
