Purchased at the fashionable Yamamoto Cafe. It was a one-killer for me, as I have a weakness for brewer's limited editions. Miyamanishiki 80% is a double kill for me, as I like oddballs. It is fruity, shuwa, sweet, and refreshing. After a little time, it has a rounded umami flavor, as well as bitterness and other unpleasant tastes. If you feel the bitterness and miscellaneous tastes, you may want to pair it with pickled celery. The bitterness of different quality makes a gradation.
