It's been a little while, but this is the last sake of the Aizu trip. Aizu Musume, and the dishes are from Hongo Ware and Jyu-no-Oto Kobo. Just when I was coming back to my hometown, I bought a teacup in Kamakura, and it was made by Jyu-no-Oto Kobo. Drinking sake like this reminds me of the fresh and warm atmosphere of Kamakura. The sake has a firm, sweet rice flavor, as is typical of mellow junmai, but with a clean finish. You can feel the warm but dignified air of Aizu.

Yamada Nishiki 507 I got drunk when I was checking it out and couldn't really taste it, but... Now I can feel the sweetness on my tongue and the fizziness on the top. It's good, but it's a bit separated. It tastes better when it's freshly opened, so maybe it tastes better when it's cold than at room temperature. The delivery was so goofy that I couldn't believe it was the last one, and I laughed a lot. The combination of the president's passion for sake and the female toji was like a light but robust Kaze no Mori. It was something like a bass and guitar session.

Last year, I bought a bottle at a liquor store in Hirosaki that had a special deal on Shield River. The owner of the store seemed happy! Shield River is a well-balanced whisky that goes well with everything, but today I paired it with chocolate! Chocolate is a standard whisky, but this time I paired it with a regular (pure Dai) Shield River, which is not aged. The chocolate is 72% cacao. It is a little bitter. The acidity is a little bitter, but I think it's on the good side. There is a slight alcohol taste due to the bitterness of the cacao, but it goes well with the bitterness. I feel that this shield river has a little bit of citrus, which matches the bitterness and the overall atmosphere. I thought the chocolate had a long aftertaste. The sake is not too strong, so the nuance changes depending on the timing of drinking the sake after eating the chocolate. Interesting!

I gave apple juice to a friend and the Farm Mouth Institute returned it. They say you can catch a farm mouth with apple juice. It is both refreshingly dry and umami. It's like a dry Hokuriku sake, and the more authentic sake drinkers are likely to be smitten with it. Personally, I felt a sense of alcohol in the aftertaste, or maybe a semendaine smell? I personally feel that the aftertaste has an alcohol or semendaine smell, which is a bit peculiar. It also has a shochu-like aftertaste. I can't drink much of Noguchi Institute, but I always feel some complex elements and have an image that they don't make it easy to make it delicious. But when I drank it today, I felt it was a little rounded but clear, and the peculiarity of the aftertaste seemed to match well. It makes me think! It went well with engawa! But I think it would also go well with somen noodles! I'd like to match it with somen.

Yamamoto Sake Brewery, limited cafe attached to the brewery. In addition to sake, there were Pierre Hermé macaroons and other fashionable and authentic café items. Both are new recipes, so they are fresh!
