If I had to say more, I would say it tastes like melon. However, it is very clear and has a beautiful and natural sweetness. It also has acidity, so it has a nice sharpness. But the aftertaste is full of elegance in the mouth. It has a very nice aftertaste. ♩I liked this so much that I would buy it again if I could find it at a liquor store! This is a must buy! Low milled rice for such a beautiful flavor. In short, it is a sake where the rice is not "so" polished. It is really just amazing! The percentage is not stated, but it feels at least as good as the ginjo specs. Furthermore, according to the back of the label, the rice polishing ratio is equivalent to that of edible rice! The brand seems to have been started in 2028, but it is a new sake, and yet it is still a rebecher! After one day, the perfection that I felt right after opening the bottle (just my personal opinion) seems to have disappeared. Well, it happens as it does. Still, it tastes good enough.

In addition to the sweetness of the rice, there is also a rich nuance of bitterness, although it is excessive to call it bitterness. It would be a good choice as a food sake. This sake was not what I expected from Tenmei. No wonder they named it "Aozora" (blue sky). Personally, I would say it is like a sunny day in midsummer with just a hint of humidity.

shitakkeIt is juicy yet flavorful! It's fruity and tastes melon-like in flavor, if I may use an analogy. I think there is some acidity that is light but similar to real fruit. I don't think it is a sense of maturity, but it has a strong umami flavor! It's a bit like it's not sake. This is an interesting twist on sake, and the specs are kept under wraps. The system is to find out by reading the QR code on the back of the label. There are two levels, beginner and advanced, with four questions each. The beginner's level is just the right level of difficulty, and I made a mistake on the rice used item. In the advanced level, I answered one question correctly with a Yamakan. This one was difficult!

Two years ago I had a junmai sake from the same rice used. Looking back at my past postings, I see that although there is a difference in polish between junmai and junmai ginjo, the flavor direction is also generally the same. I feel that the rice is polished and the peculiarities are still suppressed. My impression after one day was a simple, mild sweetness while retaining a complex flavor. It is very tasty. The acidity is not stimulating, and the mouthfeel is mellow.

It is brewed with brewer's yeast, and it is interesting to see how the yeast, water, and rice can create such a flavor. It is quite drinkable. The taste is gorgeous. The name "3.33" is a reference to the three-stage brewing process plus 1/3 (0.33) of the amount of rice used in the fourth-stage brewing process, which was reduced to 1/3. It seems that Shizen Shu was originally brewed using the brewery's own "kumidashi 4-dan" method.

It doesn't seem to be tiring to drink or anything, but the alcohol content is high at 17.5%. I would be careful about drinking it in a fit state. It is such a drinkable sake! As the day goes by, the umami flavor takes over even more!

It has been a while since I drank a distinctly sweet sake, but this kind of sweet sake is also delicious. Eiko-Fuji is quick-tempered(?), and Nanasei seems to be a summer sake. This is the first summer sake "STARS"! I have the impression that as the temperature rises a little, the full-bodied flavor becomes stronger. The heaviness may come out a little.
